Bam!

"Nestled on a bustling street with countless dining choices, this tapas-sake bar furnished in a faux-industrial style features both an omakase menu and small plates à la carte. These bites may be paired with a staggering repertoire of over 80 labels of sake. Courses in the omakase menu change daily. If you opt for the tapas, expect to order four to six dishes per person. Ask for a counter seat to stay close to the action-packed kitchen." - Michelin Inspector

"Pepe Moncayo worked for the internationally acclaimed and late Santi Santamaria at his eponymous, now-shuttered restaurant, and that pedigree shows at BAM!. The food here deftly combines Japanese produce and Western techniques, be it over a plancha or sous vide. The menu changes daily and every dish is bright yet complex; past highlights include chilled somen served in a balanced dashi with slivered almonds and grapes, and fried cod maw served in a silky Jerusalem artichoke emulsion and showered with Manjimup black truffles." - Annette Tan

Had the omakase dinner. In my view, it’s just a set menu instead of ala carte, not sure of the “omakase”. What is on the set are available as ala carte. Overall good food without any wow factors. Service was good and attentive. Per pax is about $180 for the tasting menu and one mocktail, after discount on the set menu. Decent value if you don’t place high expectations that it’s a Michelin rated.

We came here to celebrate my birthday. Service was good, however, I expected more for a Michelin star restaurant. Food was nice but I won’t say amazing. Overall, it’s worth trying for at least once.

Visited in July 2024 for dinner. For food I went with the tasting menu which comprised 7 courses (3 starting courses, 2 seafood, 1 meat, 1 dessert) excl. the petit fours. The starter courses started with some small bites, and then had an oyster course and a vegetarian course. The seafood courses included octopus and scallop, while for the meat course I went with the Wagyu. The Wagyu main course required an additional top up amount. All the dishes were pretty decent including the dessert and the petit fours. For drinks, I went with a couple of cocktails from their “Sake Cocktail” list. The Lychee Saketini is apparently their signature cocktail. Service is pretty decent and I had no issues in that aspect. The restaurant also catered to a specific food allergy I have. Overall, this is a good restaurant which is worth a visit.

We were a small group and shared Sakoshi Oysters Kani Miso Tofu Zucchini Flower Tempura w Saffron Aioli Seafood Tagliatelle Roast Suckling Pig Tres Leches Pistachio Cake Sake, Sparkling water Service was great, the staff knew the menu well, answered our questions patiently and advised us so that we did not over order. We decided on the a la carte menu rather than Chefs Choice, because we wanted to try a range of dishes. In general the food was beautifully presented and delicious; the tagliatelle was a little salty but packed an umami punch. Standouts were the Oysters (plump, juicy, creamy and the kimchi puree and sea grapes provided nice contrast) and the roast Suckling Pig (tender, crispy skin and goes well with the smoky Chipotle).

Had an early birthday celebration for a very close family friend at @bam.singapore . Restaurant mentioned in Michelin guide and the food is good especially the special of the day - wagyu beef. It was done very well, tender and full of flavors. The accompaniment of creamy mash was great with the beef. The fresh oysters are must try. Really creamy, big and plump and the largest I have eaten in Singapore. For the size and the quality, it was a steal going for $8 each. We first ordered two but decided to add on another 4 to make a half dozen and get a cheaper price. Was a bit worried about the paella when it came as the thin layer of rice was stuck to the pan and it is not easy to spoon out the rice. However by scrapping the pan, though not so presentable give you spoonful of slightly charred bits of rice together with the morsels of seafood and fish. Delightful. I was expecting more from the cold capellini but the combi of ebi sakura prawns with the Unami dressing does not work for me. The Spanish suckling pig was ok. No deserts as we had a birthday cake. However, am worried about the survivability of this place as it is a Saturday night and it is just our group of 6 with another couple that came before us leaving us. The service was attentive but not intrusive and I guess it is expected given that we are the only diners there.

Excellent restaurant! We took omakase menu. The quantity was just right. Good combination of the freshness of seafood and earthy sweetness flavor. The dish keeps surprising you from amuse bouche to dessert. Will definitively come back!

Came during restaurant week and had a 4 course meal for lunch. The food was really good! The crispy poached egg was interesting though the egg wasn’t as runny as expected The scallop and prawns were very fresh The pork loin was quite tasty as it wasn’t dry and hard Dessert was coffee jelly with ice cream, nice ending to the meal. Overall a pleasant experience. Service was okay but nothing to shout about. What’s good is they weren’t pushy about getting you to order drinks or anything else so that was good

Google
So creative! And the ingredients are actually high end too. It’s not just nice plating and Instagrammable dishes but the flavors and textures are yummy too. I got the 7 course Omakase, but they have a budget friendly lunch menu too. Highly recommend!

