I visited Krua Pa Oi in August 2025 - MICHELIN-recognized and beloved by locals, students, and travelers alike for its hearty, home-style Thai cooking.
I ordered Pa Oi's legendary Kai Sing.
At the base, it looks like a regular Thai-style omelet — Kai Jiao — but this is omelet artistry. Deep-fried to golden perfection, with those lacy, crispy edges and a fluffy interior. On its own, it’s already delicious. But the magic is in the topping.
First, a generous heap of minced pork, stir-fried with garlic and a secret sauce that coats every bite with rich umami. Then comes the salted egg, creamy and buttery, adding that signature depth. Finally — the knockout punch — crispy pork rinds. Big, irregular, and gloriously crunchy. That contrast of textures, from soft egg to savory pork to the loud crunch of the rind, is just addictive. A sprinkling of green chili and spring onion gives the final lift, balancing all that richness.
This is not just comfort food — it’s a masterclass in flavor and texture, best devoured hot with a side of jasmine rice.
