Allergen-free bakery offering cinnamon rolls, cupcakes, biscuits

"At our Eater Under Wraps market, attendees sampled delicious bites from this bakery as part of the shoppable winter house." - Jillian Beck

"A wonderland of classic pastries — mostly steeped in American traditions — that happen to be gluten-free, soy-free, nut-free, sesame-free, and vegan, this bakery from pastry genius Melissa Weller, in partnership with Fish Cheeks co-owners Jenn Saesue and Chat Suansilphong (Bub, who has food sensitivities), opened in September at the border of Noho and Soho. It’s legit magical that the Big Cinnamon Roll ($9.50) is gluten-free, because it’s so squishy and pillowy and still holds its shape as you take a huge bite into it; it’s perhaps one of the best cinnamon rolls I’ve had in a long time. The recent savory Danish ($8.50) is heaped with creamy mushrooms, making it taste like it belongs on all holiday dinner tables; again, it’s a surprise this is vegan and gluten-free — the creaminess of the mushrooms paired with the tight layers of the pastry is astonishing. The Devil’s Food cupcake ($6) looks and tastes like the dictionary definition of a chocolate cupcake — it’s moist, it’s chocolatey, and the frosting made with Violife cream cheese is better than most frostings I’ve had. While the baked goods are vegan themselves, the bakery isn’t fully vegan because there are milk options for coffee and espresso drinks. Best for gluten-free people, those who have gluten-free friends and family, or who just want a great pastry — everyone will be SO pleased. Insider tip: the shop on the slim, triangle-shaped block has two entrances — the main is on Lafayette Street (that’s where the line to order is) and the back at Mulberry Street (that’s where there are some outdoor benches)." - Nadia Chaudhury

"James Beard–nominated baker Melissa Weller and the Fish Cheeks team debut a pint-sized bakery turning out allergen-free takes on nostalgic favorites—think square biscuits, devil’s food chocolate cupcakes, pumpkin pie, and an everything bagel topped with golden beet cured in pastrami spices—anchored by a showpiece “Big Cinnamon Roll” made with laminated dough, plus Devoción coffee and treats to go across just 12 seats." - Nadia Chaudhury

"Cheerful in butter yellow, this postage-sized NoHo bakery adds about a dozen seats (half inside, half outside) and turns out allergen-free treats — no dairy, soy, gluten, nuts, or eggs — with Devoción coffee to go. The standout is “A Big Cinnamon Roll,” a laminated-dough spiral with crisp edges, a tender, gooey interior, a cinnamon-sugar filling, and a vegan cream cheese frosting with a pleasing sweet tang. An opening roster of roughly 20 items leans into American nostalgia: deeply chocolatey devil’s food cupcakes, square biscuits with flaky layers (using a house gluten-free pastry flour), an everything bagel layered with golden beet cured in pastrami spices, plus PB&J, pumpkin pie, and an “Elvis goes banana” cupcake with roasted banana cake and sunflower-seed frosting that can confound allergy-wary eaters with how real it tastes. Inspired by partner Jenn Saesue’s “Bub” and his many food sensitivities, Melissa Weller spent two years on lab-like R&D — reading Science papers, documenting meticulously, and engineering bespoke flour blends to avoid the common gluten-free aftertaste — and, for now, this is the only bakery in the city committed entirely to allergen-free goods. Seasonal touches and possible holiday pies are coming; for now, it’s open Wednesday–Sunday, 7 a.m.–7 p.m. (pastries from 8 a.m.)." - Devra Ferst

"An anticipated allergen-free bakery from acclaimed baker Melissa Weller with partners Jenn Saesue and Chat Suansilphong, set to open in late September, previewing its baked goods made without dairy, gluten, soy, eggs, nuts, etc., with a cute little yellow cart pop-up. The preview takes place on Thursday, September 11, and Friday, September 12, starting at 12:30 p.m. at the Noho location of Fish Cheeks." - Nadia Chaudhury
