Once a Michelin-starred restaurant, Bahia now proudly holds a Michelin mention — and it’s clear why. Located within the elegant Corinthia Palace, the restaurant offers a refined and thoughtfully curated dining experience that balances local character with contemporary flair.
Ambience & Interior
The interior is stunning: a warm wooden ceiling adorned with four bronze lamps sets the tone for an intimate and sophisticated space. Seating is arranged in curved semi-circular booths surrounding circular tables, creating a sense of privacy and elegance. At the centre, a sculptural tree serves as a striking focal point.
There’s also a stylish private dining area and a sleek bar, both enhanced by clever sound-dampening design — ensuring a serene atmosphere throughout.
Both cocktail were interesting , above average drinks: one a take on a margarita and the other a mezcal negroni.

Snacks
A trio of snacks — two tartlets and a deconstructed bite — offered an elegant start, showcasing creativity and attention to detail.
Bread & Butter
The sourdough stood out, made in British ovens using local Maltese flour from the next village — a lovely blend of local and artisanal craftsmanship.
Cured Local Meat
Paired with kunserva, extra virgin olive oil, and sage — a simple yet flavourful nod to Maltese tradition.
Beluga Lentils
With pickles, parsnip foam, and smoked eel — this was an excellent dish. Wonderfully balanced, with depth and subtle smokiness that complemented the eel beautifully.
Cured White Local Fish (Dentex)
Served with local radish, seaweed, elderflower dressing, and burnt cucumber — a refreshing, clean, and beautifully plated course. The fish was exceptionally fresh and delicately seasoned.
Grilled Local Catch (Sea Bass)
Accompanied by cabbage purée, caraway seeds, lemon, buttermilk sauce, and herbs — a standout dish. The sea bass was perfectly cooked, with crispy skin and a beautifully balanced sauce.
Beef
Served with sheep cheese foam, ragù jus, and sesame bread. Unfortunately, the first serving was overdone and dry, though the kitchen promptly replaced it. The second attempt, closer to medium rare, was an improvement — yet the meat itself lacked the depth and aged quality one might expect, particularly compared to well-sourced British beef.
Pre-Dessert
A light and refreshing palate cleanser, well-executed.
Dessert – “Imqaret”
A deconstructed take on the classic Maltese sweet: cinnamon crémeux, pastry, date sauce, hibiscus, and berries, served with Imqaret ice cream. Beautifully presented and full of local charm — a lovely finish to the meal.
Petit fours were pleasant, if unremarkable.

Overall Impression
Bahia delivers a polished dining experience with a strong sense of place and style. The ambience and many of the dishes were excellent, though the main course fell slightly short of expectations. With its stunning setting and attentive service, it remains a worthy dining destination — one that’s just a step away from reclaiming its Michelin star.
