Make reservation in person the day before. The hostess is very professional and accommodating. She introduced herself, chit chatting with us and showed that we can make reservation online via scanning the barcode. Good first impression. Showed up on time and were met by this time a male host. Definitely a 100 time less fortunate and beautiful . Got seated right away in the reserved table in the veranda section by the river. The server offered to put away our coats instead of hanging over the chairs. He didn't introduce himself but give us time to read menu and offer to bring waters first. I ordered the Atmosphere Menu, but like to swap the menu Savoyard (less expensive) escargot Poêlée d'escargots de Magland, émulsion à l'ail et persil with the menu Atmosphere salmon ( more expensive) and he said it's possible
The snail came out naked and surprised me since I expected the French escargots are always fully armed and you will need the special tool to enjoy that. Kidding aside, the Madland snails probably so mad that the chef has to overcook them but the garlic and parsley sauce even on the saltier side still doesn't bring the flavor out perfectly.
My friend ordered the rack of lamb medium rare and it came out very good. The meat is super soft, texture is fine, sauce is complimented the meat flavor. The best thing worth mentioned is that the usual lamb gamey smell is kept to the minimal. Kudos to the chef for treating that well. My duck fillet also came out perfectly cooked to the pink. Wish the skin can be crispier. I'm not into the Orange sweet sauce, the carottes confites is fine and the quinoa is excellent (or in my world edible, since I never want to chew on that healthy stuff). Forgot to mention the recommended Syrah from North Rhône is very smooth and complimented the food.
Dessert moment came. This icing on the cake. We both ordered from the Les Suggestion menu. This is not on the regular menu. My friend ordered the Crêpes Suzette and the texture is not up to the standard of culminating French cuisine let alone the every corner normal street fare. I ordered the flowing heart with chocolate fondant, vanilla custard and raspberry sorbet. It came out beautifully decorated, rich chocolate and sweet and flavor sorbet and the fully living organic fresh blueberries and raspberries. To the best or worst of my delight, I have an uninvited special guest crawling out the raspberry and enjoying the dessert with me. I almost fell out of my chair. Upon calling the server and pointing him to the dish, he just kept talking about the berry until the guest wiggling on the plate. What came next are a lot of apology from the server and the host and a new dessert came out to replace. At least I know they are using living ingredients and probably explain the issue with some reviewers that had to miss a next skiing day or hugging the toilet all night that the manager keep responding with unsupported facts or playing the pointing game. To be fare, I still recommend this place and the effort of the managing team and chef to bring variety to fine dining. Location is perfect, ambient is ok, service is attentive food poisoning is your luck. At least you know you are eating real organic living things.
