Worth the visit to this Michelin star restaurant. If you are on your way to north or south of France and you want to cut your journey , highly recommended dining restaurant which takes place at Clos Vauban Relais & Château in Langres . Great service a excellent dishes

My dinner at Bulle d'Osier last night was devine. I have eaten at several Michelin restaurants and this experience did not disappoint. A true reflection of what the Michelin Guide was originally created for (finding restaurants worth driving out of the way for!). l It is the first one where I have truly adored every course. The setting is exceptional and you can start your evening outside in the garden, which on a beautiful summers night is unmissable. Once you move into the dining room it is very intimate with only 5 tables. I had a beautiful view out the window and could watch the sky turn from lavender to black and then see the moon rise. Each course was beautifuly presented and delicious. I loved how much was sourced locally, including right from the garden with staff harvesting elements of the dishes during the evening. My favorite dishes where the fish with an absolutely exceptional buttery sauce and the duck which was by far the best duck I've eaten, incredibly tender and full of flavour. I had the matched wines which was definitely a great choice. Very thought out and matched perfectly with each dish. I enjoyed varieties I'd never normally reach for. The standouts being an aged Pinot Gris from Alsace and a Syrah blend from Chateauneuf du Pape. The service was so friendly and warm. My French is unfortunately very limited but everything was explained beautifuly to me in English. Very attentive staff and as a solo dinner I was made to feel comfortable and welcome. I felt bad I didn't get to thank and farewell each of them at the end of the night which you know is a good sign!

The newly opened fine dining establishment, where young chef Valentin blends innovation with seasonal ingredients to create a truly unforgettable dining experience, is a true masterclass in food and wine pairing. From the moment we arrived, it was clear this was no ordinary dining affair. The experience was multisensory from the very start, as we entered through a dimly lit, almost mysterious entrance infused with a smoky, woodsy aroma that instantly set the tone for an evening of sophistication. This was followed by a warm welcome of mushroom broth, served while we were treated to a view of the kitchen, where the chefs worked their magic. The sight, sounds, and scents combined to create an immersive dining experience. Additionally, the restaurant itself honors the local craft, where the use of wicker by the local artisans creates a rustic yet luxurious ambiance. The menu was packed with innovative dishes rooted in tradition. Special mention to the shallot soup, Valentin’s homage to the classic French onion soup. It packed an incredible depth of flavor while maintaining a delicate balance. Another standout was the quince dessert, which transported me back to my childhood with its nostalgic flavors—proof of the chef’s ability to evoke emotion through his creation. Everything was served smoothly, and it was beyond delicious. Additionally, It was nice to see the use of fresh herbs and produce from their own garden, adding another layer of personality and freshness to the plates. The wine pairings were equally exceptional, featuring some truly unique selections. Each wine was thoughtfully explained by Anais, making the experience even more special. Chef Valentin’s restaurant isn’t just a meal—it’s an experience. The unmatched quality of the food, the thoughtful innovation behind each dish, and the seamless integration of seasonal products make this restaurant a must-visit for any lover of fine dining. Langres is incredibly fortunate to have such a culinary visionary, and we feel even more fortunate to have experienced his creation at its birth. We can’t wait to return to see what Chef Valentin creates next. Highly recommended!

An amazing experience from the moment we passed under the bamboo tunnel to the willow-lined alcoved dining room, where we enjoyed a delicious 6-course gastronomic meal of locally sourced produce, using locally sourced cutlery, plates and other dishes, to our coffee and mignardises in the rampart gardens, overlooking the rolling countryside. I highly recommend this restaurant. It merits its Michelin star and many more awards. The town of Langres and the views from its ramparts are worth a visit!

An intimate experience with innovative dishes. Chef Valentin and Sommelière Anaïs tell their story elegantly through dishes that evoke the gardens of Clos Vauban and the forests of Haute Marne. A truly revolutionary experience in gastronomy. Will be back.

Lovely experience, did not disappoint

L'expérience est totalement immersive, on a décidé de faire notre premier étoilé à la bulle d'osier et on est pas déçu. Que ça soit sur le plan culinaire, le service ou l'accompagnement du sommelier tout est fait pour que l'on se fasse transporter. Je ne peux que conseiller cet établissement qui vaut amplement le détour. Merci pour ce voyage.

Une expérience hors du temps. Dîner à la table du chef du Clos Vauban – La Bulle d’Osier, c’est plonger dans une véritable cuisine d’auteur, sincère et inspirée. Chaque plat exprime une émotion, une vision, une signature. Une expérience rare, portée par la passion, la précision et l’élégance. Un grand merci au chef et à son équipe pour ce moment inoubliable. Les conseils d’Anais pour l’accord mets/vins sont précieux. Nous y retournerons.
