It's a really good thing this truck isn't regularly parked at any place near my house because I would have a big problem. Like, powdered sugar all over my nose, twitching like what stuff was a little something else, shoving these delightfully fried pillows in my face at warp speed kind of problem.
Actually, now that I think about it that sounds awesome and I'm sad that it ISN'T a thing that is happening in my life right now and on the regular. A blessing and a curse, I suppose.
Every time I've had the pleasure of trying this truck it's been at Eastern Market. Not sure if they set up any place else but EM is a good bet. They serve up the beignets plain (powdered sugar), with raspberry sauce (a nice tart contrast), chocolate (when you need it sweeter!), raspberry AND chocolate (OMG) or with bacon (salty/sweet). I've done all but the bacon and I have to say you can't go wrong with any option. Just depends on what you're in the mood for. Servings are generous (4 large beignets per) and made to order. As such, it can be a bit of a wait to get them but I assure you it is worth it. When they get to you they are piping hot, crispy, and oh so wonderful.
They also serve cronets, their take on the fried croissant tren, and while I've not yet tried them (sadness) I have heard that they are a religious experience. Also served plain or with chocolate, raspberry, or bacon.
Thirsty? Get a milk (the perfect accompaniment) or get seriously NOLA and order the chicory coffee.
