What a way to start our Sydney chapter!
On our first night in Double Bay, we were thrilled to discover Bibo just a short walk from our new place. Cool without trying too hard, polished but relaxed — exactly the kind of wine bar you hope becomes your neighborhood go-to.
We ordered the Chef’s Classic Menu, and it was fantastic from start to finish.
The flaming chorizo set the tone. The mackerel pâté and pastéis de bacalhau were beautifully balanced and deeply flavorful. The Snapper Crudo with lime and mango was bright and clean — a perfect contrast.
Then came the Cowra Lamb Rack with green velouté and cherry jus — and Nigel made an actual, involuntary noise. That kind of dish.
For dessert, the menu featured Pavlova with mango and strawberry, which I couldn’t eat due to a strawberry allergy. Our server, Cindy, quietly surprised me with a Sweet Belém Portuguese Tart with cinnamon instead — thoughtful, seamless, and absolutely delicious.
Cindy was excellent, as was the entire team: professional and polished, yet warm and engaging at the same time. Service felt intentional without being stiff.
We walked home already planning our return.
We will absolutely be back.
