In New Haven, a Landmark Brutalist Building Becomes America’s First Fossil Fuel-Free Hotel | Vogue

"I appreciated how the in‑house restaurant leans into the property’s fossil fuel‑free ethos, using induction cooking for a clever menu featuring items like Haus egg sandwiches and cauliflower tacos." - Amy Thomas

Hotel Marcel in New Haven: America’s Eco-Conscious Brutalist Hotel

"Set inside the hotel, the in-house restaurant leans playful and sustainable, driven by local ingredients under Executive Chef Megan Gill (known from Hell’s Kitchen Season 20); on a busy Saturday morning it served a mix of hotel guests, locals, and airline crew. I tried the BLDG Breakfast with sweet potato biscuits and cinnamon honey butter, while my niece loved a Gooey Cinnamon Roll with bacon, and we both left satisfied — the menu and atmosphere feel casual, inventive, and tied to the hotel’s earth-first ethos."

I had breakfast at BLDG, located inside the Marcel Hotel, and it was such a pleasant experience. I ordered the BLDG breakfast plate, and everything came out hot, fresh, and flavorful. The potatoes were seasoned perfectly, the bacon was crisp and well-cooked, and the eggs were done just right. The toast was a little firm to chew, but it was nicely toasted and came with delicious whipped butter, which was a nice touch. The service stood out — friendly, attentive, and quick without feeling rushed. I also really appreciated that some of the food items were locally sourced, which the menu highlights. The atmosphere was calm and welcoming, making it a great spot to relax and enjoy a meal. Overall, both the food and the service were excellent. I’d definitely recommend BLDG for anyone looking for a quality breakfast in a quiet, comfortable setting.

There were four of us on a Saturday night and we got right in without reserving. The service was great and the food was very nicely presented and very tasty. They are part of "restaurant week" with a pre-fixed menu for those that like that offer. It was a great way to see the icon building and the comfy, stylish hotel lobby.

This is the #142nd restaurant I have dined at in New Haven. The hotel wasn't busy at lunch time. I ordered a haus burger with local soda which were both good. For just over $20 I got to enjoy the atmosphere of a well-lit hotel hall while eating. The waitress was very nice and served the food with great dexterity.

Google
Better than expected hotel restaurant for breakfast. Only had breakfast so don't know about lunch/dinner. The drip coffee was surprisingly good! Service for breakfast was slow - this was a business trip and I was lucky that my colleague was running late. There is takeout at the bar. Skip ordering poached eggs - mine were definitely too hard - the waitress offered to have them remade but given how long they took that was unrealistic. I still like eggs even if they're not as ordered...

Expectations exceeded! Our expectations were low due to this being a "hotel restaurant". We were pleasantly surprised bordering shocked. For drinks, we had the Strawberry Fields and the Limon Skies with the latter being the stronger of the two. My wife being her typical weirdo self, ordered the Elote Dip, fresh bread with olive oil on the side. She RAVED about the Elote Dip (see photo) and the bread was truly fresh homemade bread, but would be much better paired with butter. The bread was outstanding though. I had a burger and fries. I eat a lot of burgers and was shocked at how good this was. I typically do not care for fries and find them boring and uninspired. The fries at BLDG were delicious and had a light seasoning that put them over the edge. Only slight negative was the waitstaff was a little out of sync in seating us and taking our order. Waitress was very sweet and personable though. This is a great place to eat if you value space. The tables were spaced out well so other table conversations do not permeate your space. Do not sleep on this place. We were staying at the Hilton and only ate here because we didn't feel like going out. We expected BLDG to just go through the motions and did not expect to enjoy the food so much. Do yourself a favor and give BLDG a try - you won't be disappointed and may even become a fan.

Stayed at the hotel Marcel to admire its architecture but was pleasantly surprised by the hotel restaurant. Service was great and food exceeded expectations. Spring onion galette comes highly recommended.

We stopped in for cocktails, cocktails, and appetizers after our long trip up. The drinks were great, the cocktails, yoi couldn't tell the difference, and the appetizers were awesome. It was so good, we stopped in one more time before we returned home the following day! Probably.one of the better restaurants in a hotel thay we have been to.

Google
Worst food and drink in quite sometime! VERY small menu and what they offer isn’t worth the visit, save your time and visit another restaurant in New Haven - too many good options to waste your money here!! I’m not sure your limited menu or the fact that you’re getting ready for restaurant week has anything to do with the quality of the food and the drinks? The salad was dry over stuffed for the bowl not mixed and inedible the sweet vodka martini was straight vodka, and vermouth. The margarita tasted like lime water?

