The signature pad thai roll—sliced into bite-sized, sushi-like disks and topped with fresh herbs, peanuts, and a vegan sauce she spent six months perfecting—is offered with chicken, beef, or lentil tofu in a choice of wheat or rice wrapper (toasted until crispy) and accounts for roughly 80 percent of the stall’s revenue.
