Where to Drink at Waco’s Best Breweries and Bars | Eater Dallas

"There aren’t a lot of rooftops in Waco, but this one at the 1928 Hotel is the spot to go for a grown-up drink in art deco surroundings. It’s more of a full-on restaurant than a bar, so expect to order accordingly, but pair with a bespoke cocktail, glass of wine, or beer." - Courtney E. Smith

Really cute place on top of the rooftop of the most adorable hotel in Waco. We really enjoyed our meal and cocktails inside then when it cooled off hit the roof for a view of Waco and a final drink. We felt awful for the one bartender making drinks for everyone, and his lights out at the bar weren’t working! But his drinks were delish. We loved the pimento cheese, and I had an incredible burger! Messy, but oh so good! Everyone loved their meal choice.

We were easily able to make a reservation for a Saturday evening for our party of 4. As out of town tourists and Magnolia fans, we knew it would be good. We were all beyond pleased with our experience! From the first interaction with our exceptional hostess, Jill, to the after dinner stroll on the rooftop, it was all sensational! Jill was so professional and kind, with the perfect qualities of a hostess. She was friendly, polite, knowledgeable, attentive without being intrusive, and a pure delight! For starters, we ordered the cornbread with honey butter and seasonal jam as well as the cowboy caviar, both melt in your mouth delicious! We shared our entrees and 2 meals for 2 couples was just right. Our friends got the cheeseburger with steak fries and said it was the best ever. We had cedar plank salmon with Brussels sprouts and rice pilaf. While the entire entree was yummy, the Brussels sprouts were phenomenal! Another perk of sharing a meal was that we had room for dessert! The biscuit peach cobbler was incredible as was the Dr. Pepper cake! Everyone agreed it was the favorite dinner meal we had on our trip, which included many awesome dinners!!

First the decor and ambiance is great. Now for our experience. I made reservations a couple of days in advance and we were seated at a small two-top near the entrance and host stand (probably the least desirable spot in the restaurant). There were other better tables available during our time there so I'm not sure why we were seated in that spot. Next we ordered an appetizer that never came. When our meals came I mentioned to the person serving them that our meal came before the appetizer (deviled eggs). He determined the waitress forgot to put them into the system. Mistakes happen. Now on to our entrees. I ordered the $47 Chilean Sea Bass. It's was a small piece (maybe 4 ozs) on a bed of wet couscous. The sea bass was cooked perfectly albeit a very small portion. The couscous was overly wet and the taste overpowered by the taste of soy sauce. For $1 more I could have gotten a much larger steak that looked really good when delivered to other tables. The other entree we received was the $26 cheesiest cheeseburger which was cooked perfectly medium rare and had great flavor. I ordered a mojito which had no fresh mint and an average flavor. For dessert I ordered the Dr Pepper fudge cake. It was ok, but much more the consistency of a dry brownie than fudge cake. The food and service gets 2 stars but the extra star is for the ambience. I would not recommend the Sea Bass due to portion size but especially because the couscous was horrible. Such an easy thing thing to make, no reason for it to be too wet and overly salty with soy sauce. Would I eat here again? Maybe, but I'd stick to hamburger and try the steak. I expected much more for it being a magnolia property and the price point. I don't mind paying $50+ per diner if I'm getting that quality food. They can do much better.

We had a beautiful experience at Bertie’s. The view was amazing. The Chilean Sea Bass was likely the most delicious dish I’ve had in Waco, ever. The service was good and staff was professional. We are looking forward to this being a regular spot for us.

Google
The food was delicious, as expected. Had the Pimento cheese and crackers, the halibut and the baked potato soup for the 2 of us. The 1928 Spritzer and the Old Fashioned were well constructed and tasted great. Joe, our server, was exceptional and knowledgeable about the menu and the community. We took a walk on the outdoor patio which looks like it would be “the place” to be in season.

The views and vibes are really what Bertie’s is all about. The food is well done but the menu is not super exciting. Service is still being figured out. If you’re staying at the hotel it’s great for a standard night out (though Waco has lots of more exciting food options to offer). Locals this is worth it at least once for the experience. Would be cool to see them get a more unique chef / menu. We got the mushroom risotto and the sea bass. Our waiter suggested adding crispy pancetta to the risotto and it definitely took it up a notch. The sauce on the sea bass was very tasty. Brunch was a similar experience. My chicken biscuit with fries was good. Drinks are fine enough.

