Brasserie Uno

"A bustling little restaurant of the sort you might expect to find in Berlin or New York, this place is a real gem. The tables are set close together and the atmosphere is pleasingly laid back. You can watch the two chefs in the open kitchen as they prepare a multi-course surprise menu. You need to allow plenty of time for this dining experience, but the 3.5hr spent here are absolutely worth your while: the dishes are made with regional ingredients, and great emphasis is placed on seasonality and provenance of produce. Dishes such as pike-perch on a bed of creamed sauerkraut with Swiss caviar, spicy turnip (raw and delicately pickled) and herbs are measured, creative and packed with bold flavours. Order the vegetarian or vegan set menu in advance. Please be sure to mention any dietary restrictions when booking. NB: there is no à la carte or children's menu." - Michelin Inspector

Tucked away in Zermatt, Brasserie Uno is a cozy little spot that offers a really special dining experience. The staff are super friendly, attentive, and know their stuff—they make you feel right at home from the moment you walk in. There’s just one food option: a carefully crafted six-course tasting menu. You can go with their wine pairing or pick your own bottle to go along with it. Every dish is a treat, made mostly with local ingredients that really highlight the flavors of the region. The wine list is great too, with plenty of choices that pair beautifully with the food. Since it’s a small and intimate space, just keep in mind that other tables can feel close—occasionally, some guests might get a bit loud. But honestly, just focus on your company, take your time, and enjoy the whole experience. It’s a lovely spot to unwind, catch up with friends, and savor great food and wine.

Super cozy casual fine dining. Often Michelin restaurants tend to be a bit stiff, not here. Everything is very casual but that does not take away from the quality of service or food. Excellent flavours all the way through. Inspired by Asian, South American and European flavours every dish has punch and is unique. Service is super friendly and professional. Great experience overall

Words can’t describe the experience I had today. The style of cooking. The assembly of the ingredients and the creativity of the taste is just outstanding. That restaurant, where all the people are not stressed. Laughing. Happy… is out of the world and deserves a place on the 50best. I mean that.

Brasserie Uno: A Culinary Journey Through the World, Rooted in Swiss Excellence Dining at Brasserie Uno in Zermatt is more than just a meal—it’s an adventurous culinary experience that transports you across the globe while staying deeply connected to the heart of Switzerland. This intimate and inviting brasserie takes pride in sourcing ingredients from local Swiss farmers and wineries, blending regional excellence with international inspiration to create an unforgettable dining experience. From the moment we stepped inside, we were greeted with warm smiles and genuine hospitality. The staff was not only welcoming but truly passionate about the experience they were about to share with us. Rather than simply serving dishes, they guided us on a carefully curated journey through flavors and textures, making each course feel like a chapter in a beautifully written travelogue. The menu at Brasserie Uno is a rotating masterpiece, changing with the seasons to reflect the freshest local ingredients. Every dish we tried was a work of art, crafted with precision and bursting with flavor. The starters set the tone, offering unexpected yet harmonious combinations that showcased the chef’s creative approach. One standout was a delicate yet boldly flavored dish that married Alpine ingredients with global influences, an emblem of the restaurant’s philosophy. The main courses continued the adventure, featuring locally sourced meats, fresh seafood, and vibrant vegetables, all cooked to perfection. The wine pairings, carefully selected from nearby Swiss vineyards, enhanced the experience, proving that the region’s wineries deserve just as much attention as its legendary slopes. Dessert was the perfect finale—a sweet yet balanced indulgence that left us savoring every last bite. Much like the courses before it, the final dish was thoughtfully prepared, proving that at Brasserie Uno, every detail matters. What makes Brasserie Uno truly exceptional is the combination of flawless execution, warm hospitality, and an adventurous spirit. It’s not just about dining; it’s about discovery. Food was very good, mostly hits, a few misses. Service was attentive, but quite long. We took 3 hours to finish their course, and we were quick to finish the dishes as it came out. They need to fix their acoustics, or their table spacing. I couldn't hear the server explain the food, all I could hear were the other diners.

Google
Impeccable service with detailed explanation on each dish and suggestions on the wine to pair with the dishes. The restaurant is all about sustainability and making sure the ingredients are from local produce.

The food was amazing, as always. We visit this restaurant every year, and it never disappoints. We felt such genuine warmth from both the staff and the food. I heard the restaurant faced a tough time over the summer due to the flood, but the quality hasn’t changed a bit—it’s still one of our favourites. I hope everyone gets to experience the heart and kindness behind their food.

I’m not normally want to write reviews but this time definitely inspired after such a lovely evening. When we arrived we were warmly settled in and the head chef presented us with a little amuse bouche…. The start of wild trip of the senses. With each course came a little presentation of how it came to be as did the accompanying regional wine …. All nicely paired to each dish. I loved the subtle combinations and inventiveness of each dish. Just too hard to pick a favourite. The place has a lovely authentic and relaxed atmosphere. Staff were quietly confident, friendly and attentive. It was lovely to see them enjoying their work with such confidence and passion. I guess if one’s looking for a hearty chunk of calorie to mindlessly wolf down after a hard days ski or hike then this probably isn’t for you. But if you’re up for having your senses fired up a little and perceptions opened by a team that evidently care then I suggest giving this a go. I left feeling full of goodness and inspiration and a glow that one gets from good people doing good stuff. Now I can’t wait to get home and practice a little of my own alchemy…. Thanks for a lovely evening guys!

