The vibes are unreal. The cocktails and the bartenders are truly on another level. They work with house-made ferments you won’t find anywhere else, making the whole program genuinely cutting-edge. Don’t pay attention to the low reviews—just people who don’t understand or appreciate the effort this team puts into their craft. A special thank you to the bar crew and to Giacomo for the outstanding experience.

Cool bar and Great atmosphere but we wanted to go for the happy hour which is stated in their website, once we ordered we were told there is no happy hour. But annoying to pay full whack when they list a happy hour. Otherwise very cool venue, service is pretty slow, unless you’re a table of single girls who the male staff were straight onto. Music is also extremely loud so if you want to talk to your drinking partner without shouting then it’s probably not the place to go.

My gawd give your female staff need a raise. Our night out we encountered the most incredible woman! As a female group of friends out in Sydney, having a few cocktails.. nothing ruins the night like a group of older, predatory men lingering… the amazing waitress approached us twice asking if we knew or wanted those men to engage with us. After a while she confidently told them to leave us alone very bluntly and directly. Im fully aware her night would have been a lot harder for having stepped up to support us, but wow… what wonderful staff and we felt so safe and cared for. I’m so appreciative. And felt so cared for as a patron.

Incredibly poor form. Advertised a fougasse on the menu with anchovies and then when delivered it’s three small slices of sourdough for $27? And then when queried reply it’s not the waitstaff’s problem as he isn’t in charge of the kitchen. Pure highway robbery and tactless service. Disappointing. I didn’t take a photo of the meager bread allocation sadly for reference. 2 stars as the atmosphere was well set up, nice moody lighting and good seating locations / music.

Beautiful decor and ambience, love the architecture of this underground bar. The service was very warm and friendly and unique cocktail menu. You can also get your cocktails/mock tails customised according to your taste. The food menu is limited, but has a bit of everything. The cocktails are bit expensive but worth trying.

This was hands down the worst experience I’ve ever had at any bar or restaurant. From the moment we walked in, the Italian manager (Federica) was shockingly rude and unpleasant. We were standing maybe 30 centimetres in front of the “please wait to be seated” sign and she immediately started yelling at us like we were school kids. No hello, no welcome, just attitude. When we were finally seated, her rudeness continued the entire time. She treated us like we were beneath her and made it clear she didn’t want us there. Later in the night, the bill was slammed down on our table without us even asking for it. It was nearly $800 for five people. The drinks were tiny and ridiculously overpriced. She spilled a good quarter of a cocktail while placing it down, and when we joked that there goes $10, she didn’t even crack a smile. Not once did she show a shred of hospitality. I’ve never dealt with someone so cold and hostile in this industry. She clearly hates her job and should not be in a customer-facing role. She is the complete opposite of what you’d expect from a Merivale venue. At one point I walked up to the bar to ask where the bathroom was. Before I could say anything, the bartender cut me off and barked that they don’t do bar service. I told him I wasn’t ordering, I just had a question, and he snapped at me again. It was like being scolded by a teacher. I won’t be back. I’m disappointed in Merivale for letting this kind of behaviour slide. The staff at Charlie Parker’s were rude, arrogant, and completely uninterested in making anyone feel welcome. Especially Federica. Just awful.

Underground bar with an interesting cocktail menu. Staff were very overwhelmed with the high volume of Saturday diners/drinkers. But they were very helpful. Food was also surprisingly good.

I had the absolute pleasure of experiencing a private tour of this incredible venue, and wow—what a treat! From the moment I stepped inside, I could feel the magic in the air. The ambience was divine, every detail thoughtfully curated, and the drinks were absolute perfection—crafted with skill and flair. It is an amazing venue that truly delivers an unforgettable experience

This is everything that's bad about the tragic appropriation of others talent. Firstly the name, turn in his grave. The other is the fake design, next is the pretentious service, the staff actually believe you're just a product to their small developing ego. Overpriced for drinks and food that's better 5 min away. Really don't bother giving it a try. You'll waste your money time and energy and you'll come out feeling like you've been raped by commercial globalisation.
