"Cassia is the national tree and flower of Thailand, and it’s the name of chef/partners Madeline Redo and Trevor Musick’s Thai pop-up operating at Cellarest Beer Project. Before moving to Asheville, the couple spent a few months in Thailand diving deep into the cuisine. Cassia’s new food trailer will operate Fridays through Sundays, this winter. Local sweet potato firecrackers (the vegan version of the firecracker shrimp spring roll), taro fritters, smoked trout fried rice, and curry of the week are popular menu items." - Kay West

My only wish is that more people will love and appreciate how good the food is. This is a chef that offers no apologies to the Appalachian palate and stays true to authentic thai flavors. The fact that most thai restaurants from here to Columbia SC offer NO "Prik nam pla" (fish sauce with thai chili's) as a side is surprising. It's not an option, its mandatory for authentic thai flavors. They one up it with having a pickled thai chili side. Their orange hot sauce is house made as well.

Some of the most high quality, authentic and creative Thai food I have had in the states. The menu changes every two weeks and the number of different dishes I have been able to have in the last year (most that I rarely find at other Thai restaurants) is incredible. They serve a wide variety of types of meat and veggies for keeping a small rotating menu. And I'm serious about the veggies. Locally grown stir fried bamboo! The freshest papaya and pomelo salads! Nam prik egglant dip!! Kabocha squash! They make their own curry paste and the quality of their curries is really impressive. They always have plant based and gluten free options on each menu, and even make their own vegan version of pork belly that is crazy close to the real thing. Chefs Maddy and Trevor are kind, knowledgeable and truly want to do right by Thai food and culture, as well as by their customers. They get the freshest ingredients from local farms and Asian grocers. They try as often as they can to accommodate additional dietary restrictions. They do a great job bringing authentic Thai dishes to our WNC community in a way that expands horizons and elevates our Asheville food scene.

Everything was delicious and we look forward to returning asap! We spent about $70 for 4 of us and all felt stuffed at the end. Could get less next time, but it was a special occasion and we wanted to try as much as possible:)

Nice enough people, I was not impressed with the food. There were no healthy options, everything was deep fried, even the sweet potatoes. They do offer meat alternatives, like mushrooms and tofu, but the mushroom just disintegrates in the deep fried batter. It was definitely not worth $18 for rice, at small side and overly fried tasteless mushrooms. It's a food truck with picnic tables, plastic ware and paper plates, which i have no problem with, just not the value or taste for the price. In my opinion. It does have cool outdoor vibe and shares space with a quality brewery that my husband enjoyed. He was also very disappointed with the food and generally has no issue with fried food.

Every Friday we treat ourselves to amazing Thai food prepared by Cassia at Cellarest Beer Project on Haywood Rd. Everything is prepared fresh. Maddy and Trevor make their own curry pastes and sauces. Must haves are the Firecrackers, either shrimp or sweet potatoes, with a delicious dipping sauce. The rest of menu changes each week. Fresh Salad Rolls, steamed buns, chive pancakes are just some of the other finger foods. Then there are the rotating main dishes with grilled meats or fried fish, salads, noodle dishes and curries. All mouth watering and satisfying. And they will keep you coming back for more!

The first time we ate here was a month ago, we thought it would be autentic since they are in a food truck, they gave us a can of Thai tea instead of Authentic Tea LOLS. We decided to give it another try and eat some meat since someone told us the food is okay, the second time was yesterday, tried their Coconut noodles, It was a cold Noodles they should've labeled it as a cold noodles. It was really not palatable and just one bite we had to throw it away it was bad sorry. The staff are also not Thai people that's maybe why the food lacks of flavor. Oh also we tried the Kawon Pork, pork was tiny serving, rice is okay. The fried onion was the best part. Sauce is okay too. But the pickled Papaya oh Boy, they need to learn how to chopped and do it correctly😅 overall I wouldn't recommend it for someone who is looking for Asian/Thai Fusion. It's a waste of money.

My new favorite spot in Asheville. They change their menu every week. I hope they put the papaya salad on more often! I’ve been so impressed. The owners seem very kind as well!

Great food, great people. I love sending people here who are visiting. They change their menu every two weeks, so there is always a reason to visit.

Yelp
Super fresh and quick! Loved the Firecracker Shrimp! The Firecrackers were good also- think sweet potatoe fried with a twist.

Yelp
This is not the usual craft brewery food truck. This is elevated Thai food made with local ingredients (whenever possible), and it tastes like it. The food is bright and flavorful, often surprisingly light, and the portions are serious. One of the best places in town to eat, full stop.
