Really an exceptional store. Worth driving to and supporting. Great staff, great products. From handmade, unique Japanese chef knives made by smiths who have been making them for decades... to one of a kind pieces created by local talent. The best part of this store is that you can see and handle the knives. Crucial. Beyond crucial if you are spending over $200, over $300, and up on a specialty knife. Why in the world would you not see how it looks and feels in person? The staff is also incredibly helpful and knowledgeable. They care about and often know the makers of these knives. High end chef knives have quirks and maintenance requirements you may not expect. Less like a daily driver, more like a sports car. Special care, maintenance, and cutting boards can be the difference between a lifetime of joyful use and chipping an edge on a chicken bone and thinking you bought a bad knife. The know-how to understand specialty tools is key. So, for anyone looking to get into high-end kitchenware, this is the place to start. Accessible, lots of options, and the staff to help you find what you might need. This is not just a Japanese knife store (even though they have a lot of them!) When we walked in we saw lots of amazing cookbooks and finely curated cooking tools like tweezers, Japanese graters, carbon steel pans. A lot of these high quality cooking tools would be hard to find elsewhere. Then looking at the knife collection, there were was a huge collection of them to choose from which was great. Being from Canada, we didn’t really want to bring knives back. Then in the back corner they have a Japanese pantry full of interesting shoyu, sesame oil, mirin and even Japanese ketchup! I was so intrigued because you likely can’t find this stuff at any Asian grocery store. So I asked about the products and they offered a tasting of all these different sauces! One of the employees was so excited setting up, you could see the smile on her face from a mile away. She even said “I love my job!” Well after tasting the first soya sauce, my mind was blown. I have NEVER tasted soya sauces like these. I have always just rotated between Kikkoman, Pearl river bridge and Yamasa. These soya sauces were double brewed with hints of wood flavouring, Smoked flavoured ones and some with a hint of citrus. So delicious! Needless to say we went back to Canada with 3 bottles of soya sauce and have been enjoying experimenting with them all with wontons and soba noodles. Can’t wait to try it on other dishes!

I went in today for the first time wanting to pick up my first nice knife and walked out with 3. The people working today were so helpful and knowledgeable, and helped me select the perfect set of knives. I would definitely come back for all the cute cookbooks and other neat kitchen accessories! Went in to get my knife sharpened and found the most amazing shop with wonderful cookbooks, beautiful knives and cooking utensils. Knives came out super sharp and they got all the rust out on one of my blades. Nice knowing I don’t need to buy a new chef knife anytime soon

Had been dreaming of shopping here for years after following their Instagram account. Finally got the chance. Dropped too much money on beautiful knives 😂. They helped me so much and were so friendly to talk with. The store is sleek and clean. Their selection of knives is so unique, yet diverse. I don’t think you could easily find a place in Japan that has such a collection from famous knife makers like here. You guys are awesome.

Tina and her husband (sorry I didn’t catch your name) are a couple of the best local business owners in Denver and were very accommodating in helping my mom and I pick out a new chef’s knife for her! I also brought in another knife, which was not purchased from Carbon Knife Co, that had gotten a little rusty, and they were also very generous in taking time to help me get it fixed. I appreciate their consistency in their kindness, generosity, and genuine care for their customers and would recommend them to anyone in the market for a new knife!

Stopped by to check out the store. I must say it is really nice store. Bright, neat,, tidy, and the employees friendly. When I came in there was a class going on how to sharpen knives with a whetstone. Had time to peruse their stock of books, kitchen utensils, and the knives. The knives are extensive. If you are looking for a Japanese knife/knives there are many of different types and sizes. They also have nice set of other knives - fixed blades and folding knives. RJ was patient, knowledgeable, and very helpful in answering my questions. I didn't feel pressured to buy anything and my purchase was totally my own. I'll certainly come back.

Love all my visits here, whether I have something in mind to buy or not, it's always so fun to peruse. On our last visit, we purchased a Santoku knife for my brother-in-law's wedding gift and one for our own collection. RJ was super helpful with our contemplations and guiding us in selecting a right knife for our preferences. They also have other kitchenware and cookbooks - we bought a couple of non-knife items like Viski cocktail glasses, off-set spatula, and chef tweezers. Everything was quite reasonably priced. We also brought in our existing knives so they could tell us which knives were due for sharpening. Thanks for a great experience, Carbon Knife Co!

I appreciated the team there taking the time to review the different types of steel, blade edges and handles and how they affect the end experience with the knife, such as feel in the hand, cut and maintenance procedures/frequency. Additionally they took the time to show me how to sharpen the blade, though I'll be practicing on an old blade first.

Glad I don't live in Denver, because my credit score would go way down from purchasing knives from Carbon. I did my research on getting a petty knife and settled on a Takamura R2 150mm, and inquired into a saya. Craig emailed promptly on what he had, and fitted the saya well before sending it out to me. They've also got an incredible selection of high quality blacksmiths. If you're into cooking, skip the trip to Williams Sonoma or the Shun knife block, come down to Carbon! You'll be sure to get a tailored experience for your needs.

My 20+ year old knives were in dire need of a sharpening and both had bent tips. I had passed Carbon many times on my way to Dio Mio and it looked like the perfect place to get them sharpened. It is $1 an inch to sharpen which is a great price. $20 later and my knives are better than new. Customer service was awesome and they were ready next day.

Incredible in every way. Every single thing for sale has been carefully chosen. The knives are works of craftsman art. The kitchen tools are all special. There is no miscellaneous junk in here to fill space. Even the cookbooks are all high end - the kind chefs would want to read for inspiration. It is a pleasure just to visit, but if you like to cook, you would do yourself a favor to get a proper knife from here. The staff / owners are people with excellent taste and a passion for what they do. It is my favorite shop of any kind. I wish all retail was like this.