Yelp
We had brunch here twice during our stay at the hotel and both times we really enjoyed our meal. Coffee was nice and hot with the right amount of brew strength...not too bold and not too weak. Service was friendly and attentive. There's a bar area to sit for cocktails and ordering. The dining room was large with lots of windows. You can also make reservations through Open Table or Resy if you're concerned about seating. We were in town for the Yale Harvard football game and so breakfast got a little crowded around 9:00. Food was great! Both mornings we ordered the same dishes: frittata and a burger with fries. The frittata had a good amount of mushrooms and spinach. Nice and creamy. Came with a side salad. The burger came with a side of fries and I loved those fries! Crispy and thin. Nicely seasoned. Burger both times came out medium well, just as we ordered. Locally sourced ingredients. New Haven has a ton of great restaurants and BLVD is one of them.

Yelp
I have been to this restaurant many times and it never disappointed. I have tried essentially everything on the breakfast menu and one of my absolute favorites was the breakfast sandwich (specifically with brisket which was smoked fresh daily) It was a huge portion and came with the option of breakfast potatoes, berries or a side salad. It was nice to have options for a side. They have so many options there is definitely something for everyone. I appreciated the variety due to the amount of times I stayed there, I could always have something different. One highlight of my breakfast experience that may seem minor was their fresh pressed Fuji apple juice, it is without a doubt the best I've ever had. They use farm fresh, local ingredients which I am a huge fan of. The quality was so high. Josh is my favorite server / bartender, extremely attentive and always goes above and beyond.

Yelp
Looks can be deceiving! From an esthetic perspective the space is lovely and very relaxing. We are always looking for a place to enjoy breakfast so off we went. We were pleasantly greeted and seated in an almost empty restaurant. We ordered our meals and waited and waited and waited for our coffee. Almost instantly I was handed pancakes and I questioned as to the speed at which they arrived and was assured they were mine, well they were not, if I had an allergic issue with chocolate it would have been unfortunate. The pancakes were taken away and we waited for our meal. When our meals arrived it was underwhelming. The pancakes had no flavor the cinnamon roll was cold and dry, I honestly feel it was reheated from last week! I could not finish the pancakes and took only one bite of the cinnamon roll. Just a complete disappointment.

Yelp
BLDG is a hidden gem tucked away inside Hotel Marcel. I love everything that this hotel stands for and the Sales Department working at Hotel Marcel are incredible. Clarizza is the best and I had the pleasure of meeting the GM a few months ago who is equally as friendly and nice. Book your next event with Clarizza! Our dinner two weeks ago on Saturday night was very nice. They have a scratch kitchen, so everything is made fresh. They even have whoever they are sourcing from (local farms, etc.) right on the menu which is great. Our server was fantastic. Drinks were phenomenal - I had a fantastic margarita with Tajin on the rim which I love. We started with the crab cake and the smokestack bruschetta, followed by the ELDAWLA salad. The crab crake was huge and incredibly flavorful, and the bruschetta was flavorful and interesting as well. Salad was SO good, bursting with a multitude of flavors - watermelon, pistachio, mint, etc. It was also quite large. We were getting quite full but still decided on entrees because the starters and salad were so great. I got the curry without added protein, and the boyfriend got the Wild Atlantic Salmon. He commented his salmon was a bit dry however everything with it was nice. Will definitely be back.

Yelp
This is my third time eating here and it's become a reliable gem. I've never had a bad meal here and, as I've learned, the most "boring" dishes are often the ones that astound me the most. First time eating here, in fall 2024, I ordered the fish and chips. Doesn't sound too interesting, but the fish was skate instead of haddock or cod. I have never been a big fan of skate, but it worked beautifully in this dish. The batter was crispy and not too heavy and the dish was just fantastic. The most recent time eating here was for New Haven Restaurant Week in April 2025. I was disappointed when I saw the entrees: chicken milanese, buckwheat soba noodles, or black sea bass. In any other restaurant, the black sea bass would have been my immediate default. My friend ordered it and the fish was done well, and the fennel and pea base was excellent. But, given my past experience with BLDG, I decided to go against my misgivings and order the chicken milanese. Wow. It was excellent: crunchy breading, crisped to perfection, and on the inside a juicy, healthy-sized piece of chicken. There were a few melted shavings of parmesan (as stated on the menu), but I'm pretty sure there was some mustard coating the chicken (or maybe coming off the salad?) that added a welcome bite of flavor. The chicken, fish, and vegetables have all been very fresh every time I've eaten here. For dessert, the carrot cake cheesecake sounded phenomenal, but I again went against my instincts and got the mint julep cake. My friend got the cheesecake and it was indeed good, but the coconut was too much for me (I'm not a fan of the fruit). I'm also not a fan of mint in sweet dishes because too often it tastes like toothpaste to me. But this cake had a perfect balance -- just enough mint to be refreshing, but enough cake and honey to not be overpowering. The lime gelato was a nice touch. The seating has a little art deco feel and the bar is beautiful. It matches the overall vibe of the hotel and its classic Brutalist architecture. The wine menu is a little limited -- just a couple selections by the glass or bottle -- no special bottles hidden in back. But the wines are overall good and the cocktails and mocktails more than compensate. I'm looking forward to my next meal here.

