What is Senegalese food...?
The closest country to Senegal I've had cuisine from before this experience was Ghana. And after having eaten at Chez Dior and Rainbow Cafe, I can tell you, the two are VERY different- at least as far as the representations go from those two restaurants.
Chez Dior's menu and dishes all seem somewhat familiar but with stark differences.
The "Nems" seem firmly rooted in Vietnamese cuisine. So much so that if you were too serve this same dish in a Vietnamese restaurant I wouldn't blink twice. Even the dressing that comes with it, what they call "Nuoc Mam" is a shade of "Nc chm" a very popular Vietnamese dipping sauce served with a plethora of different dishes.
They are described on the menu as : Spring rolls stuffed with chicken, ground beef, vermicelli, with vegetables and mushrooms. Served with nuoc mam dressing.
The Accra are essentially seasoned black eyed pea croquets served with a tomato based sauce.
One propelling factor of having dinner there that night was the Yassa Chicken, which just made "The Ten Best Places To Eat Cheap In Washington" according to the Washington Post.
The chicken is a fork tender, melt in your mouth, expertly spiced piece of meat with a sauce that is mainly composed of sautéed onions with bright acidic punches. The onions when eaten with the chicken and rice round out a Thai-worthy combination of sweet, sour, savory, and bitter.
The Thieboudieune, what the waiter calls one of the most common and basically National dishes of Senegal, is a flaky white fish that is stewed in a deep and smokey tomato based, and almost tamarind flavored stock and is served with brown rice that seems crushed or broken. The rice is somewhat vinegary with a host of fork tender stewed vegetables on the side (including cabbage, eggplant, and sweet potato). Totally a winner.
The service hear was insanely good. The waiter was friendly, attentive, kind, and joyful. He also brought over another small table to add to our table when he heard how much we ordered. That was awesome.
The only dish that was somewhat of a miss for us was the lamb, which was a bit tougher and chewier than we would have liked.
Outside of that, the meal was fantastic, and it was really fun exploring a cuisine that is shades of cuisine I've had, but with new wonderful flavors that I'd never had and now love.
