"The experience of eating in one of the city’s iconic “hanging houses” is one not to be missed and this is certainly the case in this restaurant next to the striking Museo de Arte Abstracto Español, where entry is controlled by a code that you are sent when making a booking. In its meticulous contemporary-style interior, which has nevertheless retained its delightfully attractive original wooden beams, guests can enjoy unique views of the Huécar river gorge while savouring the concise Volver or Cocinamos Cuenca tasting menus, the latter offerings courses such as trout, radish, sardines, cheese, wine, walnuts, hare, Judía de la Virgen white beans, the delicious pigeon, and beetroot. Chef Jesús Segura has developed his repertoire around locally sourced ingredients while revising culinary traditions from a thoroughly modern and highly personal perspective: “my passion is translating the ancestral legacy of our grandparents as well as their exhaustive knowledge about wild herbs from the area, so that this expertise is not lost”." - Michelin Inspector

Amazing food and service. Would definitely recommend if you’re visiting Cuenca. I didn’t try the hare, so can’t comment on that but everything else was great.

Both the food and attention were at least 4 stars, and there were definitely a few 5 star courses. However, I found A HAIR in my food (both my partner and I have black hair) and when I alerted the waitstaff, all they offered was to take a 3.50eur item off a 200+eur bill. It left a bad taste in our mouths (literally), and we’d be hesitant to recommend to friends/family due to poor and almost nonchalant response to unsanitary food ):

Beautiful restaurant, modern with stunning views. We took the 7 courses menu. The food was underwhelming, nothing exceptional. I couldn't taste the fois, nor the smoked eel in the stewed mushroom. The hare was savory and flavourful however too scarce. The mushroom ice-cream was interesting however it lacked contrasting flavours to cut through the earthiness of the mushroom taste. The deer which was the main course was cooked to perfection however bland in terms of taste. I couldn't discern any licorice in the carrot which supposedly had to be glazed with it. It actually tasted more like a steamed carrot. The selection of wines is good. Overall It was an experience I would not recommend.

Excellent restaurant with spectacular views. We had a tasting menu of creative preparations of local ingredients. Everything was delicious and the service was at a high level as well.

Incredible experience in the most representative historical building of the city of Cuenca

Definitely one of the best tasting menus in the area. Service on point. Small but accurate wine list. The Sherry by the glass selection is a plus.

Una experiencia fantástica, con un servicio excelente y un sitio espectacular. El menú y el maridaje eran perfectos. Hicieron todo lo posible para que disfrutase de esta maravilla de menú adaptado a la alergia a los lácteos. 100% recomendable!
