"We’ll probably get tossed out of Seville for shining a light on this cozy cheese bar deep in Triana. They have every kind of Spanish cheese imaginable, and staff who can riff on Manchego versus Zamorano like pros. Line up before they open to snag an outdoor table, but act confident and don’t hesitate because you’ll have competition. Cheeses range from mild to sharp, but we prefer to let the server decide for us (though the traditional Payoyo from the province of Cádiz is what everyone orders). And don’t snub the unexpected salmon and seafood pâtés served with bread crisps.
