"Chef Cory Harwell and the team behind Carson Kitchen will debut their new steakhouse, Butcher and Thief, at the Bend on December 15. The restaurant cooks steaks using a three-step process — sous vide, sear, and grill — and offers both traditional cuts of beef, like rib-eye, and butcher’s selections, like zabuton and bavette. Steelhead trout, branzino, and sausage rigatoni are among some other entree options, while starters include peanut butter bacon with jalapeño cucumber jelly and Chicago clam chowder, a unique marriage of New England and Manhattan styles." - Ryan Slattery
