Castle Hill is a frequent trip for us, particularly when we have guests visiting and we want to show off how the beauty of the Charlottesville area and how awesome hard cider is. This is the "fanciest" cider place I've ever been, and I think the drinks evoke more of a white wine/champagne vibe than beer.
My primary gripe about Castle Hill is that I wish they would either do flights or more casual tastings. It always feels rushed and sometimes cramped to stand up at the bar and move through the list rapidly. The pours are always pretty sizable, too, so you might be semi-drunk by the end.
I like the sweet ciders much more than the dry ones. My favorites are:
- Celestial: sweet, not like the Celestial Merret which had an additional round of yeast and therefore a much different taste
- Black Twig: sweet, "American style" and so it tastes more like the ciders you might be used too like Angry Orchard, just nice to drink
- Serendipity: the sweetest, really drinkable, also perhaps the most beer-y tasting but in a pleasant fresh way
- Big Pippin: my favorite of their usual selection, made with aged whiskey and tastes like a cocktail, 11% ABV so probably best to drink a little more slowly...
I've done the premium tastings a few times and found some real gems. The 1764 is like a port and tastes incredible--it is so sweet it's almost overwhelming, like liquid honey that's almost thick and caramel-y on your tongue. They also sometimes bring out older varietals of their usual selections, and I've found that they're often smoother.
The cider club is an interesting concept and probably a good deal--a few free tastings and discounted bottles on a regular basis with no fee to join. Of all the cideries we've visited, this is definitely our favorite for both atmosphere and the drinks.
