What It’s Like to Be an Undocumented Worker (and Unemployed) in the Restaurant Industry Now | Bon Appétit

"This restaurant relies heavily on undocumented labor: most of the back-of-house staff are undocumented workers who were trained on the job and now power the kitchen, including a 27-year-old Colombian sous-chef who arrived with no prior restaurant experience, learned to shuck oysters, moved up through stations, and now has four dishes on the menu and helps run the kitchen. The business paid competitive—but still limited—wages: the sous-chef reported earning about $6,400 a month ($4,800 after taxes), while total back-of-house payroll across the owner’s two restaurants is roughly $35,000–$40,000 per month, with $7,000–$8,000 withheld for taxes. After the COVID-19 shutdown on March 15, the restaurant closed and staff were left without unemployment or government relief; the owner has tried to bridge the gap by delivering final paychecks, organizing GoFundMe donations (which have netted roughly $350–$400 per person), paying some staff via Venmo, and applying for PPP loans, though those funds have been slow and the program difficult to navigate. The closure has left employees—many supporting families and paying Boston rents of about $1,100 plus utilities—vulnerable and unable to access unemployment, SNAP, or Medicaid despite years of paying taxes; both the sous-chef and the owner express that they would prefer legal work status so employees could receive benefits and security, and the sous-chef dreams of one day opening his own restaurant and legally employing others with similar backgrounds." - ByLeah Mennies

Dinner was absolutely delicious! We went here as a part of an all-day team building event and it was the perfect way to end the day. Our host, Monique, was warm and welcoming! The chef's Sam and Meegan were a delight. They explained each dish and chatted with us throughout the dinner. The NA wine and mocktail options were all delicious and overall, it was an amazing experience! Highly recommend!

This place was amazing! Great atmosphere and really fun intimate setting for a fresh chef cooked meal right in front of you! I loved how the chefs talked you through each course and what went into creating all of the culinary masterpieces I got to try while I was there. Fun group setting to grab dinner with a group of friends or just have a date night with a significant other. Couldn’t be more happy with my experience there! Will definitely be going back!

I had a nice experience at Chef’s Table, South End. The atmosphere was warm and welcoming, and the chefs were knowledgeable and engaging, creating a fun, relaxed vibe. The food was absolutely delicious, each dish packed with great flavor, and the cozy setting really made it a memorable meal. However, there were a couple of areas where I think things could improve. First, we were served non-alcoholic wine without being informed in advance. We only discovered it when we specifically asked about it, which was a bit surprising. Additionally, I had emailed ahead to request a vegetarian meal, and while they confirmed it would be no problem, we arrived to find that no vegetarian option had been provided. Overall, though, it was a great experience, and I'd definitely consider returning. With just a little more attention to these details, it could be even better!"

I had a wonderful time at Chef's Table South End. The atmosphere was comfortable and cozy. The conversation with the chef and others was fun and made the time fly by. The food was amazing! I really enjoyed the crisp fish and the flavors of the sauce. Dessert was a creamy and delightful crème brûlée that I could eat a dozen! Everything was thoughtful made and presented a harmonious meal. I would definitely recommend others to try as every meal is different so you will always be in for a surprise treat!

Tonight we had a fantastic time at Chef’s Table, hosted by the amazing Chef Sarah who elevated the dining experience with a warm, inviting, and fun atmosphere that only enhanced the incredibly flavorful dishes she prepared.
