My group shared a Guava Croissant and Pistachio BK Bun. We thought both were good. I think the croissant was decent (especially the crispy tips) but, I think the cream cheese was too thick for my taste since my throat felt a bit sore after eating slightly more than a fourth of the croissant. We tried the BK Bun after a day so it wasn't fresh but I liked it. I think I would have enjoyed it more if I was able to warm it up

Food: For a small shop and stand, Bastion stands out with the array of fun, unique pastries available. I got a guava croissant with an iced drip coffee. The croissant was buttery and flakey with the good hint of guava. Presentation was gorgeous! The iced coffee was a good iced coffee. Service: Considering this is a volume service type of establishment, the staff were still friendly (as the time permitted). Very helpful and nice. Ambiance: Grand Central Market is bustling and full of energy. You will be craving your food as you stress to find your table. It isn’t a relaxing brunch experience but once you sit down and claim your space you can ease into your outing fun. Bastion is a part of that fun downtown Los Angeles vibe.

Cozy bakery located in Grand Central market serving warm and fresh pastries, bagels, and variety of breads. We also got their coffee which was freshly brewed. Definitely recommend their cold brew and any choice of pastry for breakfast as you walk through and explore the Grand Central market.

The Mog Champ sends his regards. The only bakery opened early in the morning in the market! Ordered their guava croissant, apple poptart and Spanish latte. The guava was nice and had the right portion of jam - not too much but also not too little. Apple poptart was nice too. The Spanish latte is interesting, it's a good warm drink to start the morning! Service was great and the shop looks simple, compact and clean. A good place to get some quick breakfast since everything is already ready before the counter! Mogliest Regards, Your Mog Champ

A solid coffee/matcha spot at the Grand Central Station. I ordered a matcha latte hot with whole milk and it was delicious. The right temperature and the flavor was perfect. A solid breakfast drink. I tried their stuffed donut holes and a cookie of theirs. Both were delicious and with the coffee it was an excellent breakfast snack. I’d definitely come back here again to try their other menu items.

I bought the guava croissant it was sweet and tasty. I was going to buy some more to take home. When I saw the guy taking all the bread out and putting them in the trash can. I asked him if I could buy them he said we are closed. I couldn’t believe it. Why not sale it half price or give to a homeless shelter. This is really sad if this happens every day. Waste of food and work if they really do bake the stuff themselves.

I know these spiral croissants are a bit pricey but they are delicious. I tried the strawberry shortcake and pistachio bk buns and they did not disappoint. Hard not to want to try them all.

I cannot wait to come back and try their other pastries. At this visit I only bought a Kouign Aman. I can't stop thinking about it. It was fresh and soft. The cashier was nice and pleasant. This location is in Grand Central Market, so it will be loud! I wish I took more pictures but was so overwhelmed by everything going on. Most of the pastries were gone by 1pm. I think I ended up taking the last Kouign Aman. The layers of sweet was devine.

Two words: Pistachio crossaint. This was the standout among our bakery picks and it was sooooo yummy for all my pistachio enthusiasts out there. I am sucker for a pastry, especially, especially, as once a month pick-me-up. To all the gents out there, spend the $8-$15 and grab your girl a pastry and coffee mid-week, unexpected, unannounced and watch the joy it brings her, especially, if it's during her once a month. Nothing like caffeine and carbs to keep a girl going. Thank you for the delciousness, Bastion. I look forward to the next time I'm in your neck of the woods and will make sure to stop by. Still to check off on my list are their coffees! From the looks of the reviews here, looks like they have some promising options!

At Grand Central Market early to take care of things in the DTLA area. Got some breakfast food, but we needed our morning brew and right next to Eggslut is Bastion Bakery. We were able to get our coffee and Latte, but while in line, I got tempted with the delicious looking pastries. I got some to go to enjoy at home. I went with the Kouigan Amann, Pan Au Chocolat, and a soufflé style cheese danish. The solo staff handled the line and the orders perfectly. Everyone was patiently waiting their turn. She was very pleasant to deal with.

Bastion by Bakers Kneaded is located in the heart of Los Angeles--more specifically inside Grand Central Market. They offer sweets of all kinds including pastries and other desserts; it's such a lovely little bakery. If you're looking for your coffee and latte fix they have it! As I looked through the glass, I noticed it was squeaky clean and everything looked fresh. They even had a vegan cookie so that is what I ordered, it was double chocolate. Although, I am not a huge chocolate fan, I found it so be delicious. Service was great! Tips: If you want a natural fruit juice from The Juice, they are located next door

Love this place. Tiffany and Sara were so nice, my coffee got thrown out when I stepped away for a minute, hadn't even taken a sip, and they were kind enough to give me a fresh one at no charge. Will come back here regularly, especially bc the coffee was primo. I recommend the Spanish Latte!

