How to Navigate Thomas Keller’s Cheffy Summer Pop-Up, Burgers & Half Bottles | Eater SF

"A limited-run Thomas Keller pop-up in Yountville, set in the former La Calenda space, delivers a high-low summer thrill: wagyu burgers and other favorites at almost startling prices (think $14 burgers) that have turned the sidewalk into a waiting room and the patios into a block party. Lines curl down the block before opening, but the system is smooth—order at the counter, drop your phone number, find a seat in the dining room or the shaded patios, and wait for the text to pick up. Music drifts across both patios while a cherry-red 1965 Volkswagen “Brew Bus” pours local beers, including Pliny the Elder; half-bottles and glasses of wine keep things festive, too. The menu sticks to greatest hits—wagyu burgers, a spicy buttermilk fried chicken sandwich, golden crinkle-cut fries, and thick, old-school milkshakes—with room for a splurge like a buttery lobster roll (with a caviar supplement) and a decadent ice cream sandwich built on a Bouchon Bakery cookie; families get a kid’s meal and easy combo deals. Aim for the sweet spot around 2 p.m. to dodge the peak lunch crush but beat sell-outs, go straight for the spicy buttermilk fried chicken sandwich, sip a cold Pliny from the vintage red Brew Bus while you wait, and finish with that refined ice cream sandwich. Open noon to 8 p.m. Wednesday through Sunday through Halloween (Sunday hours may change), this pop-up has locals and tourists treating a burger run like a once-in-a-season event." - Vincent Vitale

It was just okay, the cheese was extremely overpowering in the cheeseburger and the fries were just alright. The fries definitely tasted like they were only fried once heavily and not double fried to not give it that overly crispy/soggy texture that only happens with frying fresh fries once. The lobster roll felt like a complete rip off since it was $29 for a tiny roll, I’ll drive the extra hour to Bodega Bay for a roll. And for burgers, I’d rather go to Gotts 🤷🏻‍♂️ The only saving grace was the Chicken Sandwich, light breading, crisp, and the slaw was great.

Glad we tried it, but this is a one and done for us. We spent $90 on 1 cheeseburger combo meal w/beer upgrade, 1 spicy chicken sandwich, 2 ice cream sandwiches and 2 HH beers. Wait on a Friday afternoon (Friday before Labor day) around 4:30 was less than 5 minutes. Luckily we snagged an open table by the beer van as soon as it became available. Unfortunately, the food wasn't served piping hot, clearly it had been prepared ahead and sitting under heat lamps. Burger buns were dry and didn't taste like much. The best thing we ate was the ice cream sandwiches and Pliny beer! 😂

Great service, friendly staff. I ordered the wagyu cheeseburger, fries and a strawberry milkshake. Food came out quickly. Order was inaccurate. I ordered the cheeseburger without onions since I heavily dislike their flavor. Burger came out with onions. Fries were okay. Finally the milkshake wasn't that good. Tasted a little powdery at times. I definitely except a way better experience for this being a Thomas Keller restaurant.

I think this is a great pop up! Who doesn’t love Burgers AND from Thomas Keller. Win- win. His Chicken Sandwich is always fantastic and the milk shakes were delicious. I already want to go back.

Burgers served medium or well done only. I ordered it medium and it was well done. No juice whatsoever, completely flavorless. Bun is not good. Cheese in the grilled cheese barely filled the bread. Fries were Ok. Shake was similar to McDonalds. Ice Cream sandwich was good. I am very surprised that Chef Keller attaches his name to this project. I ate at The French Laundry this past Sunday. It was one of the best meals of my life. Such a contrast. A great burger is not hard to make.

Napa local and foodie so had to give it a try but wouldn’t recommend…Honestly a 4-5/10 and not worth the drive / hype. Over hyped pop up bc of Thomas Kellers name, the burger was decent but nothing special, I’d say Gott’s is way better. The line moves quick bc all the burgers are pre fired. Fires are frozen crinkle cut, not good or anything special. Wouldn’t go back here or make the drive for it tbh but im a foodie so naturally had to try.

Our reservation was for Ad Hoc, but the "daily" menu just didn't do it for me, I was looking for lobster. The pop up burger had lobster for me, burger for hubby! Corkage for Ad Hoc $55, pop up, if you believe it, $0!!! And Jason, this wonderful character went our of his way to find the right MLB game. Seriously, what a great experience for a couple drunk hoagies!

Burger and fries were great, but the fried chicken sandwich was the real star of the meal! Definitely worth getting both. The wait was around the corner but moved quickly, about 30 minutes for us, and the food came out fast once ordered. Totally worth the wait!
