When you're in Minneapolis and looking for something a bit different to quench your thirst, Buch Fermentary is a spot worth checking out. They specialize in hard kombucha and seltzers, which is a nice departure from the usual brewery scene. What really sets them apart is their commitment to quality ingredients—everything is organic, gluten-free, and they even add electrolytes and Vitamin C, so you might just feel a little better the next morning. It's that kind of thoughtful detail that makes a difference. The taproom itself, located on Quincy Street NE, has a welcoming vibe. It's a great place to hang out, especially when the weather is nice, as they've got outdoor seating. Plus, they're dog-friendly, which is always a bonus in my book. While the focus is on the beverages, it's good to know they allow outside food, so you can easily make a full afternoon or evening of it. They also do growler fills and sell cans to-go, so you can bring a bit of Buch home with you. If you're into fermented drinks or just curious to try something new and local, Buch Fermentary offers a refreshing experience. It's a testament to Minneapolis's vibrant and innovative craft beverage scene.

This place is so underrated and a hidden gem! The drinks are palatable, delicious, light and refreshing. I love being able to have drinks that don’t make me feel super full like beer does. The owner was so kind. I could only pick 3 flavors for the $12 flight and was between two flavors for my last pick. He generously offered me the 4th flavor as well! He also came by and gifted me a 4-pack for my birthday. It was the random act of kindness I didn’t expect but appreciated! They also have cool local art events. I’m excited to return to this BŪCH again for the hospitality, drinks and events!

Huge IPA guy here, this place was THE place, and only place for a (not) beer on a stupid hot day, or any day you’re not feeling beer. I only JUST discovered this place 6months ago, EVERYONE was so COOL, and accommodating to my new dog, bringing water bowls to the table, treats and everything! This place is where I KNEW I was ready for another dog (after my dog tragically passing) after visiting with another (I think trivia host’s) dog. The only thing I regret about this place, is not discovering this place sooner! Right in time to close permanently…. I wonder how many others are in the same boat..Yikes! A SERIOUS loss for the brewery/still scene! Serious loss for the target market! This really sucks to loose you all! Good vibes to you all and future endeavors! Take care all! MUCH LOVE!

BŪCH is the BEST. They have amazing seltzers and cocktails without the added sugar so whether you're a health-conscious sipper or a flavor-craver, you'll definitely want to stop in!! I had tried a can of kombucha once before and was nooottt a fan but their kombucha drinks are nothing like the tart, weirdly fermented tasting cans (if that's what you're worried about). The mojitos and sangrias taste just like they do with rum or wine but with way less sugar and the atmosphere is warm and inviting compared to a cold feeling brewery that smells like hot hops. Check it out!!

Lovely staff and nice space, but the flight of N/A kombucha that I tried just didn't hit it for me. I'm used to a more tangy, fizzy drink. The ones I tried here didn't have strong enough flavor or carbonation for my taste, they seemed more like somewhat watery soda. Trivia was fun.

Our new favorite place to relax on Sunday evenings with a drink and a pizza, and the pup can come with! The bartender was great, and answered my many questions about their products.The kombucha drinks are not as strong as kombucha's that I've had before, they're almost more like a soda without the sugar.
