Review: 8 course tasting. Took care of non-alcohol and no fish request. I think the food really does speak for itself here and highly recommend it. Service is also top notch and as it was cold I was offered a lift actually from the restaurant manager and given a blanket if needed even though the walk was only around 5 mins. This is service over and above and just sets you off with a happy feel and you immediately feel like royalty.
We had the following: 8 Course Tasting Menu
Roasted Jerusalem Artichoke, Wood Sorrel: crunchy with a selection of flavours. I have not tried before and was pleasantly surprised.
Heritage Beetroot (Goats Curd, Spiced Granola, Apple): Three-way Apple and granola with beetroot. This was a cold dish. Spicy tang of granola and mixture of great textures. Loved the way all the tastes work together. Again made my pallet refreshed with new tastes and I could not fault a single element.
Chicken and Ham Hock Pressing (Sage, Wholegrain Mustard Mayo, Apricot, Brioche crumb): Another cold dish but really well made. Pressed meat well cooked and you get an after taste of the same flavour but pleasant in that you get the enjoy for that bit longer. The dish is presented well and my favourite so far but I think I have more to come and more favourites to follow. The accompanied mayo was ok but felt like it had mustard in it and I am not a fan of mustard, so this is just a personal thing rather than any criticism.
Suckling Pig (Crispy Belly, Braised Neck, Mangalitza Black Pudding Croquette, Apple, Cime Di Rapa): A warm dish with an amazing mixture of earthy tastes all perfectly complementing each other. Another new favourite of mine and I don't eat much pork at all but I loved this dish. The Croquette especially (I would never normally order any black pudding) and the spinach both full of flavour. Small slivers of apple also worked well on the dish. The jus was nice but I loved each part of this dish which even on its own would make an excellent separate dish.
Hay Ash Lakeland Venison (Truffle Pomme Anna, Turnip, Chanterelle): Served warm and medium rare which was soft and succulent although I am not a fan of venison this was not harsh or gamey which I was expecting and tasted like steak. The Potatoes with truffle was delicate and again a flavour profile I am not used to but just melted in the mouth. The Turnip purée was amazing. Chanterelle mushroom again an excellent flavour. Another great dish.
Auberge Waldorf Salad: Not had an original Waldorf salad before and although a fresh taste with multiple layers of flavour, I feel it was over complex for my pallet. Others I think would really enjoy this dish but my taste buds need a little more finesse to appreciate all the flavours coming from this salad.
Miso Caramel Mousse (Kinako Shortbread, Passionfruit Jam & Granita): Pre-desert cleanser with miso mouse and passion fruit. Light airy melt away mouse with fresh cold passion fruit sorbet and fresh base of passion fruit cutting away and a pleasure to digest and had the desired effect of cleansing the pallet.
Tiramisu (Mascarpone, Lady Finger Sponge, Cocoa, Marsala, Coffee Ice Cream): I don't like Tiramisu and I actually liked this as, so again another surprise, all light flavours but anyone who is a fan of Tiramisu should choose this especially as the recommendation comes from someone who would never order it and liked; it must mean it's the best.
All the dishes were truly worth every bite and should be shared and enjoyed ensuring you have the time set aside to really give credit to the full experience. I wish I had had the benefit of a trained pallet from a younger age.
I feel you should always have the best the first time you try something new so you don't hate the ingredients and you have something of greatness to compare with.
Bill / Cost: £85.00 per head but came to around £100.00 with service charge and soft drinks.
Conclusion: Each dish was fully explained to me. Portions seem small but they are not. Eating alone and this taster menus is one for sharing with another to appreciate the experience. This is what life is about. I tried new dishes I would not normally order or try so I am happy that I did. It was an unforgettable experience.
