"Bos Taurus has undergone a transformation under culinary director and Chef Hector Sanchez, who now leads the operation and has brought a Spanish flair to the restaurant. In that spirit, the popovers have been replaced with Spanish fry bread, presented with scissors to cut the baked and fried dough dipped in A5 wagyu fat. Himachi is served over a hazelnut ramp sauce with Tigre de leche, hard corn nuts, and Huitlacoche fungus—also called the Mexican truffle. The menu continues showcasing exquisite wagyu tastings, including the rare and coveted certified Kobe beef from Japan, alongside the luscious Japanese Miyazaki A5 marbled cuts diners eat with golden tweezers. The tortilla Espanola, is one of the few appetizers held over—a reimagined take on a Spanish tortilla with caramelized onion, egg yolk sabayon, and Yukon gold foam, presented in a glass. The restaurant also offers dry-aged steaks sourced from the finest ranches across the country. It’s great, you can tell everyone works hard to make a pleasant experience. I love an open kitchen, as chef I love seeing what’s happening. We only ate pre dinner menu and it was outta this world. Head chefs fry bread was the highlight of my date night! Compressing a Cesar salad?? Huh? AMAZING Bartender was knowledgeable and polite. I will be back.

Probably the best New York strip I’ve ever had, done to medium rare perfection. They present a tray of steak knives to choose from, all with stories. Oysters melt in your mouth, fabulous sides. Service very attentive, always kept my water glass full. It’s a small restaurant, with very little seating inside. Also, save up if you’re eating here.. very expensive but for a special occasion, it’s truly perfect.

AMAZING. I really don't need to say anything else other than go try it yourself. Complimentary glass of champange for my birthday, bread, steak, truffle fries, and a Margarita. Everything was the best, but the steak was the best I've ever had. Service was outstanding! We didn't have room for desert but were brought 2 chocolate balls covered in cocoa, and it was just enough for a little something sweet at the end. 10/10!

Had one of the best dining experiences TO DATE and best first wedding anniversary we could have hoped for by celebrating at Bos Taurus. Dylan was EXCEPTIONAL - highly recommend a seat at the bar with his service! The wagyu was the best steak we’ve ever had. (Did the Bos Tasting) Complimentary fry bread - wow Brussel sprouts - so flavorful. Banana Cream Pie dessert was amazing. Counting down the days till we get to dine here next. So grateful for the staff and service for the most memorable evening!

Great place for date night… good service and great food. And I like how cosy and warm the place is. Lotsa warm wood. We had the char siu as a starter - highly recommended! The side salad was fresh and acidic … perfect paring for the smoky fatty meat. Am not a wagyu fan so we went for the butcher’s cuts… and they are yums! The bavette and hangar steaks are just so tasty and nicely done - well charred outside and just so flavourful, tender yet chewy in their unique way. The bavette was spectacular. The patata bravas are well roasted on the outside and just potato-ey and soft inside. Divine! We brought our own wines and had fun chatting about wines with our server (whose name I forget). Perfect for a steak dinner. Thank you for having us. We really enjoyed Bos Taurus and would love to be back!

We celebrated a wedding anniversary here while on a trip to Bend. The wait staff and kitchen were very attentive and generous and really made our evening feel special. The small extra touches they added to the food and presentation were very tastefully done and the food was absolutely amazing. We also enjoyed wine, old fashioned and bubbles and all drinks were very good. You will not go wrong booked a table here for a special occasion or just a dinner to catch up with friends.

Wow! I haven’t experienced such an incredible tasting experience since Toro Bravo 2010! This might be the best restaurant in Bend. Seriously. Everything that we tried was phenomenal. Sarah was great..didn’t meet chef Ryan…but man, they’ve got something awesome going on in the kitchen!

It’s a pretty small spot with a little seating downstairs and a bar plus a small room on the second floor. The service was just so wonderful and the food was killer. They really went out of there was to make it special. I had the salad as well as a flank steak. My side was the papas Bravas. It was really special as there new head chef is from Spain so it was kinda his personal touch. Would highly recommend and I will go back next time I’m in town
