Dining solo is always a little out of my comfort zone, however I was made to feel at ease by the friendly and very welcoming staff within a calm but luxurious environment. I opted for the tasting menu and the food was absolutely delicious and flavoursome - each dish represented a location in Malta and was beautifully presented. The service received was impeccable. My dietary requirements (gluten/dairy free) were catered for and the menu adapted accordingly. I would highly recommend this restaurant and hope to return some time in the future.

Once a Michelin-starred restaurant, Bahia now proudly holds a Michelin mention — and it’s clear why. Located within the elegant Corinthia Palace, the restaurant offers a refined and thoughtfully curated dining experience that balances local character with contemporary flair. Ambience & Interior The interior is stunning: a warm wooden ceiling adorned with four bronze lamps sets the tone for an intimate and sophisticated space. Seating is arranged in curved semi-circular booths surrounding circular tables, creating a sense of privacy and elegance. At the centre, a sculptural tree serves as a striking focal point. There’s also a stylish private dining area and a sleek bar, both enhanced by clever sound-dampening design — ensuring a serene atmosphere throughout. Both cocktail were interesting , above average drinks: one a take on a margarita and the other a mezcal negroni. We had the Tasting Menu also called Balzan Snacks A trio of snacks — two tartlets and a deconstructed bite — offered an elegant start, showcasing creativity and attention to detail. Bread & Butter The sourdough stood out, made in British ovens using local Maltese flour from the next village — a lovely blend of local and artisanal craftsmanship. Cured Local Meat Paired with kunserva, extra virgin olive oil, and sage — a simple yet flavourful nod to Maltese tradition. Beluga Lentils With pickles, parsnip foam, and smoked eel — this was an excellent dish. Wonderfully balanced, with depth and subtle smokiness that complemented the eel beautifully. Cured White Local Fish (Dentex) Served with local radish, seaweed, elderflower dressing, and burnt cucumber — a refreshing, clean, and beautifully plated course. The fish was exceptionally fresh and delicately seasoned. Grilled Local Catch (Sea Bass) Accompanied by cabbage purée, caraway seeds, lemon, buttermilk sauce, and herbs — a standout dish. The sea bass was perfectly cooked, with crispy skin and a beautifully balanced sauce. Beef Served with sheep cheese foam, ragù jus, and sesame bread. Unfortunately, the first serving was overdone and dry, though the kitchen promptly replaced it. The second attempt, closer to medium rare, was an improvement — yet the meat itself lacked the depth and aged quality one might expect, particularly compared to well-sourced British beef. Pre-Dessert A light and refreshing palate cleanser, well-executed. Dessert – “Imqaret” A deconstructed take on the classic Maltese sweet: cinnamon crémeux, pastry, date sauce, hibiscus, and berries, served with Imqaret ice cream. Beautifully presented and full of local charm — a lovely finish to the meal. Petit fours were pleasant, if unremarkable. ⸻ Service Service throughout was warm and attentive. Our primary server, from Colombia, was particularly professional and engaging, contributing positively to the overall experience. ⸻ Overall Impression Bahia delivers a polished dining experience with a strong sense of place and style. The ambience and many of the dishes were excellent, though the main course fell slightly short of expectations. With its stunning setting and attentive service, it remains a worthy dining destination — one that’s just a step away from reclaiming its Michelin star.

Outstanding dinner at Bahia. We chose The Villages Journey tasting menu, which takes you through Maltese places and flavors, and it was superb. We sat on the terrace, which was lovely, and the interior is beautiful and inviting. The food quality and flavor combinations were excellent across the board, we honestly can’t pick a favorite dish, and we both left very full, which says a lot because we can usually eat a bit more. Our server, Kenyo, was phenomenal - warm, friendly, and great at explaining each course, and he turned our dinner into an unforgettable experience. We were celebrating our anniversary and the team surprised us with complimentary sweets and a handwritten card signed by the staff, which was such a thoughtful touch. The whole staff was wonderful and made us feel at home. For the level of cooking and service, the value is excellent. We’ll definitely be back the next time we’re in Malta.

The restaurant welcomes guests into an elegant and atmospheric setting, where refined interiors are matched by attentive, professional, and courteous service. The staff stands out for their care and politeness, contributing to a pleasant experience in terms of hospitality. The choice of the plant-based tasting menu initially sparks curiosity but unfortunately proves underwhelming. Although the dishes are presented with care, they lack research and complexity: an entire preparation dedicated to carrots in different textures, or a potato cream that never transcends its monothematic nature, leave the impression of an unfinished exercise. Rather than a carefully studied and harmonious gastronomic journey, the menu feels more like a token gesture toward vegetarian diners, without the depth of analysis and creativity one would expect from a restaurant of this standing. In a context where plant-based cuisine offers endless possibilities—legumes, seasonal vegetables, fermentations, contrasts of textures and flavors—the result comes across as reductive and unrepresentative of the true potential of this culinary approach. Partially redeeming the experience is the dessert course, well executed and satisfying, demonstrating that the kitchen brigade can indeed express technique and sensitivity when focused on more structured pairings. Overall, the experience leaves room for significant improvement. The restaurant offers a refined setting and high-level service: what is needed is greater ambition in shaping the plant-based menu, so it may become a true sensory journey rather than merely a sequence of ingredients treated in isolation.

One of the best experiences I had in my life. The degustation menu was so fulfilling that i have never tasted so many flavours during one evening ever before. It was worth every penny. The service on the top was excellent. Cesar with the team made our experience unforgettable. Highly recommended for anyone with sophisticated taste hard to satisfy.