Google
We definitely loved Bertie’s! Something to be aware of that may not be clear from the name is that the restaurant itself is indoor (top floor of the hotel), but there is an outdoor lounge area with a bar and fire pits with a view of the city that you can sit at before/after dinner. We got the Cowboy Caviar as an appetizer and it was fantastic - definitely coming back just for that! I got the salmon which was also delicious, and the Brussels sprouts it came with had an amazing sauce. My husband got the chicken and it was good, but not incredible. Our cocktails were delicious - not sure the names but their version of a French 75 and a bananas foster type drink. With the outdoor lounge area and the other areas throughout the hotel we will definitely be back both for dinner and enjoying the space!

Google
What a beautiful place! Everything we ordered was top notch, from the drinks to the desserts! Bertie's has an avocado and apple cocktail that is a fantastic surprise. We ordered the salmon, and the risotto and both were seasoned perfectly. Our waitress Jeannie is divine! She made us feel at home and made sure that none of the dishes conflicted with my oh so annoying food allergies. The only negatives I have are the restaurant can get a bit loud as there is very little to dampen sound (we had a table next to us at the beginning with a person whose voice could cut glass and were so happy when they left) and there was only one bathroom for the restaurant that I could find, and there was ALWAYS a line to it. Overall my husband and I loved Bertie's.

Yelp
I took my wife here for our anniversary dinner. Let me tell you why it was disappointing. First it was very loud. Too loud to hold a conversation. They had background music playing but most of the time it was drowned out. ( and only 1/2 the tables were full!). While the food was good the portion size was small for the price. There are a few other things that while annoying should not keep you from trying this restaurant for yourself Chair height and table height is not a match. No salt & pepper on the table. People going to the outside rooftop bar constantly walking by the table. Bar staff wheeling things past table. The room seemed a little to bright. (For an evening dinner) They do have a few outside tables and if the weather is good would be the best choice. I may come back for a cocktail on the deck but the restaurant is a no for me.

Yelp
I was just a random walk in, but Ron was able to look at reservations and accommodate me for dinner. I was given a seat w a view out to the terrace and city. Inside the decor was historical yet lovely with both charm and clean lines. Well done. Hunter was my amazing waiter. He was kind and attentive with great menu knowledge and advice. I had the plank cooked salmon with Brussel sprouts, didn't want rice so they gave me broccoli. It was fantastic. Thanks Ron, Hunter, and Team! I would definitely go back!

Yelp
Bertie's is on the rooftop of Hotel 1928 which is beautiful to walk through on the way up. We got a table outside on the rooftop which has an iconic view of the Alico building. The cheeseburger was phenomenal and the bananas foster pudding was AMAZING. I would go back just for that!! Drinks were weak and tasted like juice. The front host texted us to come in earlier than our reservation because they closed shortly after, yet it was an available time to book online and the only slot left to reserve that day. I felt rushed to get there earlier. Turned out fine but it was quite off-putting.

Yelp
Had a lovely brunch at Bertie's when I visited Waco with family! It was a chilly, rainy day so we sat inside but really enjoyed the beautiful decor and ambiance (as one does at a Magnolia spot). We drank both coffee and cocktails and loved the unique mixes and fresh botanical ingredients! The food was delicious, and very filling. I had the French toast skillet, which was so good, but could only eat so much! My family enjoyed the burger and ricotta pancakes as well. Since we waited a bit for our food, without asking our server brought us a complimentary baked good as well, which was very good. i would definitely visit again during my next trip to Waco!

Yelp
Ambiance- oh heavens yes, this is a basic bitch brunch place for sure.... And I mean that as a compliment. Roof top super cute IG moments a brunching color palette dream come dressed as we showed up in workout clothes and felt a little snubbed by the hostess. Food- pleasantly surprised by the quality of food. Had the fried chicken biscuit with fries and the pimento cheese dip. Loved the little honey jar that came with the sandwich. Tip- come on a nice day to sit outside and come dressed

Yelp
Loved our dinner with friends at Berties! The waitstaff were all very positive and attentive! The restaurant itself is smallish, not that many tables, which made it more quaint. The menu is fairly limited. I had the Cedar Plank Salmon, which came with a huge bowl of spicy - sweet Brussel sprouts. Both were outstanding. We finished with the fried apple pie and ice cream, which we loved. Prices are high, but in line with most hotel eateries. Only complaint is that the room temp was COLD, but that probably fluctuates depending on the the weather.

