An excellent culinary experience, with superbly fresh seafood, however, steeply priced. Every dish was excellent, all the way through to outstanding desserts. However, possibly because of a very restricted space (40 seats?), the premium pricing vs similar places in Madrid runs at about 30-40%. That’s the reason why I didn’t give it a 5*.

I can't wait to dine here again when we return in February. My wife and I had an amazing experience here. We ordered the whole roasted rock fish and it was spectacular. We love the decore and how unique the tableware was. The wait staff are so friendly and helpful!

The food was good, sea food was really fresh and they really cooked the good fish. However, the ensaladilla was very common and not amazing, and the price is really high. I think i will only go one time.

Fresh fish, beautifully prepared. Decor is rustic and simple, showing the restaurant’s focus on food. It can be a bit pricey but the quality of the food and preparation is worth it. You get to select a whole fresh fish at your table, which is then simply prepared on a charcoal grill and served deboned, which for me makes it easier to eat and enjoy. Wine selection is also very good (I would opt for a nice Albariño, pairs well with the seafood).

If you love fish, you will love this place. They have very good and creative starters like their superb reimagined classic Gilda with red tuna. The main course will be a grilled fresh catch of the day, one of the best turbots I’ve ever had.. and I am a Basque fish lover. Highly recommended a visit to Bistronomika.

The place is cozy and informal, with an easygoing friendly service. Excellent fresh produce fuelling a cuisine with unconventional touches - octopus with bone marrow was an intriguing experiment, their take on the classic gilda was definitely morish - and a short but trendy wine list make a very pleasant meal.

Located in Madrid's Literary Quarter, Bistronomika is a cozy restaurant where fish is the main attraction. Chef Carlos del Portillo has an obsession with fish otherwise difficult to find in Spanish restaurants, and he knows how to bring the best out of each one. In all honesty this is probably the freshest fish I ever had! Per the write up on Eater, he is pretty much the only man in town willing to go that extra mile to cook them with respect, skill and is so full of flavors. We ordered the red fish and the chef allows us to order just a half fish, and it is cooked to perfection with olive oil and finished off with an amazing sauce that brings out the flavors of the dish without overpowering it. The razor clams were also crazy good - cooked in a leek soup based white sauce with scallions and goes well with a bottle of Mersault. The interior of the restaurant was minimalist and contemporary. We sat at the table overlooking the chef's open kitchen grill station and saw him butchering the whole fish with such skills and precision. We love everything we ordered and definitely a hidden gem!
