In New Haven, a Landmark Brutalist Building Becomes America’s First Fossil Fuel-Free Hotel | Vogue

"I appreciated how the in‑house restaurant leans into the property’s fossil fuel‑free ethos, using induction cooking for a clever menu featuring items like Haus egg sandwiches and cauliflower tacos." - Amy Thomas

Hotel Marcel in New Haven: America’s Eco-Conscious Brutalist Hotel

"Set inside the hotel, the in-house restaurant leans playful and sustainable, driven by local ingredients under Executive Chef Megan Gill (known from Hell’s Kitchen Season 20); on a busy Saturday morning it served a mix of hotel guests, locals, and airline crew. I tried the BLDG Breakfast with sweet potato biscuits and cinnamon honey butter, while my niece loved a Gooey Cinnamon Roll with bacon, and we both left satisfied — the menu and atmosphere feel casual, inventive, and tied to the hotel’s earth-first ethos."

I had breakfast at BLDG, located inside the Marcel Hotel, and it was such a pleasant experience. I ordered the BLDG breakfast plate, and everything came out hot, fresh, and flavorful. The potatoes were seasoned perfectly, the bacon was crisp and well-cooked, and the eggs were done just right. The toast was a little firm to chew, but it was nicely toasted and came with delicious whipped butter, which was a nice touch. The service stood out — friendly, attentive, and quick without feeling rushed. I also really appreciated that some of the food items were locally sourced, which the menu highlights. The atmosphere was calm and welcoming, making it a great spot to relax and enjoy a meal. Overall, both the food and the service were excellent. I’d definitely recommend BLDG for anyone looking for a quality breakfast in a quiet, comfortable setting.

There were four of us on a Saturday night and we got right in without reserving. The service was great and the food was very nicely presented and very tasty. They are part of "restaurant week" with a pre-fixed menu for those that like that offer. It was a great way to see the icon building and the comfy, stylish hotel lobby.

Better than expected hotel restaurant for breakfast. Only had breakfast so don't know about lunch/dinner. The drip coffee was surprisingly good! Service for breakfast was slow - this was a business trip and I was lucky that my colleague was running late. There is takeout at the bar. Skip ordering poached eggs - mine were definitely too hard - the waitress offered to have them remade but given how long they took that was unrealistic. I still like eggs even if they're not as ordered...

Worst food and drink in quite sometime! VERY small menu and what they offer isn’t worth the visit, save your time and visit another restaurant in New Haven - too many good options to waste your money here!! I’m not sure your limited menu or the fact that you’re getting ready for restaurant week has anything to do with the quality of the food and the drinks? The salad was dry over stuffed for the bowl not mixed and inedible the sweet vodka martini was straight vodka, and vermouth. The margarita tasted like lime water?

Stayed at the hotel Marcel to admire its architecture but was pleasantly surprised by the hotel restaurant. Service was great and food exceeded expectations. Spring onion galette comes highly recommended.

Expectations exceeded! Our expectations were low due to this being a "hotel restaurant". We were pleasantly surprised bordering shocked. For drinks, we had the Strawberry Fields and the Limon Skies with the latter being the stronger of the two. My wife being her typical weirdo self, ordered the Elote Dip, fresh bread with olive oil on the side. She RAVED about the Elote Dip (see photo) and the bread was truly fresh homemade bread, but would be much better paired with butter. The bread was outstanding though. I had a burger and fries. I eat a lot of burgers and was shocked at how good this was. I typically do not care for fries and find them boring and uninspired. The fries at BLDG were delicious and had a light seasoning that put them over the edge. Only slight negative was the waitstaff was a little out of sync in seating us and taking our order. Waitress was very sweet and personable though. This is a great place to eat if you value space. The tables were spaced out well so other table conversations do not permeate your space. Do not sleep on this place. We were staying at the Hilton and only ate here because we didn't feel like going out. We expected BLDG to just go through the motions and did not expect to enjoy the food so much. Do yourself a favor and give BLDG a try - you won't be disappointed and may even become a fan.

BLDG is situated within the lobby of Hotel Marcel, a fossil fuel free hotel, the first of it’s kind in the United States. Firstly, the service was excellent. We were greeted enthusiastically and had an energetic host and server which added to the whole experience in a supremely positive and enjoyable evening. The ambiance is also notable - mid-century modern in keeping with the Breuer vibes. The cocktails were imaginative. Our favorite was the Pirelli - a nod to the history of the building as a tire company - which was in a tire 🛞 shaped glass and made with activated charcoal. The other cocktails are similarly Bauhaus or Breuer inspired, which is a delight to architectural geeks like us. 💕 The food was good but not incredibly impressive. We would have loved more transparency on the sustainability of it’s sourcing on the menu. The chicken sandwich is our recommendation, but the pasta and salmon less so (though still delicious). While it is a bit out of the way from downtown New Haven, it is a fun experience to eat in such a historic hotel, and we recommend that more people try BLDG. We didn’t stay at the hotel, just came for the restaurant and the vibes!

I came here with my girlfriends for dinner, and so glad we picked BLDG! Our server was awesome and so nice, and the manager checked on us a couple times to make sure everything was going smoothly. The atmosphere is pleasant and chill, and the tables are spaced out nicely. Three of us ended up getting the burger and fries which were good, and our fourth ordered the winter squash dinner which she also enjoyed. The stars of the night though were our appetizer -- the onion garlic kale dip was AMAZING and I could have just eaten the whole thing myself -- And the chocolate peppermint pot de creme... we were almost too stuffed to get it, but decided to share it, and so glad we did. It was also nice that we were there for over two hours catching up, and never felt rushed to leave. Will definitely be coming back!