Yelp
I think they should have had all the kinks worked out by now (it's been over 5 months) but they don't have anything to worry about because people are going here because of Joanna. The food and service don't have to be good...not a ton of choices once you're downtown and done seeing g the silos. The good Beautiful interior Great view of downtown Waco Good cocktails The bad They were out of two entrees ( of course the ones we wanted). Wine list is underwhelming Risotto was undercooked Very loud Service was spotty If I ever go back to Waco, I will definitely go back but I'll get drinks on the rooftop terrace.

Yelp
Came here in a Monday night as we were staying in the hotel. 5 stars for the atmosphere- music was a nice level, outdoor terrace was comfortable and had a great view, seating was perfect. 5 stars for service. The staff was on point. Very attentive and friendly. Food 1.5 stars. Deviled eggs to start- bland, not very flavorful, very boring. Sea bass- fishy, extremely salty, boy choy soaked in oil and overdone. Mushroom risotto was the best thing we ate and it was mediocre, the mushroom flavor wasn't overpowering. I definitely wouldn't come for the food, but would be back for a drink on the terrace.

Yelp
We had visited the rooftop bar the night before but was met with terrible service by the bartenders. Returned the next day for brunch and avoided the rooftop bar. Brunch service was great and the food was delicious! The table and decor were beautiful. This made up for the night before. Definitely plan to visit this place when in Waco and remember to make a reservation.
google avatar

Parker S.

Yelp
While nice and social the bartenders are not trained. For a bar this nice and price point the bartenders should know terminology like "up" or "built". The bar across the street has better drinks and bartenders.
google avatar

Tracy M.

Yelp
Pimento cheese and crackers was outstanding. Bar tender on point. Salmon and mushroom risotto great. Server not so great as he was a bit rough around the edges and did not understand the nuances of a restaurant of this quality.

Travis C.

Yelp
The ambiance was great. Really swanky hotel and feels very high end. The customer service we received on the rooftop was terrible. The bartender acted like he didn't want to be there and was short winded. We ordered drinks and then he disappeared from the bar without a word. After a few minutes of waiting we left and went to One Day across the street. Really disappointed in the service received. You would think at a high end hotel/bar this would be a top priority. It is not for them. I will not be back.

Yelp
I went here during the Christmas season, and my oh my it is beautiful. Staff was amazing and really nice. The food was amazing! Definitely going back this winter

Hannah M.

Yelp
We went for drinks only on the rooftop bar, so can't speak for the dinner menu but the ambience and view on the rooftop was Instagram worthy for sure. Drinks were very well made, the two bartenders gave us excellent service once they were able to get to us. It did seem that the outside bar was also the only bar servicing the inside restaurant as well, so there was a bit of waiting for them to become available even though there wasn't anyone in front of us at the actual bar. I'm unsure if that's the case all the time, we went on a Monday night, so they may have more staffing or a separate bar servicing inside on the weekend, but something to be aware of!

Yelp
Interesting place you've got here. It's very hyped up and is a really cool venue. There is a restaurant on the inside and a little bit on the rooftop. However, the rooftop is mostly just seating for the bar. The view is awesome though! The food is okay. It seems as if they're trying to do so much with it that it's almost too much and makes the food not as good. The menu is also very limited. The service was also spotty. Our food took about 45 minutes to an hour to come out and we literally couldn't find our server to ask him anything about our food or drinks. It was cool to come once but I don't think it's a reoccurring dinner destination.

Yelp
Went on a Sunday night, table for one on my drive home to Fort Worth. Seated promptly, but then forgotten by the one way maybe ordered drink appetizer and food 15 min later. Food came quickly, waitress checked on me once then again forgotten. I had to ask the hostess for a to go box and the check. Beautiful spot, service SLACKING.

