Here's my take on Mexican restaurants. Most of them are OK but very few are REALLY GOOD!
Folks, Cactus Flower Restaurant is REALLY GOOD!
Lemme' tell you. We weren't off to a great start when it took quite a while be be seated and there were many open tables. Once we sat down it still took a cool minute for anyone to come to the table. So for me to give five super stars say how good the food has to be to make up for the slow service.
Chips and salsa are a telling sign on how good the food is and they more than passed the test with light chips and salsa so good I wanted to chug a gallon of it!
Oh my gosh friends. I was blown away by how good the food was. I had the combo #7. Pork and guacamole, chicken and cream cheese enchilada, a fried flour shelled chicken taco, with rice and beans. I went for the mild medium green chili option and it had quite a kick! Next time, I'll stick to mild. Still, it didn't take away from how awesome it was. The taco was seriously the best taco I've ever had in my life! No kidding! I don't know how I'm going to be able to finish this review because I'm getting so hungry writing it.
For dessert, I had a sopapilla. Sopapillas are one thing only a few restaurants can get just right. They should be light, airy, and puffy. These were kind of a combo of fry bread and puffy. Kinda' heavy and not too puffy, but the flavor was fantastic. They're on the pricy side at about $4.25 for one. It's good-sized, so you could spit it but you won't want to because it's so good!
I believe it's a family-owned and operated restaurant, so that's super cool.
Too bad I live in LA. If I lived in Pueblo I would be there all the time. Bookmark this place if you're ever passing through Pueblo. It's right of I-25 so you can have one of the best meals of your life and continue on your happy journey!
