"If you are looking to drink impeccable coffee while enjoying some people-watching, Bills is the ultimate Sydney pit stop. A small empire spanning three Sydney neighborhoods and a growing clutch of international locations, it's the place to head to for a leisurely late breakfast or brunch. Be sure to order the famous ricotta hotcakes served with banana and honeycomb butter—or if you're feeling savory, the sweet-corn fritters with avocado and roasted tomato are hard to beat."

Hands down, the quintessential Sydney brunch experience! 🇦🇺✨ I finally understand why Bills is legendary. We ordered the Ricotta Hotcakes, Sweet Corn Fritters, and the Full Aussie, and honestly? Every single bite was perfection. The Hotcakes are absolute heaven—fluffy like clouds and the honeycomb butter is to die for. 🥞🍯 The Corn Fritters provided the perfect savory balance, and the Full Aussie was the ultimate breakfast plate. Beyond the food, the atmosphere is effortlessly chic and the service was impeccable. The staff were incredibly warm and attentive, making the meal even more enjoyable. If you're visiting Sydney, do yourself a huge favor and put this at the top of your list. It’s not just breakfast; it’s a memory. 10/10 highly recommend! 🌟👏

The restaurant is beautiful but was underwhelmed by the service and the food. Ordered their famous pancakes with a side of bacon. The pancake is ok but I was expecting much fluffier texture. The honeycomb butter is good but the bacon was very average similar to ones you get at a cheaper cafe. The coffee was nice and smooth. They are extremely busy especially during brunch and lunch time, so prepare to wait in line.

The pasta has a slightly tangy flavor that is really special and super tasty. It feels like a perfect and refreshing dish for summer. The salad dressing is nicely sweet and sour, and the green sauce with the quinoa rice adds great texture. The sugar-free lemonade is surprisingly delicious and not too sour at all. The vibe of the restaurant is really chill and enjoying this meal on a hot summer day feels perfect.

The pancakes were fluffy and really good, and the portions were huge. The price was kinda wild though (around $30) for pancakes is a lot. I got my coffee first, then had to wait very long for the actual pancakes, which I didn’t appreciate at all. It was also really noisy, but that’s expected since it’s a popular place. Overall good, just very pricey and slow.

Tick, tick, tickety tick! All round well done here! You know when you see Hugh Jackman give Oprah the heads up to visit Bills in Surry Hills on her imminent visit, it’s going to be good. Not my first rodeo and won’t be my last. Stay in the look out for O! I wonder if she’ll visit and have the ricotta pancakes!?? Far ooottt, they were GOOOODDD!!! Yum yummy yum!

I really wanted to love our visit to Bills because the pancakes were great and the asparagus was honestly amazing. The kitchen is definitely doing their part. Unfortunately, the service completely ruined the experience. We never received the still water we ordered. I also ordered an iced matcha which arrived fully lumpy—I was literally scooping out chunks of matcha onto my serviette. I politely asked if it could be remade and even suggested (as a matcha lover) that it might mix better if combined with hot water first. The male waiter cut me off and said, “Well I don’t drink them so I don’t know.” They then took the same drink and just tried to mix it again. I could instantly tell it wasn’t fixed and when I asked if it was the same one, he said yes. After asking again for a fresh one, I was served what tasted like a watered-down version of the same drink, as the ice had clearly melted. On top of that, no one returned to our table—not to check in, clear plates, bring water, or finalise the bill. We eventually saw another couple told by a waitress that it’s “better to come inside and get your own bill,” which matched our experience. Staff were chatting out the front about finishing at 2pm, which would explain why we were basically ignored toward the end. The food was on point, but the service was genuinely the worst I’ve ever received, and it completely overshadowed the meal. Sadly, I wouldn’t return based on this experience.

If there’s a place that makes your day feel softer and brighter after a meal, bills is definitely one of those places. The food here isn’t loud or flashy — instead, it’s calm, comforting, and consistently well done. Every dish feels thoughtfully prepared, using fresh ingredients and clean flavours that leave you feeling satisfied rather than overwhelmed. It’s the kind of food that quietly says, “You did something nice for yourself today.” What truly deserves a big round of applause is the service. The staff are friendly, attentive, and genuinely kind without being intrusive. You’re never rushed, never pressured, and always made to feel welcome. That level of hospitality alone already earns serious bonus points. The atmosphere is another highlight — warm, relaxed, and effortlessly stylish. Whether you’re catching up with friends, enjoying a casual date, or dining solo with your thoughts, bills feels like the right place to be. If I had to offer one gentle and hopeful suggestion, it would be this: a little more variety on the menu would make an already great experience even better. That said, the quality and consistency of what’s currently offered absolutely justify the five stars. In short: bills is a place you don’t just visit once — it becomes part of your routine. Five stars for the food, the service, and the simple joy of being well looked after.

We were recommended this place, and honestly, I cannot understand why. I ordered the avo toast ($21) with an added egg ($4.40). It came out as a single piece of toast that was burnt on both the top and bottom. The moment you took a bite, all you could taste was burnt toast completely overpowering everything else. We also ordered the Sweet Corn Fritters ($29.50). They were fine in texture, but had no flavour. Overall, a pretty disappointing experience and so over priced.