Yelp
What a treat! This rooftop restaurant offers indoor and outdoor seating. Entering the Hotel itself is an exciting journey especially if you keep up with The Gaines' and how they revitalized this historic establishment. Food was fantastic and flavorful! Kimberly our waitress was super attentive and friendly! The banana pudding (forgot to take a photo) was divine especially the flambé'd banana! Check out the library in the basement to walk off dinner. Definitely worth a visit. Great date spot too.

Yelp
The hotel and restaurant are beautifully done, but unfortunately I was disappointed by our brunch at Bertie's today. I ordered the French Omelet, which is described as a chive and cheese omelet. As you can see in the photo, the chives were almost microscopic. There were no chives in the inside either. And food took an hour. My husband and father-in-law were served French fries when their meal was described as coming with breakfast potatoes. And we ordered a side of sausage which never came. Our server was kind and I don't blame her; maybe they were just out of ingredients. But for the price, I expect better food.
google avatar

Shaun D.

Yelp
Too chilly to eat on the terrace. The place looked really beautiful with its stunning decor, but the food was just okay - typical brunch options. Service was fine, nothing to rave about. Which shocked us since we had such incredible service at the main restaurant the evening before. If you're all about the chill vibes and don't mind just decent brunch, it's a good spot for that laid-back meal.

Yelp
We went to Bertie's for a birthday celebration and had a wonderful time. Delightful ambiance, good food and attentive service. The manager checked in on us and our server was quick with everything. The sweet potato appetizer was crispy on the outside and melt in your mouth on the inside and pimento cheese dip was so enjoyable. Several of us had the cedar plank salmon and it was well cooked and delicious. The Brussels sprouts were crispy and delicious and the rice well flavored. All in all a wonderful time and we would definitely recommend.

Yelp
Food was excellent! Service was great! Ambiance was on point as well. Very nice place for a date night.

Yelp
This was my first visit and it really did not disappoint! We had a party of 4, our reservation was easily made online for 6:45 pm. They called us to let us know the outside patio would be open and if we would like to be inside or outside. We chose to dine outside. The view was so pretty with the Alico building behind us. We ordered the salmon, the Chicken Paillard, 44 Farms Filet and the Cheesiest Cheeseburger. The food was so amazing, we ate every last bit of it. We also ordered the Dr. Pepper Brownie with in house made whipped cream. The heaters were a thoughtful addition, we were nice and toasty. The restroom is on the 3rd floor which was so easy to get to and many stalls available and clean. The hand soaps and lotion provided smelled so good. Every minute I spent there was perfect. As we were leaving the manager Lilu checked in with us and right behind her came a lovely beautiful lady who began to talk to us and ask us about our experience with the food. We let her know we were completely satisfied. Lilu introduced her as Chip's mother! She was the sweetest lady and made my night. Thank you to all the staff and our waiter Mr. Taylor. A dinner we will never forget.

Yelp
Brought my mom when she was in town, and she was excited to see it. It was very lovely, the pimento cheese was fantastic. The brussel sprouts had a great taste and crunch and the rice pilaf was way better than expected.

Linda G.

Yelp
We immensely enjoyed our experience! We came in for an overnight stay at Hotel 1928 and after walking throughout the hotel and enjoying a cocktail on the rooftop we decided to make a reservation, which is encouraged as the space is small. Service was very attentive and timely, and we recommend the pimento cheese spread as a shared appetizer. The big win is the cheeseburger and fries with rave reviews over the mustard sauce! Only food disappointment was the peach cobbler dessert which is served cold. Also, we were dining at sundown and they need an accommodation for the west facing windows that have no window treatments (I had to put my sunglasses on for the second half of our meal).

Peyton S.

Yelp
Delicious and great service. The ambiance is fantastic and such a great spot. Met family and chatted for hours. Staff was courteous and friendly.

Yelp
We booked a dinner reservation for 4pm on the day we got into Waco with our infant daughter. On the website, it said "there might be a $10 cancellation fee." We booked for three people and indicated in the notes that it was two adults and one infant (stroller). Unfortunately, our daughter was having a horrible afternoon, so we decided to cancel 90 minutes before our reservation. We assumed that we might have a $10 charge, but we hoped that since it wasn't during rush hour and we let them know in advance, they would show grace. The next day, we were charged $30. We called and tried to reason with them, explaining our circumstances, but they refused to refund us. We were already having a not so great day, and we didn't want to force everyone in the restaurant to deal with a screaming baby, but I guess that means we had to pay the restaurant $30.
google avatar

Jacqueline B.

