"Backed by Chew — a Boston-based food research lab founded by entrepreneur Adam Melonas, who styles himself as a modern-day Willy Wonka — the lab has focused since 2013 on making highly processed foods more nutritional; according to the Boston Globe, Melonas's chefs and food scientists have created over 1,000 new foods. Chew is self-funded and earns money by inventing new foods and helping big corporate brands reduce chemical additives, and Melonas is quoted claiming he can create trends like putting amaranth into everything within 12 to 18 months.
