"Bailara’s contemporary ambience in a rural hotel in the heart of nature definitely strikes a chord! The modern-inspired cuisine on offer here is centred around a single surprise tasting menu that showcases seasonal dishes and is based around ingredients sourced from local producers (asparagus, teardrop peas, artichokes, cep mushrooms etc) and meat from local breeders. We particularly enjoyed the charcoal-grilled beef tacos!" - Michelin Inspector

This place is superb. I enjoyed the whole experience. The service is outstanding, they explained every plate they served, gave good recommendations, and even the chef came to the table to introduce himself during the last plate. The food was delicious, very well served and all produced locally. It’s really very hard to pick a plate. The atmosphere is very nice, very quiet, they were playing jazz music. The restaurant has very few tables so you need to book a table beforehand. The surroundings are also beautiful and peaceful with outstanding landscapes. I overall loved the experience and highly recommend it.

Absolutely amazing experience overall. The tasting menu is a fun way to experience the true craft and expertise of the chefs at Bailara. Service was superb and stellar. No complaints, just wish we lived closer so we could visit more often.

Amazing restaurant. The chef is making great use of local ingredients devising delicious creations. We loved every part of our menu especially white asparagus and the fish course.

Nice ceramic plates, intense-flavored small dishes, well presented, also the wine. Best choice for whoever happens to the hotel-castle.

Super good! Not a Michellen restaurant, but has star quality!!! We will go back again!

Great small gastronomic restaurant in hotel Iriarte Auregia (next to the bistro). Delightful fixed course menu with possibility to have wine pairing (per full table). Personal favorite was the apple dessert balancing cider vinegar with sweet apple tastes. A plus would be to offer non alcoholic pairing alternatives but understand this is not very common currently in the region. Very professional and kind service. Nice peaceful decor fitting the environment perfectly.

One of the best meals of my life, and a really reasonably priced tasting menu for the value. Highly recommended!
