I have been excited about the idea of eating here for 8 years, but have never been able to get anyone to take the time out to eat.
For starters, the reservation system does not have a text box or addressable space for if it is a special event (like a birthday). Which our dinner last night May 1 st was, we arrived 3 minutes after our reservation time but well within our reserve window. We were not asked if we celebrating anything special, but courteously shown to our seats. To which our saving grace had emerged. He was our waiter serving in the front section closest to the street, he is a newer waiter and for the life of me l cannot remember his name. And to him, I'm sorry. He was witty, charming, friendly, patient, and attentive, he informed us that May 1st was this years day for the annual Menu revamp. We were a party of two one who had never eaten sushi before and this was their first time out. The starter we got was the crispy avocado rice, to which our tastebuds could only imagine a life-raft foamy faintly avocadoish rice in a pond of Yuzu.
This was the only item we didn't finish. We got the shrimp roll, and whether this was over filled on the ingredients side, or undercut on the Nori side l leave to the chef. But every single individual roll piece fell apart before getting off the plate it was served on, bar one. That one was picked up underneath with a fork and the sides pinched with a couple of fingers. The Kanpachi nigiri was delicate but the truffle salt bent the ending flavor towards butter for me, which was unpleasant coming from the citrus of the Yuzu at the start (curdled milk), this was saved by the Fresh wasabi (the only real consistent highlight of the meal).
While doing some probing for the Kanpachi I was looking at all the nigiri and sashimi options available, I decided to get the Chefs choice 18 Piece sashimi. We were delivered 3 different kinds of salmon, 2 kinds of Tuna 1 fresh, 1 marinated, and hamachi. 3 slices of each fish all of the fish was soft aside from the Tuna Zuke in which the style has never been my favorite as it leans in the dry side even when soy sauce and wasabi is applied. I'm not saying I didn't know what I was getting myself in for my it saying chefs choice, I'm stating my disappointment in the beautiful offerings that were available on the menu and what was displayed was Salmon. It's well known the PNW likes beautiful salmon. But with that variety available, I was disappointed. A pitch if this is acceptable with the chefs to include, 1 exclude option (not a whole fish type just an option) from the set. The main reason I have wanted to come here is because of the companies sustainability practices and mentality towards the planet, it's one which I respect thoroughly. With the oil from for the Tempura vegetables, I totally understand refining and reusing the oil. But please season the tempura batter with things that do not enhance the flavor of old oils, I know it's a little less traditional but turmeric and other curry spices from India, Asia have some beautiful masking qualities if the oil is a little older tasting than preferable. This dish was for the guest who did not eat any further fish at the table post trying the first shrimp roll. I tried a single bite of the tempura fried onion, not knowing I still had a piece of salmon in my mouth. The overwhelming oil flavor from the onion, the slide of the onion coming out of the tempura batter, and the raw salmon made me immediately gag into my napkin. (My fault) To the staff for that, I'm sorry. Our waiter came by to help another table, their other party members arrived so the waiter stepped away for a minute, then had stopped by to check on us (time #4) we had asked for the check. Following old school traditions he displays the check to me (in my family if it's your birthday you don't pay the check for your dinner) to which I kindly say. "Today's my birthday" and gesture towards my partner across the table. We were offered an ice cream. We declined. Please bamboo care about the experience like our waiter.
