Baka d’Busk has been on my “have to eat here soon” list on Google Maps for quite some time. The reason is simple: it’s vegetarian.
The thing about vegetarian or vegan food in general is that if you really nail it, you must be an incredible chef. So many dishes normally start with meat. People usually build their meal around the protein. Here, that’s obviously not the case, which is exactly why I wanted to try it.
I do eat meat, but I don’t really care if a meal is vegetarian or not. And to be honest, Baka d’Busk has probably become one of my favorite restaurants.
I was there with a friend. The exterior is a bit unusual and not that easy to spot, but if you’re biking past and see the plants and the beets outside, you kind of realize that this must be the place. When you walk in, you enter a dim but beautifully designed room. Not dark in a bad way, but very carefully lit. The lighting design here is really well done.
From the moment you walk into the back part of the restaurant, you feel taken care of. At the back there’s an open kitchen, which was great to see.
Another thing I noticed was that almost every staff member greeted us. Normally that might feel a bit strange, but here it felt very genuine.
Our waiter was very relaxed and recommended that we order two snacks, two entrées, and one main dish to share. We followed his suggestion.
For snacks we had the bread with tahini and the kimchi.
The bread was beautiful. Really solid, well made, and the tahini with the toppings was absolutely delicious. Nothing to complain about there.
The kimchi, however, was one of the best kimchis I’ve ever had. For some people it might be too spicy, but for me it was perfect. If I come back here, I’m ordering that again.
Then we had the Grillet Beder (radicchio, black tahini, dukkah, chutney, black pepper sauce) and the Cajun-style choux fleur fritto (bbq, blue cheese).
Both dishes were honestly incredible.
The Cajun-style dish is clearly a playful take on something like fried chicken, and it really worked. Everything was well seasoned and well cooked. The blue cheese dressing on the side was amazing. There were also pickled vegetables that were very light and fresh.
But the highlight of the evening for me was the Grillet Beder. The sauce at the bottom of the dish was incredibly complex and flavorful. I absolutely love beets, and this dish really delivered. I would honestly come back just for this one dish.
We ended up sitting there for a long time. Our table was technically reserved for 1 hour and 45 minutes, but we stayed for around 3.5 hours and nobody bothered us. The atmosphere was cozy, relaxed, and just really pleasant.
For the main dish we had the Bouillie Verde (broccoli, seeds, parsley, spinach, lentils, scorzonera, cedrat).
This was the only dish that didn’t completely work for me. By that point I was already a bit full, but even so it felt a bit mid compared to the other dishes. It felt like a mix of green vegetables that didn’t quite come together in the same complex way as the earlier plates.
If the color green were a dish, this would be it. Not bad, just a bit too simple compared to how impressive the other dishes were.
Next time I’ll definitely try a different main.
That being said, this is a wonderful restaurant. Big recommendation from me, and I will absolutely be coming back.