No decaf found here! But that's okay, you can get a nice iced chai matcha drink called Pirates Chai- really unique and tasty. The pastries are sweet and large too. Not the best I've found in LA but a filling option when you find yourself in this ginormous food hall in need of a morning munch or a mid-afternoon pick me up! The Kouign Aman would be my choice for pastry over the guava croissant (verrrry sweet - similar feel to a Cuban pastelito you would get in Miami!) and the round pistachio pastry (subtle, but not much of the creamy center filling). All are very crumbly so prepare your outfit accordingly!

Every single time I visit the Grand Central Market this is one of the first stands I see and I have been wanting to stop here since forever! There's never a line when I visit and one in a great while there's no one even at the stand so I'm not even sure what the hours are. The baked goods, look beautiful and catch your eye right away. Bakery is definitely instagram worthy! The items are on the pricey side and I don't think they are worth what they charge, but they are located in a very great area where you're just drawn to the beauty of the colors and they definitely know how to market to hungry guests. I didn't think they were amazing. I think the pastries were just okay and I would love to try something different in the future, but I wouldn't see myself going out of my way for the bakery. I do believe that everyone's tastebuds are different, so even though I didn't love it, you might.

I have been in search of kougin amann perfection in vain since the first (and best) many years ago at B patisserie in San Francisco. I may have found its equivalent here at Bastion. Buttery, at once crunchy from the carmalized sugar to chewy and flaky. Each bite perfectly harmonious decadence.

Whoever this dude was working there today, Sat, April 26th at 5pm was rude af. I waited there for at least a minute, maybe even 2 .He did half a turn, saw me, didn't say hello, or I'll be right w you, nothing. I saw him give the people before me their drinks, and he still didn't acknowledge me. I'm not sure if me being Hispanic has anything to do with that, but that was totally uncalled for. Grand Central Market was a full-on Mexican market before this gentrification bs. Get it together BASTION. y'all are full of s*it with this dude working the shop. Never again. He actually didn't look very, hygienic either..so, yeah. Peace out.

Such a cute lil bakery inside of Grand Central Market! I was surprised with all the pastry options. I tried the pistachio BK bun, and it was so yummy! I loved the pistachio cream filling and the texture that the actual pistachio pieces provided. It was the perfect amount of sweetness and surprisingly easy/not messy to eat. The barista, Caitlin, worked efficiently and made me a delicious iced americano. Next time I'm in LA, I will definitely make an effort to come back to try the rest of the goodies :)

I was so excited to not only try the viral circular croissant because they're so pretty and fun, but also to have the vibrant pistachio in both color and flavor. However, regardless of the fact that we got there just as the location was opening and everything should be peak freshness for the day, my croissant was VERY disappointing. It was almost stale and the filling lacked the flavor I was hoping for. Very subpar. I did enjoy a latte and the staff were nice and efficient. Such a bummer.

The selection of coffee and pasties is the perfect pick me up at this spot inside the Grand Central Market. All the baristas are so friendly and fast and even if there's a small line it always moves quickly. Going earlier is better to get prime selection of pastries but even by noon they still have great options. Lots of open seating at the market inside and outside too! Definitely stop by and grab a treat.

The stand is so cute and the cashier was super sweet, but that was it. I ordered a baguette, croissant, bolillo, and chocolate walnut cookie. All of my items were stale and hard. Such a disappointment... I should have known the items were not fresh bc they smelled like old yeast when the cashier handed them to me. I spent $17 on treats I didn't eat... I wish I would have read the reviews before I came here. :-(

Ordered a bagel for $3.50 cream cheese is $1.50 total $5.00 for a bagel!??? But here's the big issue I asked for lightly toasted they toast the FULL BAGEL whole do NOT cut in half and hand you a small little plastic cup of cream cheese. You then have to cut your own bagel with a plastic knife and add the cream cheese which is not enough for an entire bagel, but more cream cheese is then another $1.50. They call that "rip and dip". WTF. I made the mistake of tipping a $1.00 before I got my bagel because I assumed I was getting a properly cut bagel with cream cheese already on it. This space was once Clark Bakery which was so much better.

Fortunate to have enjoyed Carlos Enriquez's Pastries during his time at Superba Food + Bread it is great news that the Chef took over Clark Street's old space at Grand Central Market, all his goods from Bakers Kneaded now available in one space under the label Bastion. Known for "organic Whole Grain Breads and Pastries made with California sourced and grown ingredients," Carlos' upbringing as the son of Southern California bakers followed by stints in Las Vegas and LA, guests can opt for sweet or savory across everything from Polenta Loaf to Viennoiseries. Priced on par to the rest of Los Angeles' artisans, $6.50 Croissants and $9 BK Buns surely raising some eyebrows, suffice it to say Bastion's Kouign Amann rivals any found outside San Francisco stateside while a simple Chocolate Chip Cookie showed off excellent texture from crisp rim to soft interior. Less sold on the Apple Pie-filled Pastry, its flavors pleasant but the lamination compromised, Enriquez's Croissants continue the high standard previously witnessed in El Segundo whether filled with ground Almonds or Cream and Pistachios.

