At the back is the dining area where the chef residencies take place. Much like its namesake, this part of Carousel is always moving with a rotating line-up of chefs from around the world, that enable you to say smug things like “last night I ate a wild mushroom asado negro, hand-delivered by a celebrated ex-Noma chef from Copenhagen”.
