The 31 Best Places To Eat & Stay In Sydney - The Infatuation

"Sydney is known for its big burly boozers and swanky city bars, but some of its best are the ones you’ll find hidden down lanes and in basements. One of the prime examples is Charlie Parker’s, an underground cocktail bar with a lively speakeasy feel, that sits below iconic restaurant Fred’s. The bar works with local producers to source native ingredients for cocktails that get flavor from every part of the plant, so we usually focus on those, though there’s also wine and beer. It’s fun, a little flashy (more vintage MG than Hummer), and an easy place where you can pop in for a pre-dinner drink, or post up for a boozy night." - Caroline Clements 33

21 Best Bars in Sydney | Condé Nast Traveler

"At Charlie Parker's, a dark and snug basement speakeasy, mixologist Toby Marshall uses a chef's approach to cocktail-making, dissecting seasonal produce, fruit, nuts, and local plants much the way a chef or butcher would, then turning the leaves, seeds, flesh, and skins into eclectic, innovative, and surprising—and sometimes strange—combinations. There are no drink names, just lists of ingredients. That's why the joint is perfect for serious cocktail lovers—and serious cocktail lovers only." - Kris Fordham, Laura Dannen Redman

Incredibly poor form. Advertised a fougasse on the menu with anchovies and then when delivered it’s three small slices of sourdough for $27? And then when queried reply it’s not the waitstaff’s problem as he isn’t in charge of the kitchen. Pure highway robbery and tactless service. Disappointing. I didn’t take a photo of the meager bread allocation sadly for reference. 2 stars as the atmosphere was well set up, nice moody lighting and good seating locations / music.

I had the absolute pleasure of experiencing a private tour of this incredible venue, and wow—what a treat! From the moment I stepped inside, I could feel the magic in the air. The ambience was divine, every detail thoughtfully curated, and the drinks were absolute perfection—crafted with skill and flair. It is an amazing venue that truly delivers an unforgettable experience

Great crowd, professional staff, friendly service. I didn’t eat so can’t comment on food but cocktails were on point. Only reason it’s not a 5 star is the music. Bad playlist, (most annoying and overplayed songs of the 70s-90s) and way too loud. Couldn’t hold a conversation and the poor quality speakers felt like being stabbed in the ear.

Beautiful decor and ambience, love the architecture of this underground bar. The service was very warm and friendly and unique cocktail menu. You can also get your cocktails/mock tails customised according to your taste. The food menu is limited, but has a bit of everything. The cocktails are bit expensive but worth trying.

Amazing basement bar experience! Food, cocktails, wine, music, decor and hospitality couldn’t have been better. Try the locally fermented wines by Giacomo - they were superb. Thank you for a great night out.

Very unique setting underground! Easy to get to in Paddington, lovely service. Reasonably priced margs ($16 tequila week special; not the best you’ll ever have but good enough!). Small menu — bresola & fig flatbread was delicious. Can be a bit cramped if seated at the tables-for-two and I guess, it works with the 2hr street parking nearby!

Google
Underground bar with an interesting cocktail menu. Staff were very overwhelmed with the high volume of Saturday diners/drinkers. But they were very helpful. Food was also surprisingly good.

Yelp
This is everything that's bad about the tragic appropriation of others talent. Firstly the name, turn in his grave. The other is the fake design, next is the pretentious service, the staff actually believe you're just a product to their small developing ego. Overpriced for drinks and food that's better 5 min away. Really don't bother giving it a try. You'll waste your money time and energy and you'll come out feeling like you've been raped by commercial globalisation.
