Brava Pizza: Great concept. Denver has desperately needed a street food scene for a long while, and these guys are the right players at the right time. Super friendly, knowledgeable guys manning the line. We had a great conversation about the local provenance of all the ingredients. Nice to know they are concerned about this aspect of the experience.
The pizza: I had the Shroom pizza. Just about perfect. Took about 3-4 minutes in the oven, which means that thing is cranking at about 900 degrees. It came out crispy, cracked & blistered, and yes, a little bit sooty. That's the way it's supposed to be.
My favorite pizza in Denver has always been at Osteria Marco, but this pizza was better by a factor of three. Damn near perfect. As I was watching it be assembled, I thought the toppings might be a bit skimpy, but once I began to eat, I saw that they were well thought out, and well apportioned. Any more or any less of any ingredient would have upset the perfect balance on the plate. And if you opt to forgo the truffle oil at the end, don't bother. It's integral, and serves to tie the entire experience together. Without it you'd have a rather dry & discordant collection of nice ingredients. With the oil drizzled on top, all the ingredients unite into a coherent symphony. Without the drizzle, you have Lennon, McCartney, Harrison, and Starr. With the oil, suddenly you have the Beatles.
