Revised review and starting from a five (not my original four) to be fair. Thrilled for a new North Seattle indie bakeshop, but I have to tell it like it is. Taste is subjective, but this experience does not compel me to return. And yes, I do have pastry training and have worked in the industry.
Minus one star for that chilly reception. First impressions matter. Think customer service.
Minus another star for the lamination or lack thereof. See added photos. Think technique.
Minus another star for faint scent and flavor.
How is this even possible?
Super brief (initial) review while sitting in car at shared parking lot off of Lake City Way on this rainy Sat around 10am (10/19/19) to check out Honore Patisserie and Espresso.
Drove to other sites and my car did not emit any tantalizing baked goods smells from the takeout box.
Returned home and had a photo/dissection/ tasting session with The Homie while watching the UW-Oregon game. He made other commentary that I won't add. Let's just say, he won't write his own Yelp review.

Automatic 1 star off from the get go from the hurried, standoffish service. I make quick, succinct questions and don't dawdle in long pastry lines. Reminders of working the counter in pastry school. No signage on the baked goods, especially to differentiate from plain, sweet, or savory viennoisserie. Let's guess what it is or what this costs? Hence the line...but if you commute on I-5, best analogy is a rolling slow down.
Initial line, but they crank people through fast. Warm interior decor. Few seats. Lots of takeout, like me. Slightly congested from a cold, but surprisingly no pronounced desirable aromas. To be dissected carefully at home. Hmmm, curious. (See added photos)
Let's hope these baked, larger than norm, product is worthwhile after feeling the 'brusque, don't smile or talk to me' at the very end treatment when paying. Not even a thank you for stopping by (=dropping green here vs other worthy, established, and consistent indie bakeshops in Seattle). Sheesh. You're surrounded by baked treats, not lemon wedges!
But whatever, maybe that person didn't start their morning well and doesn't represent the entire place.