Yelp
Couldn't be better! Imaginative food and drinks well designed and executed, nice space, friendly and competent staff. My new favorite.

Yelp
Had an excellent dinner! I had salmon and my husband had the fish and chips. Everything was amazingly fresh and delicious. Drinks were excellent especially the brutalist old fashioned. Quick service in a beautiful setting. Highly recommend!

Yelp
Ambiance: Beautiful, warm dining space with nice tables. Might be quiet so maybe less comfortable if you are a loud noisy party, but it's nice for a smaller group or family. It's a mostly separate raised space set away from the hotel lobby, doesn't feel like a lobby. 4.5 Service: Attentive and friendly, but poorly trained. 3.5 Location: Building is amazing work of art. Location is almost too far to walk from downtown New Haven (unfortunately because it's become one of the nicest downtowns in the US), but you could easily bike or take a bus there. The streets to walk or bike here are mostly pleasant and safe from crazy traffic. Overall 4. Food: Food uses high quality ingredients and many dishes, like salads and organic chicken, are healthy options if you're looking for that. Some of the dishes are prepared very well, and are elegant and tasty, but other dishes are basically average or somewhat above average. Nothing bad though. Nice selection of local beers and cocktails and wines to go with the food. I would suggest avoiding desserts, though, and walking over to Wooster Street or going downtown for that. Desserts have been poorly executed. Overall 4 for food. Value: Prices are more or less reasonable for what is offered. Not a huge value, but also not overpriced. You get value from being able to enjoy the nice space. 4 Average 4, good, but being in a mid-sized city that has many 5-star places and is so famous for food, this isn't likely to be a destination or a place that locals will come back to often, unless the food (and especially desserts) can be improved. Beautiful space, and a fine choice for a quiet evening or maybe a lunch. And it's a nice option if you are staying at the gorgeous hotel or visiting the IKEA next door.

Yelp
We went there for Thanksgiving dinner, and instantly loved the look of the place. We ordered cocktails, which were delicious, but after one sip, soup was served. So we had no time to enjoy our cocktails. THEN, around three minutes later, we were served our dinner. We had planned on ordering a cocktail and have wine with our dinner, but since the cocktails, the soup, and the entree were all on the table at once, we didn't have the opportunity. I complained to the guy who brought us the dinner, and said we are being rushed through the courses, He said nothing. A man sat next to us, and was sitting there for at least 15 minutes, and he was completely ignored. He finally got up and left. Mind you, this place was FAR from being crowded. There were considerably more empty tables than full. The food? I ordered honey baked ham, which was burned, dry, and NOT honey baked. The top slice of ham on my plate was black. It was that burned. I was given a little pitcher of honey sauce that was too hot to touch. The mashed potatoes were almost certainly instant. They had no flavor at all. The green bean casserole which was described on the menu as having a crunchy topping, was tasteless and there was not the slightest crunch. (I had to hunt for it since it was sitting under a little ramekin of cranberry sauce) The pitcher for the honey sauce was on top of most of the mashed potatoes. It was a mess. We are willing to try it again, since this was a holiday, and maybe they had their B team working the room. But boy, this was VERY disappointing.

Yelp
Cannot wait to go back tonight and tomorrow for our annual Christmas snacks!! Last year blew us away with amazing drinks, service, a killer burger, and a gorgeous dining room. Can't beat the Arethusa pints, innovative cocktails, and amazing breakfast too. Long live Breuer!!

Yelp
Ate here out first night in town as it was attached to the hotel. Food was good if disappointingly overpriced. And our waiter had a tendency to mumble, talk fast, and talk low so we could barely understand a word he was saying. Not sure if we'll be back as there are so many other options for food not far away, and at much more reasonable price too. Will say the French fries were out of this world!

Yelp
Incredible. A hidden gem of New Haven. I brought my mom for a Valentine's Day date, and the chef was kind enough to make everyone complimentary beef puff pastries. I thought I had the best pasta straight from the source in Italy, but I was wrong. Not only does New Haven arguable have the best pizza, it also can argue it has the best pasta made here. The bread was fresh and flavorful with interesting combination options. Nice open space with cool ambiance. 10/10 would recommend and now want to try everything on their menu. Our waitress Jade was very attentive and sweet

Yelp
Had dinner Friday night and Breakfast Saturday morning. The staff is lovely and the ambiance is ok. They ran out of half their menu Friday night and again for breakfast Saturday. The menu is not particularly expansive and there are not a lot of tables. Finally, the Kitchen is all electric, making food preparation a bit different.