Yelp
We had a great experience here, this was the best meal I've ever had! We were greeted several times by the restaurant manager Liuliu, she was very nice and concerned about our experience. The meal we had was insanely good! We had the Salmon with Brussels sprouts and Jasmine rice. I've never had Brussels sprouts like this before. They were amazing!!!! The salmon was so buttery, such great food. I gave this place 4 stars because as we sat down the first thing our waiter told us was everything that was unavailable on the menu. They could not make 4 of their drink specials, some of the wine was not available and she apologized for not having a well available for the beer. I wonder if there is a better way of upselling everything you do have rather than telling us everything that's not available. We didn't even care about those things, the food was great and they had the drinks we wanted!
google avatar

Bobby M.

Yelp
The food and service were all around not very good. They ended up putting us at a table next to the bathroom. There is a single restroom for the entire restaurant with patrons lined up outside of it. The menu is very boring. I had very high hopes, but left disappointed.

Angela N.

Yelp
We had a wonderful meal at Bertie's the sea bass was cooked to perfection, the quant setting will bring us back again soon. We liked the atmosphere of the whole place. Check out the Library on your way out. Hopefully this will stay a secret so we won't have to fight the crowds to get a table.

Catherine S.

Yelp
Came up here for cocktails after dinner at the brasserie. Great ambiance and drinks! Definitely a fun place to come to for dinner or afterwards to relax with a drink. They offer many alcoholic as well as non alcoholic options which was nice.

Colin H.

Yelp
Amazing food and amazing service! Best meal we had in Waco! Ambiance is gorgeous and so clean!

Carol S.

Yelp
The restaurant is gorgeous but ... really? We spent over $100 for 2 hamburger plates (nothing special) and 2 drinks. The service was awful we had to remind them about our drink order twice and it wasn't even busy.

Kelly M.

Yelp
We were so looking forward to dining here. We drove 1072 miles to get here. We made reservations weeks in advance. We arrived 30 minutes early and it was completely empty. They tried to seat us at the only table in the middle of the walkway. I asked for a different table and after making us wait another 10 minutes for them to futz about they told us no other option. There literally was no other person there. It was ridiculous so we left. He said there was no way to change it because they had overbooked. Really very very disappointing and unacceptable.

Emily C.

Yelp
The restaurant is very beautiful, containing an outdoor and indoor seating area with view of Waco. The crispy sweet potato appetizer did not come out until after our food, and it was not very good. However, the fries and the side of potatoes were amazing. The lemon bread was very dense and moist. The chicken biscuit was good, however nothing to write home about. Overall, would come back again and make sure to get the fries/potatoes and the bread!

Rhea H.

Yelp
The staff was so. sweet. (literally nicest people we encountered our whole trip) & the food was DELICIOUS. The vibes inside & out were so cutie & chill. 10/10 overall

Jill M.

Yelp
Such a disappointing miss. Ambiance is super chic, but that's the only positive. They sat us by the restaurant's only bathroom. I also got a glance in the kitchen and saw a 12-pack of Dr. Pepper on the ground with a bunch of other junk. Definitely not what you want to see in a space where your food is being prepared. Our waiter was just checking the boxes, well sort of. My salad plate stayed on the table the entire time. Our empty water bottle never got refilled. We ordered the Kale Caesar off the incredibly sparse menu. It arrived without the cornbread croutons. When we asked about the croutons, the waitress thought they might be out of croutons. She did come back with a container of cornbread crumbs, which I guess are their croutons??? Totally unimpressed for $14. We tried to order some mocktails, but were told they were out of all the ones listed on the menu. My husband ordered a beer. The waiter delivered a completely different beer. When we pointed out the error he reported that the one ordered was not available. We ordered the salmon, 44 Farms Filet and the Cheesiest Cheeseburger. All were acceptable at best and nothing worth coming back for. It was a disappointing, expensive meal. Wish we would have chosen a different place to spend our evening.
