"The first thing to strike you in this unpretentious bistro in the Lavapiés district, just a few steps from the Antón Martín market, is the close working relationship between the couple at the helm, namely Patricia in the dining room and British-born chef Aaron in the kitchen. The latter showcases his market-inspired cuisine with the occasional nod to his homeland (e.g. the “Hash Brown”, chorizo; salmon, ajoblanco, spicy radish, etc), on a concise menu that changes every three months. “Bolboreta” is the Galician word for “butterfly”, and is a reference to the chef’s grandmother, who loved these particular insects." - Michelin Inspector

An architect friend invited me to this restaurant. It might look low key to begin with but all semblance of normality vanishes the moment you cross the threshold. Patricia greets arrivals with disarming elegance and a remarkable knowledge of wine. The wine list is her domain and it is worth the trip on its own. But that is then taken to an altogether stratospheric plain when chef Aaron’s remarkable culinary skills arrive to complement the whole experience. This is a place not to be missed!

Bolboreta, butterfly in Galician language, is the personal project of a young but experienced couple that after a journey including relevant and starred restaurants in both, London and Madrid, decided to take the step forward and open this intimate and lovely place with no external investors. Short but tasty menu and a great service for a superb experience.

The meal and welcome was undoubtedly the highlight of our three day stay in Madrid. The restaurant is tucked away 200m or so off Calle Atocha, 8 to 10 minute walk from Placa Major. The menu was limited to 3 tasters 3 starters 3 mains and 3 posters. Each one was brilliantly presented and cooked. Particular mention for the crispy duck leg and the sticky toffee pudding, alongside a very light Galician white wine. A must for a future visit to Madrid