Yelp
After visiting the Yale Art Gallery and then IKEA, I was starving & we googled "restaurants near me" , and BLDG came up. And it was "near me"- right next door inside the Hotel Marcel! I had wanted to check out the building anyway, so after a Quick Look online at the menu, we booked on Open Table. It was a Friday late afternoon, and not at all busy. Staff was friendly and welcoming, the decor and ambiance were nice. Didn't really have expectations, but everything was excellent! Our party of 3 had: 1. The Baked Feta (for our vegetarian). They loved the feta itself, the other stuff in it not so much but overall they enjoyed. It was different! 2. Haus Burger. Excellent burger & tasty fries. 3. Fish & chips- this was my dish and I loved it, so fresh, not greasy, perfectly cooked. I substituted squash for the fries (I can't have potatoes ). I wish they offered sweet potato fries but the squash was acceptable. For dessert we split the apple galette , this was just ok. Could have been better, not sure why. Didn't seem super fresh, not enough caramel... Overall a great experience! Definitely will eat here again. Before that Google search, I didn't even know this restaurant existed inside the hotel, that's why I'm writing this review.

Yelp
we came for Saturday brunch and the place was fairly empty. Nice modern atmosphere and we were excited to dine in a carbo neutral hotel. Service was poor. our server was too busy setting tables to pay any attention to us. We both ordered the hamburgers which came with a gigantic port of fries. Everthing was under seasoned and we both found the burgers just okay. The sauce was bland, burger not juicy

Yelp
Our first time here and it's been open 2 years. A little late to the game but we were pleasantly surprised. Well made cocktails and a decent beer selection. We sat at the bar and our bartender Stacey made us feel at home. We will add this to our rotation of good New Haven restaurants. Cheers.

Mike U.

Yelp
A less than satisfactory experience. I had read good things about BLDG in "Yankee" magazine and CTBites but was quite shocked by the actual experience. Definitely not a destination restaurant.
google avatar

Kathleen S.

Yelp
We got the charcuterie board, cacio pepe pasta with spinach and the burger. I thought the charcuterie board had too much sweet stuff including the weird sweet cheese. But the major faux pas was the bucatini pasta. It was all broken up and the sauce was oil no cheese and some greasy spinach. You can't come to New Haven with poor Italian and broken bucatini. The burger was decent according to my son.

Yelp
Have driven by this Breuer/Pirelli Tire building my whole life. When I heard it became a hotel, had to stay. Tired after a long drive so decided to eat at BLDG in the lobby - glad we did. Minimalist renovated space, short, modern American/eco-organic-focused menu. House-pickled vegetables were superb. Bauhaus buns delicious. Korean fried chicken sandwich was crispy and flavorful. Steak frites was classic good. Interesting, trendy cocktail list. Service was attentive and friendly - made the entire experience 5 star.

Yelp
I went here for dinner at 6:30 on a Friday night and could not believe how empty it was. This restaurant has an incredibly creative menu developed around sustainably sourced and seasonal ingredients. The complimentary bread was some of the best I've ever had on its and it paired perfectly with the heads of roasted garlic that it was served with. I ordered the sustainabowl, which was absolutely delicious and generously-portioned. One person in my group ordered the Korean fried chicken sandwich and enjoyed it, but struggled to finish it because of how much food was included. The remaining two people in my party ordered the steak frites to varying degrees of medium doneness and they both found that they were on the rare side, so if you order red meat you may want to take extra care when specifying how you would like it cooked. In my opinion, this restaurant is currently one of New Haven's best kept secrets.

Jay Z.

Yelp
We enjoyed it very much. Staff was friendly and patient with our many questions. The burger was perfect and a request for extra crispy fries yielded perfection. My friend had the steak frites and she got the tallow fries - wow. We shared a side of Brussels sprouts that were delicious. I loved the decor and ambiance of this place which is inside the new Hotel Marcel, the gorgeous and eco friendly new hotel at the Pirelli building. (The next time I'm shopping at IKEA I'd consider skipping the Swedish meatballs and walk the 20 or so steps over to BLDG instead.) I'd definitely come here again.

Yelp
This restaurant was amazing. We were staying at the Marcel (also amazing) and came here for drinks one night and dinner the next. The Sustainabowl was incredible. It's a meal I'll come back to every time we're in New Haven. The wines on offer were also all very good. 10/10
