"Calliope’s serves Cajun-Creole classics, and sandwiches are the priority at their Third Ward food truck. The best one is the “Surf And Turf” po’boy, which combines thin strips of roast beef with breaded shrimp that maintains a fresh-out-of-the-fryer crispiness. Between the delicate meat and the slight crunch from the shrimp, it's a balanced sando. And though dishes like garlic-laden seafood boils with turkey necks are also on the menu, they’re not as exciting as the 12-inch po’boys.
