"Bos Taurus has undergone a transformation under culinary director and Chef Hector Sanchez, who now leads the operation and has brought a Spanish flair to the restaurant. In that spirit, the popovers have been replaced with Spanish fry bread, presented with scissors to cut the baked and fried dough dipped in A5 wagyu fat. Himachi is served over a hazelnut ramp sauce with Tigre de leche, hard corn nuts, and Huitlacoche fungus—also called the Mexican truffle. The menu continues showcasing exquisite wagyu tastings, including the rare and coveted certified Kobe beef from Japan, alongside the luscious Japanese Miyazaki A5 marbled cuts diners eat with golden tweezers.
