Seattle Restaurant Openings to Know for October 2025 | Eater Seattle

"Specializing in Uzbek plov, the national dish of Uzbekistan—a one-pot rice-based affair with slow-cooked lamb and vegetables—this Wallingford newcomer zeros in on a singular comfort." - Harry Cheadle

Google
Wonderful, authentic food, and the staff is really friendly. I would recommend stopping by this restaurant for a hot bowl of lagman.

Google
This is a unique place for Seattle. It is a true authentic Central Asian food. The meat quality here is superb, the broth is great and the rice is melting in my mouth. Portions are big. Drop by here if you want to try something new. The staff is professional and polite. I will be coming over here on a regular basis.

Google
Finally we have a good central Asian cuisine spot in Seattle! It's very authentic and delicious. My recommendations to all who feels homesick or is craving for plov or lagman. The place itself is super simple, but clean and the people working there are friendly and nice. We'll definitely come back!

We really liked this place! The food is delicious, fresh, and good. The portions are large. I highly recommend it!

Google
Honest rate. I ate lagman 2 times and they had 2 different tastes. Second time was more delicious. I didn’t like samsa cause it was cold inside. We also came with group friends and some of food was overcooked but still give 4 star ⭐️

Google
SUPER tasty food, 100% authentic Central Asian and Uzbek cuisine, tastes just like in my childhood! Highly recommend.

Enjoyed a sampling of Caravan’s menu today. Everything was delicious and well prepared. I especially enjoyed the Silk Road dumplings, Stir Fried Boso Lagman (especially with the spicy fried beef from the Achik Gusht added to a bite) and the Suzma (very generous portion). Look forward to enjoying delicious Uzbek food from Caravan again!

Yelp
I had stopped in twice before back in March 2021 when it was Fitchi House. Fitchi House has transitioned into Caravan Restaurant in Seattle's Wallingford neighborhood, proximate to I-5. The Homie and I had just checked out happy hour at a nearby pub and decided to check out Caravan Restaurant's Central Asian unique menu items (10/3/25). Central Asian cuisine is from Uzbekistan, Azerbaijan, Kazakhstan, Kyrgyzstan, Tajikistan, and Turkmenistan. We chose to dine onsite, there's limited seating, but noted that takeout was a very popular option. Walking in - the aromatic scents from the kitchen was enticing. The Homie ordered Oromo-Honim that was garnished with cucumber and tomato slices. The flavor was further elevated with added garlic vinegar condiment found at our table. This was a hearty serving of steamed meat roll or Kyrgyzstan dumplings. He also enjoyed a refreshing beverage, Salaam Cola. I had an order of Pelmeni - Chuchvara which was served with a side of sour cream. Amazing flavorful soup, especially dill and carroway, with generous tender pelmeni. This is a traditional Uzbek soup. I look forward to exploring the menu further. Definitely recommended!

Yelp
Go here before it's on every "best of Seattle" list. There might still be a short line or a wait, but it'll be better than when everyone finds out about this gem. The food is nothing short of spectacular. Deep, layered, distinct flavors in every dish. Everything is made from scratch. We had to wait on the samsa and lagman because they had run out at 7:30 PM and were in the process of getting new batches ready. We also had the oromo-hanim, plov, and achik gusht. All of it was fantastic and worth the wait. It's small, probably ideal for takeout only, but if you're willing to cram into one of the few tables they do have, have your meal there. The warmth provided by Hatam Beig (I might be butchering the Cyrillic spelling) is an incredible host and will make you feel welcome and at home in the cozy environs.

