Though we have stayed at Castle in the Country twice before, we had never had an evening meal there. This year was different. In the past we had usually driven 40-50 miles round trip to Holland which as a number of excellent restaurants. Since our stay at the Castle was limited, it saved time to be able to have a meal without having to drive anywhere.
My wife and I sat at a window overlooking a beautiful pond full of activity from ducks, muskrats, and squirrels. It takes something like this to add to the ambiance of the entire evening.
Our first course was a salad of spring mixed greens, feta cheese, dried cherries, orange, cucumber, and a special house made balsamic vinaigrette. Every ingredient was very fresh and of highest quality. I appreciated the spring greens because it contains some greens that are just a bit on the bitter side. Not only are they considered very healthy, they add character to what could have been a routine salad. The oranges, dried cherries, and feta cheese all have a distinct flavor of their own. Here was a salad that had all of sweet, sour, bitter, and acidic all in proper delicious balance and the mixture of colors added to an attractive appearance.
The main entree was beef tenderloin, angle hair pasta, red pepper, grape tomatoes, broccolini, and fresh basal. Herb is a great chef and has a knack of combining flavors. The beef tenderloin was perfectly prepared: not undercooked or overcooked. The same can be said for the angel hair pasta which is very easy to turn mushy if not carefully watched. The pasta had a creamy butter garlic sauce with a slight hint of smokiness from the grilled meat. Fresh basal is always wonderfully packed with flavor that some dried herb in a plastic shaker can never equal. I had a glass of cabernet sauvignon and my wife had a glass of chardonnay with our meal which added excellence to the tenderloin.
The meal was topped off with an exquisite chocolate cheese cake, which was warm, chewy and had the added flavors of cherry and amaretto. Doesn't that whet your appetite? The interior had the added delight of small melted bits of semi-sweet chocolate. Overcook a dessert like this and the chocolate just becomes part of the cake itself, undercooked, and the chocolate bits are hard and lack the texture and smoothness of melted chocolate. This was just another sign of Herb's attention to detail and a desire to have every item the very best for guests. The cheese cake was accompanied with a excellent coffee characterized with a robust aroma. Since my wife and I rarely drink coffee, it takes a cup perfectly brewed and made of highest quality beans to impress us. This was no exception. You can imagine what a letdown it would have been to have a poor cup of coffee with such a classy dessert.
Something needs to be said about the service at Castle in the Country that only one who has been there would truly understand. Every destination that leaves a lasting memory has some characteristic of distinction. Along with the beautifully detailed décor of every room which shows the artistic tastes of Herb and Ruth, the owners, there is also the exceptional service. Ruth knows when a couple wants privacy or conversation. She knows how to give personal attention to guests. She is friendly and personable without being in any way overbearing. She is able to immediately make one feel at home and welcome. Ruth and Herb have the character and personalities you would find in wonderful neighbors. No wonder Castle in the Country was awarded "Most Perfect Stay" and "Most Romantic Hideaway in North America".
