Bar Nouveau in Paris Is the No. 1 Bar in the World

"Opened to much fanfare in 2023 by Rémy Savage (of London’s A Bar with Shapes for a Name and Artesian) and cocktail duo Sara and Hadrien Moudoulaud (formerly of Little Red Door and Le Syndicat), this tiny two-level cocktail bar in Paris’s Marais packs a lot into a petite footprint. The street-level space is a sinuous, Art Nouveau–inspired room with a mirrored ceiling, bespoke light fixtures inspired by a 1948 Tapio Wirkkala vase, a marble-topped U-shaped bar that seats just 10, and a streamlined six-item rotating drink list focused on vintage bottlings and artisanal spirits. The venue also showcases the world’s largest private collection of antique Bimini glassware, whose nostalgic shapes and bright colors complement the overall aesthetic. Downstairs is a darker, intimate den with trellised plants and exposed brick where bartenders employ modern techniques and equipment—sometimes producing highly conceptual but never overworked cocktails (for example, a centrifuged vanilla-yogurt-and-peated-whiskey infusion used in a Smokey Ramos served with an oyster-shell spoon). Number 39 in the 50bestBars list couldn’t be wrong: You are here for the drinks and forget the rest. Nice atmosphere, friendly baristas, non food nor snacks (but we are not there for eating). If you want to avoid queuing go in the afternoon: same cocktails with nice environment and fellow drinkers. Small menu that changes over the year, so go there and repeat.

Lovely small bar with an Art Nouveau aesthetic. The bar specializes in modernizing classic style cocktails in creative ways. I enjoyed the gustav which featured a gold leaf over the ice cube with small flowers on top. The flavor was unique, layered, and fantastic enough that I came back later with my fiance for another cocktail which was just as good!

Beautiful little bar tucked away on a quiet side street. The space is extremely small—just about 8 to 10 seats at the bar and hardly any room to stand—which makes the whole experience feel personal and intimate. You really get a sense of direct connection with the bartender, which is part of the charm. They have a small menu with their own signature cocktails, which are creative and well thought out. But they’re also happy to go off-menu and make classic cocktails, and those were just as well executed. The drinks come in smaller portions, which I actually really appreciated, and the prices reflect that—fair and reasonable for the quality you’re getting. It’s definitely a place I’d recommend. If you want to avoid waiting, it’s a good idea to come earlier in the day. They open quite early, and getting there early means you can settle in comfortably without the stress of trying to squeeze into a tiny space. A great spot for cocktail lovers who appreciate craftsmanship and a more personal bar experience.

Cozy yet delicate bar in Marais. Our bartender Sara did a great introduction of the menu. We tried Bellini, Ramos and the one with sake (forgot the name..) all 3 are tasty with lots of details. If you prefer something else, you can always let the bartender know and they will make it even not on the menu.

Decent but not great. A bit expensive in my opinion. Had a couple of drinks and decided to call it a day before I spent too much. lol. The service was great though. We got seats on the top floor and the bartender (his name escapes me) was friendly and talkative. The drinks were good but the quantity is very low for the price. Still give them 4 stars.

A must do if you are a cocktail chaser… the craft cocktails in this small, charming, and quaint bar were as delightful as the owners. Be prepared to take your time because you will want to savor every sip!

Came here one of the nights while I'm Paris. I generally try to hit the top rated bars in the world, and Bar Nouveau was rated as the #39 bar in the world in 2024. It just so happened to be very close to where we were staying, so we walked over one night to check it out. The bar, itself, is small but intimate. There is a set list of cocktails to choose from, and I'm not sure how often this list changes, but what they had at the time was great. The preparation of each cocktail is art in itself. One of the cocktails was mixed in a machine for a period of time, and poured into a glass, then an Ethernet was poured on to which rises up, over the top, and looks like a Marshmello has risen. The other cocktail we tried started with dry ice, looking to freeze the glad and make it smokey, but then this lemon citrus cocktail is created, tasting like a high quality limon gelato and poured into the glass. The lemon drink was absolutely phenomenal. I could have had four or five of those and been completely happy. Just a great bar with high quality mixologist crafting these cocktails. If you're in to great tasting drinks in an intimate setting, definitely try Bar Nouveau

Cocktails are excellent but the system they have to sit and serve people is *atrocious* Listen, I get it... it's a small, popular place without reservations. There will be a line and there will be a wait for drinks. That's not the problem. The problem is that the staff themselves seemed confused, and people kept going on smoke breaks without informing the others of anything, so they kept sitting people who hadn't waited as long as others, serving out of order, etc. It made for a chaotic experience, and not necessarily in a good way. So why still 4 stars? Because the cocktails are freaking outstanding. Maybe the best I've had in Paris. Will I be back? Depends on my mood that night and if I can get there early enough to avoid the "rush hour" chaos.

One of the 3 bars in Paris currently on the Worlds 50 Best list..... Charming extremely small bar - with an amazing staff. You need to be a sociable person if coming here - this is not a place you can just sit in the corner and get lost with your drink. And probably not ideal if more than 2 of you. That said, this is more the total package when it comes to the experience; although a very short cocktail menu, they are all great, and if you want to go off menu the staff is happy to oblige. There is apparently a downstairs space as well - but that does not open up until later in the night and only if crowded. May not be for everyone....but if this sounds appealing to you, make the visit!

The Bar Nouveau finally opened its doors inspired by Hector Guimard is the place to be! The project led by Rémi Savage, the best mixologist in the world in 2022. The decoration, drawn from its art history studies, pastiche the Art Nouveau of the 1900s: pampre-style mirror frames, elegant suspensions in the shape of arum (or chanterelle), azure walls... it is an amazing transformation! Behind the U- and marble counter, Sarah and Hadrien Moudoulaud (passed by Little Red Door and the Syndicate) shake with four hands a delicate menu of six cocktails on a 100% French soundtrack (tiens, Brassens...). let ourselves be tempted by a Gustave with vodka infused with olive, chamomile and agave; a soft glass and golden to the leaf like a Klimt. The Sarbacane based on vodka with Chardonnay grapes, rice and banana (sic) funambulises between the vegetable and the fruity, again with a mastery and a bluffing balance. In addition to these simple and straight creations, the menu offers classic cocktails such as a Fine à l'eau with cognac and verjus soon served under pressure. No fools, this New bar is a real success!

Bar Nouveau, more like Nouveau racist. After being asked to step outside after coming after 2 patrons left. I didn't feel too bad as it's common in Paris as they do not like to overcrowd their bars. But what is not common is other patrons leaving and the host not coming to get you and a mostly empty downstairs area meaning they had room. Hard pass. So many other bars to go to in Paris.