Yelp
Let's get one thing straight, Caravan isn't the flashiest spot in Seattle. It's not competing with the city's best places in terms of ambience or food. But this restaurant holds a gem-like status for one simple reason: It's the only Central Asian restaurant in Seattle. A exclusive culinary genre you will fall in love. And trust me, they're not just filling a gap. They're doing it perfectly. Whether you're already a Central Asian food lover or just someone who thrives on culinary adventures, Caravan should be on your list. Rarely do I walk into a restaurant and fall in love with every single dish. This was one of those rare occasions. What I Ordered & Loved: Samsa -- Think of this as the Central Asian cousin of the samosa, but bigger, flakier, and meatier. House-made crispy pastry stuffed with minced beef and onions, baked till golden brown. It's hands down the best Samsa I've had in the U.S. Rating: 5/5 Uzbek Dumplings (Manti) -- It's practically a crime to leave a Central Asian restaurant without trying manti -- and Caravan serves some of the best I've had. These steamed dumplings are made just right: thin, delicate dough wrapped around finely chopped seasoned meat. Juicy, tender, and bursting with flavor. One bite and--boom--flavor explosion. Rating: 4.5/5 Uzbek Plov -- The crown jewel of Uzbek cuisine. A one-pot rice dish made with slow-cooked lamb, sweet carrots, and onions, served with a boiled egg. Aromatic, comforting, and incredibly flavorful. Loved it. Rating: 4.25/5 Obi Non (Uzbek Bread) -- If you've seen travel vlogs from Uzbekistan, you've definitely seen this iconic bread. I never thought i will find it in seattle! Made fresh daily, it has a golden crust, soft chewy center, and a tang from natural fermentation. Topped with sesame or nigella seeds. Perfect with soup or yogurt, or just by itself. Suzma (Yogurt Dip) -- Traditional strained yogurt that's cool, creamy, lightly salted, and gently herbed. I got addicted -- I can't describe how good it is. It pairs perfectly with warm Uzbek bread or grilled meats. A must-order side. 5/5 Kazan Kebab -- This isn't your typical kebab. Juicy, bone-in lamb cuts pan-seared and then slow-cooked with potatoes and onions in a cast-iron kazan. The potatoes soak up all the flavor. A dream dish for lamb lovers. 4.75/5 Mastava (Hearty Rice & Beef Soup) -- A warm hug in a bowl. Fragrant lamb broth with rice, lamb chunks, potatoes, carrots, and herbs. Comfort food, Central Asian-style. 4/5 Carrot Salad (Morkovcha) -- A deceptively simple dish. Shredded carrots tossed in olive oil, vinegar, and dill, light, crunchy, refreshing. This one has a backstory involving Korean roots, but let's save that for another day. 4/5 Laghman -- Central Asian and Uyghur Classic Noodle Dish. Chewy, hand-pulled noodles stir-fried with veggies and thinly sliced beef. Balanced, bold, and hearty. Rating 4.25/5 A Little Backstory: This spot has a legacy. It's taken a few forms in the last four years -- once called Fitchi House, then run by a Turkmen owner who served Turkmen and Italian dishes, followed by a Kyrgyz woman who made it feel like dining in a Central Asian home. Now, they told me it's in the hands of a new owner from Chicago, who is already running a central Asian restaurant there-- and he brought his professional chef all the way from there. The result? The food has reached a whole new level. It's a humble space with just 15 seats, casual and unpretentious. But every bite tells a story. If you try it based on this post, thank me later. * They don't serve any chicken. Lamb and Beef is zabiha Halal.

Yelp
Caravan is a cozy little spot with only three tables, giving it the feel of eating in someone's home kitchen. Food is ordered at the kitchen window. The food matches the vibe: wholesome, simple, and comforting. The Goulash was the star, rich and hearty enough that my Mongolian partner said it tasted just like her childhood. The Stir Fry Boso Lagman had great earthy flavor from the veggies, but barely any lamb (just three slices), which was disappointing. Still, for authentic home cooking in a tiny, intimate setting, Caravan is worth a visit.

Yelp
We've visited Caravan twice and had great experiences. The food is tasty, portions are big, reasonably priced and the service is always fast. There is parking in the neighborhood. We tried manty, appreciated that they chop meat for the filling, instead of using minced meat. Thank you for bringing your national cuisine to Seattle, we loved trying new dishes.

Yelp
Visiting Seattle for a few days and was curious if I could eat something special. Caravan made it. All the food is very delicious. Meat lovers paradise. Definitely recommend.

Yelp
KC's First and best Kazak restaurant, delicious especially the samosas. Small place, right near the interstate/45th Ave, Wallingford. Parking sucks so best to park on a residential street, then walk in

Yelp
Coming to this restaurant makes you feel like home, friendly service, very delicious food. Cozy inside with national pictures. Another thing it's quite not expensive with portion comparison overall 9/10.
