"I learned that Kiyoka Nishikawa, formerly the official chef of the Japanese Ministry of Foreign Affairs, started the Cheffrey’s Kitchen pop-up in Atlanta in 2016 after moving from Japan; her colorful bento boxes have become popular at markets like the Grant Park farmers market, East Atlanta Village markets and Pullman Yards’ Chefs Market and Asian Night Market. Diners voted her to be the inaugural chef for Pullman Yards’ paid residency program, and she will take over service at Brick and Mortar starting August 16 to present a traditional kaiseki seven-course meal for $80 per person, with two seatings of 20 guests each night and reservations required. She says her vision is to bring guests the beauty and culture of kaiseki (懐石), reflecting the changing seasons using local farm and Japanese-sourced ingredients, and the residency will run three months through November." - Henna Bakshi
