"Not everyone loves fermented liquid enough to name a whole bar after it, but the people behind this place do. They use a housemade mix of brine made from fermenting different ingredients, like olives and watermelon skin. And judging from their classic cocktails, they’re very proud of that brine. Negroni? Brine. Daiquiri? Brine. Amaretto sour? Yup, that one’s got brine, too. They also have a wide range of non-briney cocktails, as well as some Japanese bar bites like a smoked saba and roasted miso-marinated mackerel. The bar space itself takes on a minimalist aesthetic, with black and white colors throughout, a small bonsai tree perched on a shelf above the spirits, and a counter made of white ceramic tiles placed in grids. The concept of the bar is really solid. Every dish fits the theme perfectly. Their signature cocktails usually bring in some umami—like a light saltiness, dashi, or pickled stuff. It’s pretty unique and tastes great. The side dishes are also well done, though the Spanish mackerel with miso sauce was a bit overcooked. The bartender’s super passionate, fun to chat with, and the overall vibe is really chill.

Unique cocktail bar with many delightful surprise taste. We feel that there is passion in this bar for the drinks they serve, from walking in to seeing the cocktail created in front of our eyes. There's a theme for Umami flavor in the cocktail that works really well. Some how, they can pack in so much flavor into each drink and side dishes. I recommend the cocktail with Dashi and soy sauce, pair with the tomato dish. so good!

Dropped by BRINE in Chiang Mai — a cozy little cocktail bar with a super interesting concept. The whole menu plays around with the idea of fermentation, just like the name suggests. I tried the Mari Gold Martini, made with real marigold leaves. It had this unique floral aroma and a soft, mellow taste — nothing too sweet. The vibe in the bar was super friendly and relaxed, felt more like chatting with a friend who really knows their cocktails. Definitely worth a visit if you’re in town.
