We went to a number of Mexico City's finest restaurants, but this gem from Puebla beat them all. The mole poblano sauce was exquisite, a perfect explosion of sweetness, bitterness and spice, the bone marrow appetizer was one of the most perfect dishes I've ever had in my life, the pipian verde pork belly was another complex balance of delectable textures and flavors and the desserts were excellent as well. What we appreciated most of all, beyond the patient and attentive service, was that the chef didn't need to hide behind exotic ingredients transformed into unrecognisable forms, but rather, took traditional dishes and made them sparkle as brightly as they possibly could. With such reasonable prices for this kind of quality, if you're in Puebla for even one night, you should make sure dinner at Augurio is on your itinerary.
