"Sydney is known for its big burly boozers and swanky city bars, but some of its best are the ones you’ll find hidden down lanes and in basements. One of the prime examples is Charlie Parker’s, an underground cocktail bar with a lively speakeasy feel, that sits below iconic restaurant Fred’s. The bar works with local producers to source native ingredients for cocktails that get flavor from every part of the plant, so we usually focus on those, though there’s also wine and beer. It’s fun, a little flashy (more vintage MG than Hummer), and an easy place where you can pop in for a pre-dinner drink, or post up for a boozy night." - Caroline Clements 33

"At Charlie Parker's, a dark and snug basement speakeasy, mixologist Toby Marshall uses a chef's approach to cocktail-making, dissecting seasonal produce, fruit, nuts, and local plants much the way a chef or butcher would, then turning the leaves, seeds, flesh, and skins into eclectic, innovative, and surprising—and sometimes strange—combinations. There are no drink names, just lists of ingredients. That's why the joint is perfect for serious cocktail lovers—and serious cocktail lovers only." - Kris Fordham, Laura Dannen Redman

Amazing basement bar experience! Food, cocktails, wine, music, decor and hospitality couldn’t have been better. Try the locally fermented wines by Giacomo - they were superb. Thank you for a great night out.

An excessive “service” charge for mediocre service. We were upsold sides of focaccia to accompany our other sides, only for them to arrive 40 minutes apart. Additionally, the food we received did not match what was advertised on the menu.

Very unique setting underground! Easy to get to in Paddington, lovely service. Reasonably priced margs ($16 tequila week special; not the best you’ll ever have but good enough!). Small menu — bresola & fig flatbread was delicious. Can be a bit cramped if seated at the tables-for-two and I guess, it works with the 2hr street parking nearby!

Underground bar with an interesting cocktail menu. Staff were very overwhelmed with the high volume of Saturday diners/drinkers. But they were very helpful. Food was also surprisingly good.

Cool underground bar with great ambience, upbeat vibe, and a crowd to match. Shout out to Giacomo and Kat for the super attentive and friendly service that made us feel right at home. Looking forward to my next visit already!

Beautiful decor and ambience, love the architecture of this underground bar. The service was very warm and friendly and unique cocktail menu. You can also get your cocktails/mock tails customised according to your taste. The food menu is limited, but has a bit of everything. The cocktails are bit expensive but worth trying.

The same cheep wines sold at a premium prices you’ll find at many of the Merivale outlets. A few professional bar staff but not enough to help the casual staff with no interest in doing a good job or being even close to pleasant. If you like the Merivale cookie cutter approach to food and drink and value atmospherics over quality you’ll like this place.

Late lunch of magnificent tapas - aesthetically and gastronomically crafted: Crispy eggplant sandwich with bonito mayo and salted chilli; Potato croquettes with smoked burrata and parsley and salsa brava; Striploin beef Cristiano with ricotta and chimichurri; Pork and veal meatballs with tomato sauce, basil, and toasted bread. Incredible, thoughtful, passionate drinks menu art. Wonderful unique drink concoctions: leaf and flower - Bee pollen, beeswax gin, verjus, beer soda. Whiskey sour 👌🏾 but why no cherry? ☹️ Definitely a place for return visits! Locals are tremendously lucky!

Yelp
This is everything that's bad about the tragic appropriation of others talent. Firstly the name, turn in his grave. The other is the fake design, next is the pretentious service, the staff actually believe you're just a product to their small developing ego. Overpriced for drinks and food that's better 5 min away. Really don't bother giving it a try. You'll waste your money time and energy and you'll come out feeling like you've been raped by commercial globalisation.