Stumbled upon the most adorable urban kitchen shop while brewery hopping in RiNo with my brother who is a classically trained Italian chef. While both of us enjoyed the offerings at Carbon Knife, it was my brother who absolutely loved the kitchen tools and knives. They were recognized for their true quality and the cultures from which they originate. This is a go-to for line cooks and home chefs, alike. I highly recommend this spot if you're in the market for a new knife or knife sharpening of your own set. The cookbooks they carry are just as fun to flip through as the stock their shelves with books from Japanese and Italian cultures! While this is a great shop to parooze while you're in the neighborhood, I recommend you give them a call if there's something specific you're looking for, as it is a smaller store. Without a moments doubt or hesitation, one of may absolute favorite places to shop and spend time. Exquisite knives and cooking tools curated by Craig and Tina... this is not Sur Le Table or Williams Sonoma. Those places become bland geared towards the mass consumer home cook. Carbon Knife is the opposite, and even has a posting board for restaurants looking for pro help. Knife sharpening is perfection and far beyond what you can accomplish at home with any device. Highest recommendation!!! This place is the real deal!

My wife and I found this establishment because we needed our knives sharpened. It was a set we got fro our wedding. I did some dumb things and actually bent the tip of my favorite knife years ago. Well, not only did they put a sharp edge on all of our knives, but they tapered my bent knife and now it looks great! Can't say enough about these guys! I found the service outstanding and the price reasonable. They also see bar tools, as well! One caveat: There isn't a lot of parking nearby, so you might have to park on the other side of the block, but its worth the walk.

I came in here bacause everyone at work talked about how great the knives are AND how great the staff is. This place is dangerous. Not because of the sharp objects all over the walls, but because I want all of them! There is a wonderful selection of small kitchen equipment, cookbooks, and just other interesting things. I was introduced to Carbon Knife Company from a very close friend of mine. As a home chef and surrounded by the culinary world with work I started to collect and and use Japanese knives. After being introduced to Craig and Tina "the owners" of this amazing shop I was hooked! They know their stuff about the different Japanese blacksmiths, the regions these working pieces of art come from, sharpening stones etc... I cringe every time I see a bunch of sharp blades, but needed a good culinary knife. When I walked in this place, it gives me the feelings of a clean workshop./ art gallery shop. Clean,quiet and well organized. They have a great selection of hand crafted Japanese culinary knives with cool designs on the blades and beautiful handles. The gentleman who helped me was knowledgeable and helped me to narrow down to what I need. He even offered to retrofit the knife guard to fit my knife. I also love their small kitchen items imported from Japan. Neat shop !

Tip: look at the floor and avoid all the fun cooking toys and cook books. (Birdbox challenge?) I am highly satisfied with their collection of cooking tools and knife sharpening services (chopping an onion now feels like chopping through a cloud after their knife sharpening work) Overall, freaking amazing things from them both on knife sharpening and cooking toys. Where to begin? Tina & Craig have put together an amazing culinary shop that showcases cutlery made by some of the best blacksmiths in the world as well as many other quality items. It's paradise! The owners of Carbon Knife are Chefs and have outfitted the space in a very aesthetically appealing way. During my visits to this shop I've seen many industry folks either dropping off or picking up knives and that speaks to the quality and skill of Craig's sharpening services. I place a high value in the conversations I've had with Tina and her knowledge of the products Carbon Knife has. I walked out with a Japanese Yakitori Grill because of this. You aren't likely to find one of those for sale anywhere else in Denver. As for the knives, what a great spread! Own one hand forged artisan knife and you may become changed forever. A knife can be very personal and these good people can advise and help narrow the field. Carbon Knife has much going for it. Enjoy..

I finally had my midlevel knives sharpened and it has made such a difference. Craig at Carbon Knife did an excellent job sharpening 2 knives - one 3 inch paring knife and a 7 inch chefs knife, for $2 and $4, respectively. Well priced and well done! They also have a beautiful selection of high end knives as well as other small kitchen accessories. I grabbed a silicone scraper on my way out and it's so handy!

I called and spoke to the owner and felt he knew how to sharpen knives. I brought my knives in and was told he would have them ready in 2 days. I loved the shop with all the new knives and kitchen products. He texted me when the knives had been sharpened. I returned and bought and a mousses whipper which I had been looking for. I made another trip and bought a cutting board and a small knife and guards for my other knives. This store reminds of stores in my pasted. Stopped by to save my parents from their incredibly dull knifes that had been "sharpened" by someone at a farmer's market. Was really impressed by the outcome and price....note, it can take a few hours to get your knifes sharpened, so it may be worth planning a lunch / brewery around drop off. Outside of their knife selection they had an impressive collection of Japanese cookbooks, claypots and small(er) yakitori / bincho tan grills.

This is the place to care for your knives!!! We took two large kitchen knives with us into the store yesterday - the kind that have the color applied (painted onto?) the blades. I explained that my husband would not allow me to dispose of the knives until they had been replaced - they were great knives but I wasn't putting anymore of the paint into a meal. Instead of selling me two knives, the gentleman offered to try to remove the paint - and he did it! The "new" knives now have plain metal blades and we paid the price for a sharpening instead of the price for two new butcher knives!!! Customer service (and his skill with a belt grinder!!!) of the kind you do not find in many stores these days. We also purchased pliable measuring cups (cool idea!) and long handled silicone spoons. Many other interesting items in stock - check it out!

There are several cook books I want to come back and get, along with a few must have kitchen utensils.