Yelp
Food was very good but portions on the $140 Singapore set menu were a joke. 5 people 2-3 drinks each (beer/wine) three of us had set menu and other two a la carte = $994 Singapore Dollars. My appetizer looked like they took it from another table mostly eaten - maybe 2 tablespoons of food. My other dishes (a clam dish and a tuna dish) were excellent but all in all not worth the money. When they pour wine you get a 1/2 glass compared to standard levels but pay full price - so no good will there either. They would do much better if customers felt less ripped off.

Yelp
With the hundreds of tapas bars sprouting all over the island, only a handful is worth your calories. Sadly, despite the raving reviews I've read about this place, it simply...fell short. We tried almost half of the menu: - joselito ham - asparagus with uni and burrata - fried baby squid with runny egg - charcoal grilled quail with foie gras dumpling - beef tatare - morel mushrooms rice with ebi - pasta 'a la plancha' with prawns and sake butter Can't remember the rest, and actually can't remember much about those listed either. All the dishes were just average and mediocre. While they all sounded interesting and enticing on the menu, the tastes were just a letdown. The morel mushroom dish was the only dish that I kind of liked. The sake element was played out in that they do have a sake cellar that they are more than happy to bring you in to pick your own sake. To be fair, we got a nice bottle of dry sake that was delightful, but that can hardly be credited to the restaurant. A chef once told me, fusion food can result in confusion. And I couldn't agree more in this case.

Yelp
Been a while since I've gone out for a good meal, so may be biased, but I certainly would not have given this place anything less than a 4. For starters, my girlfriends and I came as a threesome. Not overly big eaters, but not birds. They did recommend not to over order to avoid wasting. That was nice. We ended up ordering 2 starters, to primi courses, and 2 main courses, between the 3 of us, and they split it up for us into separate plates, and even took note of special dietary restrictions - my friend ended up receiving slightly different plates for a couple of courses because of this, but we were more impressed by the attention to detail, and accommodation. I can't recall it all, but remember all to be delicious. From the menu: - tuna tartar - ebi ankimo tofu * - grilled octopus - beef tongue* - foie Gras pasta * - pork jowl The 3 starred above I would consider must-trys! I would go again. And next time, to try the sake. Enjoy.

Yelp
I had high hopes of BAM! Let me start with the bill and work backward for you. I should also tell you that we came as a party of 8 to review the establishment for a dining club. They did not make the grade. 8 course - $170 withOUT drink. BAM! You have been taken for a ride. Meat dish - two slices of meet Pea soup - two spoons of soup and a pod of peas. We were seriously going to phone for a McDonald's delivery to the restaurant the portion size was such an insult. Reviewers say this is authentic Japanese - it is not. It is absolutely not - service style, cooking technique, etc, is all not Japanese. It isn't Spanish either which is the other excuse offered by some. Several of the dishes had issues with acidity and mixing of ingredients. As Gordon Ramsay would say "damn - I really wanted that to be good". For example, the Japanese egg and chorizo. The sausage totally overtook the dish. The egg itself was flavorless. Apparently, Japan is meant to be the godsend country when it comes to eggs. Having lived there I would try to avoid products like this due to animal husbandry issues, however, in this case, the product added nothing. The internal ambiance is clearly a designer formula, now dated and no longer edgy. The Formica tables; service attempts to not change out cutlery between courses; the gimmick of serving low-to-mid range sake (don't be fooled by the price) in wine glasses... You can find far better establishments.

Yelp
Not coming back here. The food is mediocre and overpriced for the quantity, and to the certain extent the quality. There's a large sake selection so feel free to come here for that. The atmosphere isn't fabulous either...it feels empty and not in a good way. Food is way better elsewhere, i.e. Neon Pigeon, Brasserie Gavroche, etc.

Yelp
Back here again today, havent been here in a long time. When i last dined here, it started light to heavy flavours. Tonight, it has been an amazing journey with a balance of both light & dark flavors! I highly recommend the sake pairing, the restaurant will pair good sake to match with its spanish/japanese fusion! Mucho gracias chef pepe & team! Mui bueno!

Yelp
The tapas there was simply a little piece of heaven in every bite. The sale pairing menu was so compatible with the dishes presented. Highly recommended for everyone! The service and ambience was perfect for a night of relaxation.

Yelp
I had an amazing meal here. I came solo and sat at the bar so I got to see the staff working hard. The owner told the cook to re-do my fish before it even came out because it was overdone. I had ocean trout with an amazing sherry beurre blanc and spinach. Seriously delicious (and I eat a lot of food). I couldn't resist the red berries dessert with a berry jelly, sake foam, and unbelievably addictive basil sorbet. Unexpected and delicious! Service was good, but the place is small. I disagree with the other reviews and would definitely recommend this place. I have lived in Spain, and it is not a traditional taperia, but that's not its intention.

Yelp
Don't know what the bad reviews were about. This place is clearly one of the best restaurants in Singapore and a hidden gem. Can't go wrong ordering the Omakase set menu which included are all the favorite hits and definitely let the maitre d/ matron of the establishment pick a bottle of sake for you. Been my third time here in three trips and will definitely come back again!
