I was going to end the day in San Angelo, but decided to press on to Ballinger with the promise of enough daylight, two hotel choices, and this one eatery. If it's in Texas, and it's named Beefmaster, it has to be good, right? Right. I can now proclaim them the masters of beef. I got the 24 oz. KC steak, and while waiting to see what it was, loaded up from the salad bar and soups. Salad is nothing special, but the soup was. Apparently beef queso soup is a rare treat, and I'm glad I got to enjoy at least one bowl of it. I was ready to have a second bowl for dessert, that's how good it was. Spicy, cheesy, beefy. You can add cheddar from the salad bar to overload on the cheesiness - personal recommendation here.
Steak took a little while to come out, but it was worth it. French fries are hand-cut in house, and have a smoky fresh potato flavor without being over-fried or salty. Strongly recommend. Steak options are flat-grilled or mesquite fire-grilled. I think mesquite is the obvious choice, but just in case - yes, get mesquite every time, and twice on Saturdays. I ordered medium rare, thinking it would come out rare (most places tend to underestimate), and damned if it didn't come out exactly medium rare. Hey, I asked for it. The steak swims in its own juice and is sliced into several large chunks - easier for sharing, depending on which size you get, and is oddly mixed with cooked zucchini chunks. I guess that's how they define KC steak. I'd have asked for no zucchini (that's why there's a salad bar, after all), but now you can do as you please. Texas toast was unnecessary with all those delicious fries, but I used it to sop up the leftover steak juice.
So far, everything was five stars. Prompt service, friendly refills. Encouraged, and with the beef queso soup sadly tapped out for the night, I went for dessert. All the desserts are homemade, so you can't go wrong. I selected the Jeff Davis (chess) pie, since chess pies don't make it across the Mason-Dixon Line. Definitely the right choice tonight, because the pie was brought in fresh just an hour earlier. The pie had a fresh, crispy crust on top like a crème brulée. Only my second chess pie, but this is now my gold standard for them.
Yup, five stars all around, and very reasonably priced for the deliciousness you will receive. They do takeout orders as well, if you don't have 90 minutes for a meal. Worth the wait.