This is a newish place in the Grand Central Market, located by Eggslut and its baked goods competitor, Fat and Flour. They have an attractive display case and sells pastries, danish, croissants both sweet and savory as well as breads (bolillos and baguettes). I got the kouign-amann ($6.50), stone fruit crostata ($6.50) and raspberry danish ($7.50). All were quite good but on the pricey side. I would rate Republique's offerings higher, and I think slightly less costly with more variety. I'd like to try the French pastries and baguette in the future.

Inside the Grand Central Market (right next to Egg Slut) is a lovely display of French baked goods and pastries. They have croissants and croissant rolls (labeled "buns") in a variety of flavors. I tried the pistachio bun. It has pistachio custard and a bit of pistachio paste inside--just wonderful for pistachio lovers. Also picked up a Kouign-amann that had a shatteringly crispy caramel jacket surrounding buttery laminated dough. They also sell whole loaves of bread that I will have to try another time. Service was friendly and efficient.

BASTION BAKERY is located inside Downtown LA's Grand Central Market and it is in good company. The line to order is pretty short. the "front" is a tiny bit chaotic because it is crowded because the line for Eggslut winds in front of this bakery... and people still need to walk through to get to the other stalls. Because of this tiny bit of disorder, some people might accidentally (or not) cut in front of you and the workers won't be able to help you because it is hard to see. Ordered the following and they were all very good. BK Bun Apple Croissant Nutella Croissant Plain Criossant Morning Bun There are a lot of chairs and tables inside but depending on the time of day and/or day of week, it might be very difficult to find a free one. Always love the hustle and bustle of Grand Central Market.

3.5 stars, rounded up to 4. The bakery case had several beautiful pastries and croissants, though selections were a little sparser by 3 PM on a Wednesday. We opted for the ham and cheese croissant and the pear frangipane tart. The ham and cheese croissant was slightly dry, which wasn't helped by the dry ham inside and the dry Gruyère cheese on top, but the flavors were there. The pear frangipane tart was very nice and something I'd get again. Overall, I'd revisit this spot, maybe earlier in the day to get the more in-demand pastries.

Newest bakery in GCM - Located right across Eggslut. Their display case was something else - every pastry looked fantastic and too pretty to eat. My wife got some croissants and the now hyped up circle croissants. Everything tasted really good but its a tad pricey in my opinion.

After our disappointing meal at Maple Block we hit up this place for a Croissant to was out the disappointment from our taste buds. We ordered the pistachios croissant. The flavor was amazing, but sadly it was tough and stale. The service was friendly and fast.

Went EARLY in the morning to get the pistachio croissant. IT WAS STALE! It was too expensive and too early to sell stale food. My friend has also gone here several times and got stale pastries every time. This review is not to put them under. Please Please Please take this as constructive criticism. Sell FRESH food. Bake daily! If they aren't fresh, don't put them out. Thanks!

By far the best bakery in town. I don't even know where to begin. Everything I tried was absolutely amazing and the service was great. There is nothing bad to say about this place except for the parking. Parking is pretty hard to find but its not impossible. Grand central market has a parking structure and there is street parking on broadway and also on hill. But don't let the parking keep you from trying this place out. The price is also very reasonable. Don't have any pictures but will definitely update with some when I go again.

My husband and I tried a couple of pastries here and they were delicious. My favorite was the pistachio croissant. The pastries we purchased all had a bit of a filling, but surprisingly it was very light and not overpowering at all. We will be back here again!

pistashio spiral crossiant was epic. peach tart with tiny flower, choloate nuttella filled crossiant..im in trouble working near by...need to walk around this section and avoid direct eye contact during lunch..

BAGUETTE REVIEW ONLY: if you like sourdough bread, you might like these baguettes. However the crust is soft, not crisp, and the interior was gummy/chewy. If European looking for bread from back home or a fan of French baguettes, these won't work for you.

Major disappointment. Not my first time, but I purchased a koan aman (sorry about spelling) and an apple filed (BK?, $9) this morning, Saturday at 8:40 am. Both of these were NOT FRESH in fact they seem like they were at least a day old!!! This is the start of the day!!! I would not recommend purchasing any items unless they have a day-old, thus discounted price. A bakery can't sell day old pastries without let customers know. This was the start of the day and all products should be fresh unless otherwise noted. I would not purchase again. I live in the neighborhood and there are other bakeries nearby....I DO NOT RECOMMEND THIS PLACE! A shame as their goods do look great, but looks are deceiving, and Basition does a good job of deceiving.
