"Chef Cory Harwell and the team behind Carson Kitchen will debut their new steakhouse, Butcher and Thief, at the Bend on December 15. The restaurant cooks steaks using a three-step process — sous vide, sear, and grill — and offers both traditional cuts of beef, like rib-eye, and butcher’s selections, like zabuton and bavette.
