A New Resto-Bar Selling Absinthe and Art Opens on St-Hubert Plaza | Eater Montreal

"Inside the recently renovated St-Hubert Plaza, Chez Ernest is a resto-bar whose decor riffs on Renaissance cabinets of curiosities, combining framed art and hand-crafted jewelry from local artisans with outlandish natural-history touches such as dead insects, live fish and a starfish (which co-owner Justine Chevalier Martineau says might be for sale). Co-owned by Martineau and Renaud Marchal—who drew on the French 'comptoir de curiosités' model—the space features a skeleton that alternately flanks the bar or lounges in an antique armchair, large-screen TVs airing Euro 2020 matches, and coffee supplied by Rosemont micro-roaster and cafe Impérial. Currently open mainly daytime while waiting on a liquor licence, the bar plans to shift toward nighttime service once licensed, offering up to 16 Quebec microbrews on tap and absinthe served alongside ornate glass water fountains. Food comes via a partnership with neighbouring gourmet grocer Conserva and consists of small plates (cod croquettes with gribiche, smoked mackerel mousse with crackers, porchetta in tonnato, salmon gravlax with beets and dill yogurt) as well as a build-your-own platter of dips, cheeses, pâtés and cured meats. I have such a good time with my friend on a random Wednesday and we were all alone at the bar and it was really such a vibe! And we're playing girly pop music 😉 seriously such a Vibe for the girls! Plus plus plus the vials of cool little specimens on the wall are really awesome to obseurve! Would recommend~

Recommended if you're looking for a place to grab something to eat and even enjoy live music! The decoration and atmosphere of the restaurant is top. I haven't been to a restaurant like this in Montréal. Food was fine, the variety of drinks (alcoholic and not alcoholic) is great, and the atmosphere is nice. The service was kind, attentive, and quick too.

We had a wonderful time and thoroughly enjoyed the food and drinks! However, we did experience a bit of a misunderstanding with the bartender. We appreciate all the hard work that goes into providing great service, and we tipped her as generously as we could, given our travel budget. Unfortunately, she seemed upset with us and asked if we had an issue with her service. It’s important to remember that tipping is voluntary, and we hope that feedback can be seen as an opportunity for growth. Overall, we had a lovely experience and appreciate the effort of the staff!

The interior decor and patio is what caught our attention. We had just finished brunch so we decided to enjoy by having a drink. The server is very attentive. It’s possible to purchase some of the ornaments on display, simply ask the server. Lots of places to sit inside. We will have to come back to try the food.

I went with a group of people. The menu is small dishes only. I got a platter and it was good. It was a good experience until the very end. We were paying and the server started confronting my friend who came in late and got a beer and didn’t tip. He started making a scene and made everyone uncomfortable. His behavior was repulsive and unacceptable.