Yelp
Their system made and an error and booked my party on the wrong date and the restaurant proceeded to charge me $772 for a no show. I booked this as a birthday dinner (I.e. a very distinct date) and shared the date/time, number to call, and instructions to change the reservation for my group (just in case). They did not call or text to confirm, simply sent an automated reminder email to justify the booking and charge (which was missed because we were on a ski holiday). The restaurant manager was extremely rude and made no attempt to accommodate. I tried to find a date in the future to reschedule (even asked openly what is the next available date was after being shot down when I provided suggested dates) and the restaurant manger simply said "there is no availability". Clearly I was not welcomed. No service recovery was offered, no accommodation for a future reservation was made, simply a firm message that I will be charged $772 for a dinner I never experienced because the meal was already prepared (this was a 3 hour tasting and they said all the food was already made and it would be thrown in the trash). This is not Michelin star service. They do not deserve their star after the rude, unaccommodating, and non-proactive experience they provided. Given how stern and quick to defend their cancellation policy and fees the restaurant manager was, I assume this establishment has encountered this situation before. The right thing to do was to recognize your guests' needs, offer to accommodate, and recover services. I walked away feeling robbed, unseen, and completely violated by a team that was more interested in taking my money vs. doing the right thing and providing Michelin star service. Where was the text or call to confirm the reservation? Where was your service mindset and empathy? Where was the anticipation of needs and the propensity to delight? I have lost faith in the Michelin star rating system after this. You have corrupted the entire institution by getting away with this.

Yelp
Absolute gem of a restaurant. We happened to be walking past when we saw the five-course sign outside. Our hotel also had this on the list of recommended restaurants, so we decided to stop by for dinner. Thank goodness we did!! Every single dish was spectacular. And it was more like 7 courses than 5. We stayed here from 7pm until 10:40 - it was a marvelous meal for our one night in Zermatt. The staff here are also so friendly amiable, really made us feel so welcome :) I'd recommend this as a must-eat to anyone who visits Zermatt!!! Wouldn't be surprised if they get a Michelin star in the future

Yelp
Overpriced. Not worth the money. Spent over $1,000 CHF for a price fix meal with wine paring for a party of four. We have traveled the world and have been to some amazing restaurants and this is NOT one of them. Portions were very small and the main dishes had no flavor. We had to add salt to give it some flavor and that shouldn't happen in a Michelin star restaurant. Very disappointed. Would not recommend! So many other amazing options at half the price in Zermatt.

Yelp
Phenomenal. Our entire family of 4 agreed that it was the best meal we've had in a long time, which includes meals from SF Bay Area, Boston, NYC and Switzerland. The chef's choice concept is very well done here - you tell them what you need to avoid (like allergies or severe dislikes) and they will make reasonable adjustments. For example, my son is allergic to fish so they made a similar preparation with a vegetable. If you are a really picky eater don't come here because you have to trust them... I didn't bother listing Beets as something I wanted to avoid (I generally dislike them), and yet the Beet dish we had was probably one of the best items of the evening. The staff is wonderful and the ambiance really IS on the slightly nicer side of casual. Anyone not dressed like a slob will feel perfectly at home.

Yelp
The meal was a fixed price surprise menu. We were shocked by the 150 CHF price per person. I ask about drinks and was told they have wine pairing. We never saw a menu, but decided to take a chance. The food and service were good although small portions. The big surprise came at the end when the bill came. Our 150 CHF dinner turned into over 250 CHF each. That left a bad taste in my mouth.

Yelp
I'm traveling here and searched on Yelp for restaurant, didn't find anything special. And then I found this place, the vegan soup with beautiful green attracted me, but it had only one review so I didn't give it high expectation, just a casual try. BUT!!! This is a really AMAZING place! It is a MUST TRY place! When I entered the restaurant, I was just so into it's descriptions it's so elegant, I just felt right! So I ordered the tasting menu, and it came with 12 courses eventually! I was so full, but every dish is so amazing that I just wanted to try them all and can't stop. This is one of my favorite restaurants in my lifetime. Give it a try and you won't be disappointed!!!!!!!!

Yelp
Unfortunately I do not agree with the three raving reviews from the past. The portion size of 4-courses was really tiny. I would've been ok if they were top notch even if they were rationed. Sadly each course was mediocre. The flavors didn't quite jive and it felt like a chef in training. The main course was tiny two pieces of beef. When I say tiny, I mean two one bite sizes. And the meat had a sinew in it and I had to yank it out of my mouth. I find this absolutely unacceptable. For such 2x3x1 cm size of portion, I would expect top quality meat at least. The dessert was even worse and we couldn't even eat them. Overall it was the most overpriced dinner I paid in recent years.

Yelp
We arrived to Zermatt and to our wonderful surprise discovered a jewel!!! Andreas and his team are not only fabulous hosts creating fantastic memories but the food was simply delicious, and outstanding. We are flexitarians, however mostly enjoy vegan food. The food choices are selective and special. The chef experiments with many diverse flavors and food items from different cultural backgrounds. We highly recommend that when you arrive to the Zermatt area, you quickly make a reservation at Brasserie Uno, since seating is limited. Don't miss the experience!!!

Yelp
Excellent place. I would eat here every night if I could. They have a very creative menu to suit vegans, vegetarians and meat eaters. I had a hard timing choosing. I settled on the kohlrabi carpaccio with chanterelles and blueberries for an appetizer. Absolutely delicious. I wish I knew how to prepare kohlrabi like this. My partner had the burrata and tomato salad, which he didn't want to share because it was so good. For an entree I had the vegan "meatballs" served with mashed potatoes topped with lingon berries and some kind of light soy-like gravy. It was wonderful and huge portion, but I ate the whole thing because I didn't want it to go to waste. My partner had the orecchiette of the day, which was with mushrooms and a light sauce. Also delicious. I wish I could import this place back home. Highly recommend trying it.
