Benji's is a prime example of why a wood-fired pizza is better. The pizza I just enjoyed here, the all-meat Carnivore, was delicious and flawlessly prepared due to the woodfire oven and periodic rotation. The high temperatures from the oven result in a richer-flavored pizza with an incredible crust.
Since the high heat of a wood-fired oven cooks a pizza in fewer minutes, this allows the toppings to retain more nutrients, natural sugars, colors, and freshness. No dried-out or limp toppings here. The intense heat from the wood also adds a subtle smokiness.
The high heat also creates the perfect crust that is crispy on the outside and soft and chewy on the inside. The intense heat from the oven walls helps seal in moisture in the crust and gives it that slight char.
Constant rotation of the pizzas while in the oven allows them to cook more evenly and the air in motion will help the dough to rise and create that fluffiness.
I seldom get a pizza packed with such flavor, and authentic looking while this healthy and fresh. The Carnivore is made with San Marzano red sauce, mozzarella, salami, pepperoni, bacon, and sausage. The red sauce was also spot-on: sweet, tangy, balanced, and fresh.
There are 17 pizza choices. There are meat and meatless options but meat toppings can be added to any. Aside from the traditional Italian meats, there is chicken and shrimp. The Bianco and Hot Honey Ricotta are their two most popular choices. The 12" medium and 24" family style are the two pizza sizes.
Pesto prosciutto or tomato basil sandwiches, Benji fries, fried mozzarella puffs, garlic rosemary bread, and chicken wings round out their menu.
My pizza was amazing! Most patrons are true devotees who appreciate a great, authentic pizza prepared the traditional way in a wood fire oven.
