Been coming here for years, I am always pleased! You are greeted by nice folks upon coming in and I tend to enjoy my meal at the bar. Always a selection of local beers on tap, as well as many other spirits. The ambiance of the place is some where between your favorite pub and a local farm to table eatery. They have burgers, steak, pork, lamb, and more. I love the fries and sauce served with it. My wife is a fan of their charcuterie board, and it is quite good. Nice spot for lunch, dinner, or a quick drink. They also do a lot of work with the veteran community and that always gets a gold star from me.

Interesting menu of meat-inspired dishes - and yes, the Bison Ball is what you're afraid it is. Single-serving appetizers are cheap enough to get a couple. The steaks are expensive, but the quality of the meat and the preparation make it worth it.

This was one of many stops we made on a food tour. We tried the pig head appetizer, very tasty and delicious. We got to meet the chef/owner and he talked to us about his business and how he uses every part of the animal in preparing his creations. I would definitely love to come back here when I return to Colorado.

Hands down the best meal I have had in the downtown Denver area! The Marrow butter with smoked salt and herbs is outstanding. I ordered the Pork Chop which was juicy and cooked perfectly. It had more flavor than I could imagine. The real surprise eas the dessert. It was a play on a Charcuterie board but with chocolate, caramel, apples, plums, candied bacon, cheese, a brownie, and a fog preserve all served with some spiced waffer cookies. It was delicious!

Woo it was very amazing steak and service . The waiter was very friendly and provide great service .. I enjoyed this place . What a pity the steak of 8 oz was very small for me so I need to ordered sausage too .

Butchers Bistro provides an amazing experience from from the door to the final fork. With some of the best local meats and dishes prepared by artisan and master chef Russell Klase and exquisitely presented by an expert server true to his trade craft, Evan, patrons lucky enough to find this gem will not leave disappointed. Even the bar staff is true to form with their hand crafted cocktails. Couple all of this with a unique menu of flavor, superb choices of meat, & many amazing dishes, and this place could easily be a contender for one of the best restaurants in Denver.

The Indecisive is a great dish to try some unusual bites! The boneless Ribeye was great! The Delmonico was not. Would not recommend that one!

Excellent food. Interesting that there's limited selections (only one beef option when I went) but prepared well. Lamb was possibly the best I've had. The price point does reflect the quality.
