Ca’ Apollonio is a true masterpiece of sustainable luxury. The estate is 100% energy efficient and has received prestigious awards for its innovative and responsible use of natural resources. Every element of its construction was sourced from local factories within a 30-kilometer radius, reflecting a profound commitment to both community and environment. Even the bath amenities are crafted from local flowers and fragrances, offering a subtle yet meaningful connection to the surrounding land. The estate’s olive groves and vineyards further elevate the experience, producing products of remarkable quality and authenticity. The wine collection is nothing short of extraordinary—unparalleled in both depth and variety, and among the most impressive I have ever encountered. Their vision extends even further, with plans for private-label production, an opportunity I am very seriously considering for my own business given the exceptional standards they uphold. The culinary experience is equally outstanding. Every dish was memorable, and I can confidently say the pasta I enjoyed here was the finest of my life—an expression of both tradition and excellence. The spa completes the experience with understated sophistication: modern, tranquil, and exquisitely designed to restore both body and mind. Above all, my deepest appreciation goes to Massimo Vallotto, the owner, whose gracious presence, passion, and attention to detail define the spirit of Ca’ Apollonio. His hospitality transforms a remarkable property into an unforgettable experience. This place is exceptional. Modern, minimalist and distinguished. The food is great and the wine list perfect. Spa is world class and the staff are wonderful. The property as a whole was beautifully designed.

An incredible getaway and a truly immersive adventure! A quick train ride from Venice and we arrived to this breath-taking boutique hotel. We were greeted by the gorgeous view of the property’s vineyard. Then, escorted by the friendly staff to the star of the event, their spectacular restaurant where we enjoyed course after course of unbelievable food. The meat tartare was incredibly fresh, seemingly melting in our mouths. The staff was very knowledgeable, guiding us through wine pairings and food recommendations. We talked and ate and drank like nothing we’ve ever experienced before. A highly recommended place to enjoy and an excellent choice to stay at! I cannot wait until the hotel opens to enjoy all of the amenities. We will be back again for more incredible experiences.

Wow, what an experience. We went for a birthday lunch and had an incredible time. We got to meet the pastry chef who spoiled us with some sweet treats. The grounds of the hotel are divine and I can't wait for their hotel to open soon as we will definitely be coming back. The steak tartare was to die for and the wine selection makes it a destination meal.

If I could award six stars, I certainly would! This place is nothing short of amazing, from the exquisite food to the prime location, down to the impeccable service. The attention to detail is truly remarkable, making this establishment a true gem. You absolutely must visit and indulge in their outstanding cuisine and wines.

I know it's not the photo of the dish you were expecting but it's My way to attest to you the friendliness and helpfulness of the staff. They kindly sent me the diary that I had forgotten there. clearly the food and the atmosphere were also perfect, I didn't feel like I was having a business lunch there. @orsacchini

Amazing food & wine, 1 point less just because our table was a bit too close to our neighbors & we had less privacy (the other tables were better placed)

Ristorante molto piacevole, con un’atmosfera accogliente e un servizio davvero impeccabile. La carta dei vini è ottima e offre una vasta scelta. Gli antipasti, il tagliolino al tartufo così come il dolce erano eccellenti. I maccheroncini al ragù di cortile invece hanno bisogno di un’attenzione maggiore nella mantecatura e nell’equilibrio dei sapori: il condimento risultava poco amalgamato e il gusto non pienamente valorizzato. Con qualche piccolo accorgimento, il piatto potrebbe davvero esprimere tutto il suo potenziale,ma per il resto la qualità è alta. Prezzo un po’ elevato, ma coerente con la location e l’esperienza complessiva.
